Tony:Yeah.AndI'veactuallytalkedtomydad,andmyuncle,andalotofmyrelativesaboutthis.AndthingshavedefinitelychangedIthinkinthelast...eveninGreece,inthelast50to100years.Theydefinitelydoeatalotofmeatthere.ButIwouldsay,upuntilmorerecenttimestheyate...itwasmoreperiodic,liketheywouldn'teatmeateveryday.

I'vetalkedtomyfatheraboutthisalot.Sowewouldhavechickenusuallyonceaweekortwiceaweek.Theyhadalotofseafood.Andalotofthisisgonnadependonifyou'reonthecoastornot,becauseifyou'reonthecoastyou'regonnabehavingalotmorefishandseafood.Whereasifyou'reupinthemountains,you'reveryrarelygonnahaveseafood.

SotheydefinitelydoeatmeatinmostofGreece.Thatbeingsaid,it'snotalwayspartofbreakfast,lunch,anddinner.It'susuallyonlyatdinner,anditisn'teveryday.Thereareactuallyalotofnon-meatentreesthatarein...Ithinktheydefinitelyoverallprobablyconsumelessmeatthroughouttheday,alldaylongeveryday.Butthatbeingsaid,Ithink,IonlysayIthink,I'mprettyveryconfidentthatthequalityofthemeatandthefreshnessofthemeatisdefinitelymuchhigherthanoverhereintheStates.

Katie:Forsure.AndImean,there'sdefinitelyaperceptionthatolivesandoliveoilareaverybigpartofthecultureaswell.AndImean,that'sobviouslytobetruefromwhatI'vetalkedtoyouabout.Butthatalso,tome,makesalotofsense,becauseweknowsomeofthedataonhowhealthyoliveoilis.It'soneoftheonlyoilsthatIhaveneverseenvilified,actually.

Coconutoilwasgreat,andthenitwasbad,andthenitwasgreatagain.Animalfatshavehadtheirupsanddowns.Butprettymucheveryoneseemstoagreethatoliveoilisgreat.And,isitconsumedreallyregularlyinGreece?Howmuchofisitapartofadailystaplediet?

Tony:Oh,yeah.Soit'severything,tothepointwheremymostofmylife,upuntilmaybe10yearsago,beforeIstartedourcompanyis,youjusttakeitforgrantedbecauseit'ssomethingthat'salwaysthere.Imean,it'salmostlikewater.It'sjust,like,always...it'salwaysbeenabigpartofourlife.Andgrowingup,youneverreallythinkaboutit,butwedoeverythingwithitfrom,peopleuseitforskincare,weusedittocookliterallyeverything.

There'sreallynotalotofGreekdishesthatdon'thaveoliveoilintheminsomeway,shape,orform.Andalotoftimes,especiallybeingmoreawareofhowmuchyou'reconsumingandwhatnot,we'llhaveaGreeksaladandliterallyputahalfabottleofoliveoilonthissaladtowhereit'sjustsaturatedinoil.Butyeah,theaverageGreekperson,statistically,theyconsumeabout26litersofoliveoilayear,which,ifyoubreakitdown,andyou'veseenourstandard500-milliliterbottle,that'sessentiallyonebottleaweek.Sothat'squiteabitcomparedtowhatmostpeoplehereeatin.Mepersonally,Itendtousealotmorebitinthesummerwhenwegotfreshvegetables.Butyeah,it'salotmorethanwe'reconsuminghereintheStates,that'sforsure.

Katie:That'sfascinating.AndbasedonsomeofthedataI'veseen,allthepolyphenolsinoliveoilactuallyhavealittlebitofasun-protectiveeffect,bothontheskinandinternallybecausethey'reanti-inflammatoryandavarietyofothermechanisms.Sothatmakessensethatinthesummer,youwouldconsumemore.Andagain,havingneverbeenthere,IknowGreeceisasunnyclimatesothat...Iwonderifthatalsocomesintoplaywiththehealthbenefitsthere.

Tony:Yeah.Itendto...whatitreallyisformebecauseIeatGreeksaladsreligiously,like,comearoundrightnow,likeMay,June-ish,throughlikeSeptember,whichis,foranyonethatdoesn'tknow,it'sessentiallyliketomatoesandcucumbers,andsomeoregano,feta,andoliveoil,peppers,andonions.ButIdefinitelyprobablyoneadayofaGreeksalad.Ithinkit'smorealsobecauseI'minGreeceinthesummertime.Sowe'realwaysdefinitelyconsumingatonofitoverthere.Yeah,itdefinitelyhasalotofgreatbenefitsinmorewaysthanone,that'sforsure.

Katie:Sotellmethestoryofhowitgothere.HowdiditgofromyourfamilyfarminGreecetonowthiscompanywhereIcanthankfullyorderitonlineandhaveitdeliveredtomyhouse?

Tony:So,itstarted,Iwasanet...Imean,we'vealwayshadoliveoilinourfamily.We'vealwayshadabunchofoliveorchardsinGreecebetweenmygrandparentsandmyparents,andaunts,anduncles,andcousins.So,likeItoldyou,it'salwaysbeenaround.

WereallyneverretailedithereintheStatesbutwewouldbringenough.We'dbottleourownandbringitoverhere,annually,justenoughforallofourfamily,whichisalotofpeople.Sowe'dactuallybringoverquiteafewpalletsofoilforfamilyandfriends.

