Dear friends, Welcome to our first newsletter, our chance to catch up with you, our guests, on everything Eden! There has been a flurry of activity at Eden Hotel Collection in recent months and we are proud to announce the addition of two new spa hotels, The Greenway in Cheltenham and The Mount Somerset in Taunton, to our family of luxury properties. These beautiful country house retreats bring an exciting new dynamic to our collection and I do hope you take the opportunity to enjoy the wonderful

health benefits of these relaxation spas during your next visit. We are also keen to tell you about the exciting things happening at Brockencote Hall, another recent addition to our collection. The refurbishment is in full swing and due for completion in late June. We are delighted to have had the opportunity to return this Victorian mansion to her former glory!

This is a thrilling time to be part of the Eden Hotel Collection; kitchen gardens are springing up at all our hotels providing our chefs with the freshest of ingredients, our ‘green team’ are discovering ways in which we can be ever more environmentally conscious and we are continuing to invest inordinate amounts of care and attention in our hotels to ensure they remain at the highest standards for our guests. From our first glimpse last summer, our hearts were set on this ‘chateauesque’ Victorian mansion becoming part of the Eden Hotel Collection. For those of you yet to visit, it is located amidst 70 acres of beautiful grounds in the leafy Worcestershire countryside. Brockencote Hall is an award-winning 2 AA Rosette property with an already impeccable reputation throughout the county for the fabulous food, drink and views! Head Chef Adam Brown has further grand designs for the kitchens and is using his forward thinking and innovative style to showcase seasonal produce (much of which is foraged from the grounds and our new kitchen gardens) to create fresh, exciting dishes for our guests. With our ever charismatic General Manager Dean Gunston at the helm, this spring we commissioned Eden Hotel Collection’s Creative Director Marian Cartter and designers Nicholas Hollinshead Interiors to refurbish the property to the highest standards, and we are absolutely delighted with the results!

The public areas have been remodelled to provide additional private dining and meeting rooms and an impressive walk through wine cellar has been installed. The library is now a charming snug to enjoy afternoon tea or a pre dinner aperitif whilst the former rather dated conservatory has been reborn as ‘Le Colonial’, featuring a magnificent carved oak bar with near panoramic views of the estate. The colour schemes throughout are calm and relaxing, pale greys and lavenders accentuated by warm creams, soft lilacs and damson velvets. The effect is both dramatic and in keeping with this elegant property. The furniture is an eclectic mix of fine antiques, sumptuous sofas and arm chairs of traditional design. Our refurbishment investment at Brockencote is all about you, our guest, and we have paid particular attention to the journey you will take through the hotel in order to make your experience the best it can possibly be. We hope you enjoy this wonderful hotel, which we are proud to have restored to her former glory.

Located on the outskirts of the Regency town of Cheltenham, The Greenway is a 16th Century luxury Elizabethan manor house hotel and spa. The hotel, with its warm Cotswold stone exterior draped in ivy, is the picture of English country charm and lies in eight acres of stunning grounds with views over the rolling Cotswold Hills.

The Mount Somerset Hotel and Spa in Taunton, Somerset is a stunning Regency country house hotel, set in four acres of beautiful grounds. This grand dame of a building sits high upon her mount, cradled in between the Quantock and Blackdown Hills, affording guests some of the best views in Somerset.

Chris Holdsworth, Head Gardener for Eden Hotel Collection, is on a mission. A mission to plant a kitchen garden at every one of our hotels in order to keep true to our policy of fork to fork. Simon Haigh, Executive Chef at Eden Hotel Collection, works closely with the garden teams to steer what is grown for all seven hotels in order to keep the menus organic and seasonal.

Chris and his team’s most established gardens are at Mallory Court, however there are now new gardens popping up at all seven hotels. Even the Arden Hotel who, as a boutique town house hotel are limited by a lack of grounds, have been given troughs and pots to grow a variety of produce. On the menu for harvest across the collection are staples such as carrots, beetroot, spring onions, leeks, parsnips, cabbage and the all-important Christmas sprouts. The team also grow a variety of salad vegetables, herbs and fruits including figs, berries, apples and pears.

Chris explains that in addition to supplying the kitchens with fresh produce, ‘growing your own’ is a cost saving exercise. The beautiful dishes our award-winning chefs create use large amounts of fashionable micro herbs, baby vegetables and vegetable flowers that are extremely expensive to buy. Baby leeks and courgettes can cost as much as £1 each and nothing beats the taste of freshly picked!

she wanted to be a Wedding Coordinator at a young age, Natalie worked hard to achieve her dream and loves her job. On the day the team and I take over so they can sit back and enjoy every minute of their wedding. What goes into arranging the perfect day?Forward planning - it is vital to make sure all your plans are in place months before. I always ensure details are finalised at least one month before.

