recently, team leader lynne Jenkerson shared the epicure Business Opportunity with a group of women, and one of them signed up after lynne assured her that she was able to run an Epicure business in addition to a traditional full-time job. lynne says, “i’m able to manage both because epicure just makes
you feel so good. it’s so fulfilling, and with everything you do, you’re rewarded.” she also advises new Consultants to let all the products and promotions inspire them. “there’s no need to be overwhelmed. you don’t have to memorize everything. it really is simple, so relax and let yourself enjoy it!”
When Group leader Val Anaka’s grandson was born, she had retired from working and had lots of time to spend with him. “When he started school, i found myself at loose ends! i needed a social outlet,” says Val, who lives in Winnipeg. At her daughter’s suggestion, Val got senior Unit leader Jennifer Downey’s phone number from an epicure jar in
her cupboard and signed up. She’s made more friends and acquaintances than she ever expected.“Before, i was a stranger in the crowd. Now when i go out, i always run into someone who recognizes me. so i plan to keep doing this, as long as i’m having fun and can still carry my bags to the tasting Parties.”

Consultant Cheryl Noxel is a very busy woman. Five days a week, this Port Colborne, Ontario mother of two runs an in-home day care, while evenings are reserved for tasting Parties. When she signed up with epicure in August of 2010, she knew that another home-based business would be a good fit. But she had
reservations about the cost of the driving her family’s gas-guzzler to and from parties. But that problem was quickly solved. “My Epicure business gave me the means to buy the second car my family really needed. it’s made a real difference in our financial situation.”

When she opened her Business success Kit six years ago, Unit leader Julie laurin of midland, Ontario could never have imagined how many people would eventually benefit from her epicure business. Prep Time: 20 minutes • Cook Time: 8–10 minutes Makes: 14 pancakes • Cost per serving: $0.60
1 head cauliflower, cut into florets 3 eggs, lightly beaten 1 onion, grated 1–2 tsp (5–10 ml) Herb & garlic Dip Mix or lemon Dilly Dip Mix ½–¾ cup (125–180 ml) whole-wheat or all-purpose flour ¼ cup (60 ml) vegetable oil Sea salt, to taste pepper, to taste
1. in multi-Purpose Pot, simmer cauliflower until very tender. Drain, then coarsely mash. let cool.
2. stir cauliflower with eggs, onion, Herb & Garlic Dip mix, adding flour slowly to form a thick batter. season with sea salt and pepper.
3. Heat oil in eclipse® Coated Professional Frying Pan over medium heat. When hot, carefully spoon in large spoonfuls of batter and flatten slightly. Fry for 2–3 minutes per side, until browned.
4. Keep warm and serve with applesauce and sour cream, if desired.

1 bunch asparagus 3 skinless, boneless chicken breasts 1 tbsp (15 ml) Souvlaki Seasoning 1 tsp (5 ml) olive oil 1 cup (250 ml) prepared chicken Bouillon or Vegetable Bouillon 1 lemon, zest and juice 1 tbsp (15 ml) cornstarch
1. Cut asparagus spears into 3 or 4 pieces. Coat chicken with souvlaki seasoning.
2. Heat oil in eclipse® Coated Professional Frying Pan and set over medium-high heat. When hot, add chicken. Cook for 2–3 minutes per side, until golden.
3. Pour Bouillon into pan and bring to a boil. Add asparagus and simmer for 3–4 minutes, stirring occasionally, until chicken is cooked through and asparagus is tender.
4. meanwhile, finely grate 1 tsp (5 ml) lemon peel and place in a small bowl. squeeze in about 2 tbsp (30 ml) lemon juice. stir in cornstarch until dissolved.
5. Pour into pan and simmer for 1–2 minutes, until thickened. Cut chicken breasts in half before serving.
Asparagus spears have less than 20 calories and provide an excellent source of folacin, vitamin A and vitamin K.

Prep Time: 10 minutes • Makes: 8 servings • Cost per serving: $1.47
2 clementines or 1 orange ½ recipe prepared classic Vinaigrette 4 cups (1 l) baby spinach 2 cups (500 ml) sliced mushrooms ½ celery root, peeled and julienned, or 2 celery stalks, sliced ½ cup (125 ml) pepitas (green pumpkin seeds) or sunflower seeds – optional
1. Finely grate 1 tsp (5 ml) peel from clementine and stir into Classic Vinaigrette.
2. Peel Clementines, then separate segments.
3. Place spinach in a large serving bowl. Add clementine, mushrooms and celery root. Drizzle with Classic Vinaigrette, then toss to mix. sprinkle with pepitas and serve.
Part of the parsley family, celery root (or celeriac) must be peeled before adding to soups and stews. shred for a delicious addition to salads. root keeps 7–10 days in a plastic bag in the fridge.

1. Preheat oven to 350° F (175° C).
2. squeeze as much liquid as possible from spinach and roughly chop.
3. Beat eggs with milk until light and fluffy. Fold in remaining ingredients.
4. Pour into a lightly greased 9” (23 cm) pie plate or square baking dish. Bake for 35–45 minutes, or until knife inserted in middle comes out clean.
5. Allow to cool and set for about 8 minutes. slice and serve.