Ihadgonebackto...IwasstationedinPhiladelphiaatthetime,andI'dgonebacktoRochestertovisitmydadandbroughtacasebackwithme.Anditwaslikethenextnight,theCrossFitgymIwastrainingatthetime,wehadareallytight-knitcommunity.AndthisiskindoflikewhenthewholePaleoworldwasstartingtocomeon.Andwewerehaulingfood.

Soweusedtodoweeklygatheringswherewewouldjustkindofcookat...we'dallbringfoodintothegymandeatit.Probablynotthemostsanitarythingintheworld.Butitwasmybuddy'sbirthday.AndmyfriendErinwhoownedthegym,shehadabigbottleofalessergradeItalianoliveoil.I'mnotgonnanamethecompany,butitwasonthetablethere.

Andthenitgotquiteoverwhelming,veryquick.Withinafewmonths,IwasgettingmoreordersthanIcouldhandlebymyself.AndIwasalsogettingreadytopotentiallydeploytoAfghanistan.SoIwaslike,"Okay,Igottoshutthisdownforagoodsixmonths."SoIcalledEffie,mysisterandnowbusinesspartner,Iwaslike,"Hey,youwannadothiswithme?"ShewasworkingatJPMorganatthetime.

AndIwaslike...attheendoftheday,Ididnothavethetimereallytorunabusiness.IwasverybusywiththeMarineCorps.AndIwasbasicallycominghomefromworkwiththeMarineCorpsintheeveningandworkingallnightlong.Andthentotally,theentireweekends,andI'msittingtheretryingtolearnhowtobuildawebsiteandgetallthebackendsideofbusinessthingsdone,whichgotveryoverwhelming.

So,broughtEffieonboard,andshetookoveralotofthelogisticsandfinancialsideofthings,whichIdon'treallylovedoing.She'sbetteratthatthanIam.AndIwasabletofocusongrowingthebusinessanddoingthebigmarketingsideofthings.Andherewearenow,sevenyearslater.

Iwouldventuretosaythevastmajorityofoliveoilisnotfakeoradulterated.Ithinkthey'redefinitely...ithashappenedinthepast.ThebiggestproblemIseeinAmericaisthatwe'reconsumingolderoliveoil,andthat'sjustthewholedistributionprocess.AndalotofotherfactorsthatgointothatasfarassittingonastoreshelfforXamountofdays,sittingunderthelight,anditoxidizing.

Butatthecoreofit,ifweallgetapure,firstpressed,coldpressedextravirginoliveoil,it'sgonnabedifferentdependingonmultiplethingslikewhereitcamefrom,whatkindofoliveswereused,theweatherorthatseason.Imean,there'salotofdifferentinputsthatgointohowtheoliveoilwillcomeout.

ButwhenitactuallymakesitheretotheStates,thattimeframeandhowlongthattook,andsomeotherthingsthatsomebig,hugeoliveoilcompanieswilldo.Andalotoftimesthey'llmixlastyear'soliveoilwiththisyear'soliveoil.Andthatdoesn'tnecessarilymakeitbad.Butit'slikeit'snotashighqualitybecausethat'sreallyoneofthebiggestmisconceptionswitholiveoil.

Andsomepeople,theyjustdon'tknowbecausetheykindofassumeitgoeshandinhandwithwine,anditlikegetsbetterovertime,whereoliveoilistheopposite.It'sactuallyafreshfruitjuiceessentially,andyouwannaconsumeitasfastaspossible.Itwillstaygoodforafewyears.Itjuststartsdegradingovertime.Andthat'soneofourbigthings.Andkindofwhywe'vereallybeenagainstsellingitinthestores,isweonlyprovideorofferthisyear'scurrentharvestofoliveoil.And,sometimes,whenyousellitatstoresyoukindoflosethecontrolofthat.

Tony:Yeah.So,weactuallyareglassbottles,andthisisalotthatgoesintothepricingofoliveoil.Sometimesyou'llgoandseereallycheaperoliveoilatWalmartorwhatnot.Andthere'salotoffactorsthatgointothecost.Andthatactuallyisoneofthem,isthepackaging,andeventheglass.

Youcanhave...there'sdifferentgradesofglassanddifferentamountoflighttheyallowin.Andourglass,it'sactuallyprobablyaboutquadruplethepriceofsomeglassbottlesbecauseweusereallydark,pharmaceuticalgradeglassforoursmallerbottles.Andevenwiththat,westillrecommendpeoplekeepthemintheirkitchencupboardsinsteadofontheirkitchencounter.

Katie:That'sfascinating.IhopeI'mgoingtosayitright,butoleicacid,whatthatis,andwhatweneedtoknowaboutthatorwhatpercentageisgoodtolookforinthat?

Tony:Okay.Greatquestion.It'sprettymuchit'samonounsaturatedfattyacid.Thethingis,justlikewithallyourcomponentsoftheoliveoil,dependingonthespecificharvest,whatkindofolivesareused,it'sgonnavary.It'sgenerallybetween50%,55%,andevenupwardsof80%oftheoliveoil.

Theonlywaytoreallygetanaccuratenumberiswithachemicalanalysiswhereitreallybreaksdownalltheacidcompoundsaslong,aswellasthepolyphenols.So,itactuallyissomethingthatdoesvaryyeartoyearorharvesttoharvest.Weactuallydopostallofourchemicalanalysisonourwebsiteandtiethemwithalotnumber.
