How to Cook Indian Food: Egg Curry Bhurji

Introduction
Hi, I'm Harjoyt Kang and today we are going to make a super simple and
delicious egg curry also known as Bhurji using India Base. This recipe takes
only minute to make and can be eaten alone or along with toast.
This one base creates hundreds of Indian dishes from scratch and it makes it
really easy and simple to do. Now here are the ingredients this super simple
egg Bhurji dish.
Ingredients
First thing you’ll need is half a jar of India base. Half a jar is plenty of the
quantity were making today. But if you were to double the recipe or if you’re
going to use more eggs please feel free to use the whole jar.
Today we are going to use four medium sized eggs.

Two medium sized tomatoes that we’ve diced.
One tablespoons of dried fenugreek leaves.
Now in this case you can use cilantro if you like, so I would use 3 tablespoons
of chopped cilantro. It acts as a binding agent when you use it with the egg
curry, but if you don’t have cilantro like we don’t have today, we are using
fenugreek leaves instead.
One whole chili that we’ve just chopped, again if you don’t have chili, you can
use chili powder instead, just depending on how spicy you like it.
And our secret ingredient which is completely optional as well, a tablespoon
of ketchup.
So don’t blink because this is a really simple and fast recipe.
Step 1
So I’ve added the jar of India base, a tablespoon of olive oil, and I’m just
warming up the base, so it’s just been warming up for about 2 minutes or so
on medium heat.
So to this I’m going to add, two diced tomatoes, my tablespoon of ketchup, and
again this is optional, it kind of gives it more of a zest.
And I might turn up the heat just a little bit.
I’m going to add in a tablespoon of fenugreek leaves. Again you can use fresh
chopped cilantro and again it’s going to act as a binding agent for the eggs. Mix
that all in. and because I like it a bit spicy, I’m going to add in my whole
chopped chili. So this is so fast, this recipe is so easy to do, literally that’s it.

Step 2
So I’m going to let this cook through on a medium heat for a couple of minutes
and then I’m going to add in my eggs.
And then we’re going to scramble in the eggs with this mixture, doesn’t that
just look absolutely wonderful with the green and the red color.
So the tomatoes and the base, along with our fenugreek leaves and the chili
have been cooking now for about three minutes so the tomatoes have
softened.
So I’m going to add in my eggs that I’ve whisked together. Just add the whole
lot in there and at this point I like to add in a little bit of pepper and some salt
to taste.
Okay now I’m going to mix it together, and I’m going to lower the heat,
because now we’re just going to scramble the eggs. And fold in all of that
delicious India base mixture.

All done!
So we cooked the eggs for about three to four minutes and there you have a
super simple and delicious egg curry or Bhurji. Now with you can eat it with
roti, naan, you can have it in a sandwich with some toast.