What would be your perfect honeymoon destination?I would want to do something really different and memorable such

as a Safari, Vegas or travelling around Australia for a few weeks. What do you love the most about what you do?The feeling of making a couple’s big day special by guiding them through the steps to their perfect wedding gives me a great sense of achievement.

Local WalksOur hotel locations boast some of the most beautiful walks in England, making them a paradise for lovers of nature, fresh air and exercise. If you’d like a walk with a nautical theme take a peaceful waterside stroll along the River Avon in Stratford, explore the Hatton locks in

Battle of EdenRound two – let the battle commence! 5th October – Brockencote Hall Hotel

Last September five Eden Hotel Collection chefs went head to head in a raging culinary kitchen war to become the victor of the Battle of Eden. Guests, who were hosted at Mallory Court by Sir Peter Rigby, sipped Champagne and sampled canapés before enjoying a five course meal, followed by petit fours and coffee. Each course was the creation of a different Eden Hotel Collection chef, but who cooked what remained a secret until the end of the evening. Michelin star chef Simon Haigh introduced each course with a brief description and guests enjoyed fine wines chosen to perfectly match the courses. When the final plates had been cleared, belts loosened and contented sighs echoed around the room, guests were asked to vote on their favourite dish. The victor of the evening was Chef Andrew Scott from Mallory Court who made a beautiful dessert of vanilla panna cotta, compressed apple, spiced brambles, ver jus sorbet and apple blossom.

This year’s event promises to be bigger and better with two new chefs joining the gastronomic fray. Will Chef Andrew Scott keep the crown or will he be knocked off his throne? The choice is yours!

With the Olympic Games and the Queen’s Diamond Jubilee upon us, this is certainly the year for celebrating all things British. As a result, all over the country, the grand old tradition of afternoon tea is well and truly in vogue. The custom of afternoon tea was introduced in 1840 after the Seventh Duchess of Bedford typically became peckish at four o’clock in the afternoon. The Duchess felt that the time between their formal lunch and dinner was rather too long and so insisted that a tray of tea, bread and butter was brought to her private rooms in the afternoon. She soon started to invite her friends to take

tea with her and the fashion spread like wildfire amongst the London socialites. Afternoon tea became ‘the thing to do’ and during the 1800s women of standing and birth would change into formal gowns, gloves and hats and take their tea in the drawing room between four and five o’clock - a ceremony that is a common sight in many period dramas. Our hotels serve a variety of cream teas, full afternoon teas and, for a touch of luxury, Champagne afternoon teas. Take yourself back in time and spend an afternoon taking tea without a care in the world!

NOUGAT GLAZE (24hrs in advance)Ingredients4 eggs45grms of roasted flaked almonds45grms of peeled roasted hazelnuts45grms of peeled pistachiosSeeds from one vanilla pod (essence can be used as an alternative)20grms of clear honey80grms of caster sugar150grms of candid peel and glace cherries500ml of double cream which has been lightly whipped to soft peak

1 Line a suitable container with greaseproof paper

2 Whisk the eggs, vanilla, sugar and honey together

3 Continue whisking over a bain-marie until the mixture thickens but not scrambled

4 Once thickened add the cooled nuts and fruit and leave to cool to room temperature

5 Fold through the whipped cream making sure that everything is well combined. Place in the lined container and freeze overnight till firm

6 When firm mould into small balls with an ice cream scoop or something similar, reserve till required.

PEARS (Allow one pear per person)Ingredients500ml water250grms of sugarJuice of half a lemonThe remains of the vanilla pod from the previous process

1 Bring the water, sugar, lemon and vanilla to the boil

2 Peel the pears and place in the sugar solution and poach until soft yet firm

3 Leave to cool and reserve till required

TO ASSEMBLE THE DISHOther ingredients required for finishing25grms of butter50ml of cream20 grms of caster sugar5 blackberries per person

1 Warm a thick bottomed frying pan add the butter, then add the pear with the sugar. Keep turning the pear until well coloured all over and remove.

2 Add the cream to form a caramel style sauce and reserve.

3 Arrange the nougat glace, pears and blackberries on a suitable plate, spoon over the caramel sauce and garnish with a sprig of mint if desired.
