The drying system had to be installed directly in the production line. Because the line is used for unpacked food, hygiene plays an important role. Wet raclette cheese can be a breeding ground for bacteria. To be able to cut the cheese faster and to give the bacteria less chance to develop, the cheese had to be blown dry. Because the installation comes into continuous contact with unpackaged cheese, the customer cleans it daily. This presented an additional challenge. All the nooks and crannies of the machine had to be easily accessible for cleaning. Our solution The Ronair installation is equipped with three units: the dryer unit, the blower unit and the electrical unit. The blower unit is located directly on the dryer unit and forms a single unit. The electrical unit consists of an electrical cabinet with a hygienic design. The electrical cabinet is located next to the line. The dryer unit is divided into a top and bottom module. Both are equipped with plastic plates with grooves for blowing off water. The bottom module, with conveyor, has a width of 370mm and has a inclination of ± 3.5°. The drying module at the top is manually adjustable in height by means of a chain system. This function is further supported by a safety mechanism in the upper position that guarantees safe cleaning. The sides are blown off with the help of nozzles. DRYING UNIT FOR UNPACKED FOOD 1. Drying solution for cheese wheels

The challenge

A major French cheese manufacturer was looking for a drying system that could remove residual water from cheese wheels. The drying system had to be installed directly in the production line. Because the line is used for unpacked food, hygiene plays an important role. Wet raclette cheese can be a breeding ground for bacteria. To be able to cut the cheese faster and to give the bacteria less chance to develop, the cheese had to be blown dry.

The conveyor has eight belts that safely transport the products through the installation. The belts can easily be replaced using a cantilever system.

In addition to an inlet and outlet sound tunnel, the drying module is also equipped with a complete enclosure with acoustic sound panels to prevent noise disturbance during operation.

The blower unit consists of a maintenance-free blower with a power of 22kW. The blower has two replaceable standard filters and one large F8 filter on the outside. This was installed at the customer’s request to stop the extra fine particles. In order to meet the noise requirement of the 80dB(A), acoustic sound panels are provided in the blower compartment.

The electrical cabinet consists of one frequency control for the blower and one for the conveyor. The control is carried out by a start/stop on the cabinet.

To increase safety, each door of the dryer box is equipped with a door contact to generate an automatic stop when one of these doors is opened without authorisation.

Test results

Various test results demonstrate that 98% of the water on the cheese wheels is removed by the Ronair drying installation.
