Happy New Year!
With the new year, we will welcome a new group of Lake Ridge Ladies as
our board members. The ladies who have served you for several years will
now step down to allow new ladies to lead us. It is bitersweet for me as most of the outgoing board have been with me since the beginning of my time
with the Lake Ridge Ladies. They are some of my best friends and the most
dedicated women I have ever known. Now is the time for them to just enjoy
being a Lake Ridge Lady while others take the reins. I love and appreciate
you all so much! The new ladies are so excited to serve you, and they have
some wonderful ideas for new activities and things we can do to make the
Lake Ridge Ladies even beter. To all of our new board members, I am beyond excited to get to know you beter and work side by side, helping in any way I can.
Our group is growing, and I encourage you to get involved. Meet a friend, be
a friend. The rewards are great!

HEALTHY TIPS
Roasted Salmon with Kale & Quinoa Salad
INGREDIENTS
INSTRUCTIONS
• 6-ounce wild salmon illet• 1 teaspoon olive oil
• Salt
• Pepper
• ½ cup thinly sliced kale
• ½ cup of cooked quinoa
• 1 tablespoon citrus dressing
• 5 seedless grapes, halved
Preheat the oven to 425 degrees. Place the salmon on a baking sheet that is lined with foil and sprayed with cooking spray. Rub oil over the illet and sprinkle with salt and pepper. Bake the ish for ten minutes or until the ish lakes easily with a fork. While the ish is cooking, combine the kale, quinoa, citrus dressing, and grapes in a bowl. Stir to combine.
Let the salad stand for ive minutes and then top with the salmon. This recipe can easily be doubled or even tripled depending on how many people you are serving. Simply use more ish illets and line the baking dish with them. The cooking time will remain the same no mater how many illets you serve.

It’s as simple as changing your portion sizes or plate contents—initiate small, healthy additions and subtractions to your intake. This approach has a success rate that typically leads to long-lasting results. Create a colorful plate, adding a variety of fruits and veggies to the spread. And keep that dessert on it, dang it—but maybe slim down the size of the slice.

Beatrice CarrRodney and I met in July 1973 in my parents’ front yard, playing lag football. He had come to my house with a mutual friend and his parents. We continued to “claim” each other until I was 16 and old
enough to date. We were a couple from then on.
After graduation from Anton High School, he moved to Dallas and
worked as a diesel mechanic until he joined the Air Force. He was an
Air Traic Controller in the Air Force and wanted to see the world, going as far as signing up for remote locations. His orders were to
Reese Air Force Base for 4 years. After the Air Force, he became a
Lubbock Police Oicer. He left the police department and became a farmer when my dad had a terrible accident. He was also the
Constable for Hockley County, a Justice of the Peace, and a Mason.
We married in November 1985. We have 2 sons. Daniel and his wife, Stephanie, live in Lubbock, and Tyson
and his wife, Kelsie, live in Van Vleck, TX. We also have one granddaughter, Emma, who is 3 and would have
been the apple of Paw Paw’s eye. Rodney left this life on May 7, 2016, and will always be my soulmate.

Hand & FootJoin us on the 2nd Monday each month from 1pm-3pm. We will be playing Hand and Foot, and you are welcome to join us even if you have never played. We will teach you! This is a great way to get involved with the Lake Ridge Ladies.
BuncoBunco is a dice game that is easy to play and very easy to learn! Bunco is usually played with a small money pot, but we bring a white elephant or re-gift for our prizes. We bring our gift in a prety litle gift bag. The prizes are always fun to win and even more fun to bring! We meet on the 2nd Thursday of each month at Lake Ridge Chapel & Memorial Designers.
Saturday BrunchSaturday Brunch - Join your friends at 11am on the 2nd Saturday of each month. The event locations are on the calendar.
Dutch DinnerDutch Dinner is another opportunity to share a meal together in the middle of the month and meet new friends. We meet at a diferent restaurant every month. The date, time and location can be found on the monthly calendar. There are many of our Ladies who work or have other obligations during the day and cannot participate in our game days or outings. This dinner was planned for you!
Friendship GroupsLife is so much beter when it is shared with others, through strong relationships and living life to the fullest every day. We have 6 groups to choose from. You can go to one or all. Join us for the Lunch Bunch, Mall Walkers, Movie Club, Book Club, and Wine & Dine. For information about the groups, call 806-698-8085.

Weight Loss Support GroupWe meet every Monday 9am at Lake Ridge Chapel to privately weigh in, tally our total weight loss as a group, celebrate our successes, share our challenges and then discuss our plans for the week. We encourage you to join us if you have a lot of weight to lose or just a few pounds. It is easier to reach a goal when you have accountability and a supportive group of friends. Our goal is to be as healthy as we can possibly be.
