Claude and Uli, who owned and operated Hilton Head’s La Normandie Restaurant for ten years, now hold forth in their Moss Creek Village restaurant, just over the Hilton Head bridge.
Chef Claude, a native of Normandie, France, has cooked in some of the world’s best kitchens, includ-ing Maxim’s in Paris, the Connaught (Chef Saucier) in London and Ernie’s in San Francisco. Culinary school graduate. Uli orchestrates matters in the dining room, welcomes guests and makes them feel very much at home.
Claude and Uli’s uses only the freshest and highest quality ingredients to create the wonderful food for which they have received numerous accolades. They offer in-house preparation of just about everything that is served, inclusing all bread, pastries, appe-tizers, entrees and desserts. The wine list at Claude and Uli’s features wines from the United States and around the world.

prehensive source of restaurant informa-tion for Bluffton and surrounding area. For many of our visitors and locals alike fall is a favorite season to explore and enjoy Bluffton and the Hilton Head area. Whether you are here for a family beach vacation, golf or tennis, a business trip, a weekend
getaway or just a day of fun in the sun, you will soon understand what makes us so special. The Lowcountry is home to hundreds of great restaurants, ranging from secret hideaways to delightful full-service, high-end hotspots. Chefs from all corners of the world have brought the best American, French, German, Italian, Mediterranean, Greek, Asian, Mexican and Southwestern cuisine right here to our paradise. You can also enjoy regional fare such as local seafood and farm-to-table restaurants. Inside you will fi nd locations, descriptions and menus the best Bluff-ton and Hilton Head Island restaurants have to offer. Use Sections (this page) and the Table of Contents (pages 8-9) as your overview and navigation tool. Restaurants are listed alphabeti-cally with their phone number and the type of cuisine they specialize in. You will also fi nd the page location for each restaurant’s menu, restaurant description and the map location number. The Table of Contents can also be used as a quick reference guide to see who is open for breakfast, lunch or dinner along with several specialty categories such as outdoor dining, children’s menu, take-out, late night, dog friendly places and more. We also provide information on local entertainment, happy hours, early bird specials, (see under Locations on this page). At the end of the book (pg. 49) you will fi nd a comprehensive Restaurant Directory for the whole Hilton Head and Bluffton area. As the weather gets pleasantly cooler and drier our area seem to offer a festival for everyone. There are several culinary events taking place just in October and November! (pg. 31) There is a lot happening for music and art lovers this fall: the 34rd Season of Hilton Head Symphony Orchestra’s theme is “Passion & Music in the Lowcountry” with season opening on Oct. 19 (pg. 37). The Arts Center of Coastal Carolina offers performances throughout the year including popular Broadway shows and musicals (pg. 28). Don’t miss to visit Coastal Discovery Museum and the Public Art Ex-hibition under the sprawling oak trees at the Honey Horn Plantation (pg. 30) For automobile afi cionados, be sure to go to the 2015 Hilton Head Island Motoring Festival & Concours d’ Elegance (Oct. 30 -Nov. 1), which is for the fi rst time combining vintage cars exposition with Aero Expo featuring vintage and historical aircraft. Cahill’s Market and “Chicken Kitchen” is owned and operated by third and fourth generation Blufftonians. We are located on the scenic May River Road in Bluffton, South Carolina – one mile west of Historic Old Town.Located on property purchased by Grandma Cahill in 1918, we continue to be a working farm. In-season vegetables are grown throughout the year. Once harvested, the vegetables are sold in our country market and used in our home cooked dishes prepared in the “Chicken Kitchen.”Along with our own homegrown vegetables, Cahill’s Market stocks in-season produce from local and regional suppliers. We have a large selection of Vidalia Onion dressings, sauces and pickles. We also have a variety of jams and preserves along with farm-fresh brown eggs, stone-ground grits, hoop cheese, local honey and much more.

Chef Young established himself at the ever popular Sea Shack on Hilton Head Island, then later opened Roast Fish and Cornbread where he and his team ran a very popular eatery and built up a loyal clientele over the years. Local PieLocal Pie is opening this fall to the delight of oven-fi ed pizza aficionados. Chefs Lee Lucier and Jack McNulty and partner J.R. Richardson understand it’s all about their dedicated culinary team – and the ‘double 00’ flou . Translated from the Italian dopio zero, the ‘double 00’ refers to the ultra fine grind of the wheat flou , powdery and silky in texture, used in making the sourdough starter for the restaurant’s pizza dough. The custom pizza ovens (affectionately called “the twins”) are designed to make pizzas with thin, crisp, crusts - the signature of Neapolitan-style pizza. Diners will enjoy the open kitchen layout. Their duck prosciutto, bacon, sausages, as well as fresh-water mozzarella are all made in-house. Wine and cocktails are innovatively served on draft and local craft beers in kegs. Directions: Pre heat oven to 425
Make a roux: melt butter in a saucepan. Stir in an equal amount of fl our and cook the mixture for just under a minute. Set aside.
In a separate pot, lightly sauté onions, celery and garlic.
Add 8 cups of water. Add Roux.
Dissolve crab and lobster bases in water.
Add crabmeat, pepper and seasoning.
Bring just to a boil. Turn off heat.
Add Sherry and serve.

Originally settled in the early 1800’s, Bluffton was a summer refuge for Lowcountry plantation owners. The high bluffs of the May River provided protec-tion from both the heat and the insects while the waterway offered easy access to and from Savannah and Charleston.
On July 31, 1844, cries of secession were first given voice and debate here when Beaufort native Robert Barnwell Rhett gave his fiery speech atop a platform under the shade of a sprawling live oak tree.
The tree, now known as the “Secession Oak”, locat-ed on private property, still remains alive today. With the Civil War raging and the eventual occupation of Hilton Head Island and Beaufort by Union forces, the town was mostly abandoned by residents and used as a base for Confederate pickets observing Union troop movements.
The town was pillaged by Union forces on several excursions up the May River, and eventually burned on June 4, 1863. Fifteen houses and 2 churches

Heyward HouseBuilt in 1840 for John J. Cole and Ester Caroline Corley, the Heyward House is one of only eight antebellum structures remaining in the town of Bluffton. This historic home, located at 70 Boundary Street, serves as Bluffton’s offi cial Welcome Center. They offer docent-guided house tours as well as walking tours of Bluffton’s historic district.
A well-preserved example of the Carolina Farmhouse Style that was popular from the Colonial period up to the Civil War and influenced from the West-Indys, the Heyward House served as a loved summer retreat for many years. George Cuthbert Heyward, grandson of one of the signers of the Declaration of Independence, Thomas Heyward Jr., was the fi rst Heyward to reside in the home.
The home’s original slave cabin and summer kitchen have been preserved. The house is named for the family who owned the structure from the early 1880s until the 1990s. Because of its well-preserved condition, the Heyward House is an offi cial project of the Save America’s Treasures Program, a public-private partnership between the White House Millennium Council and the National Trust for Historic Preservation.

One of the most beautiful Plantation Homes from Planter’s era is open to visitors. Rose Hill Mansion was built in the gothic style and designed by the same architect that created Bluffton’s Church of the Cross on Calhoun Street. Originally built in the late 1850s, the Rose Hill Mansion is furnished with period furniture and memorabilia from original owner James Brown Kirk.
Today, Bluffton is one of the fastest growing area’s of the state. Bluffton has a vibrant art and culinary scene, stemming from Old Town Bluffton.
The heart of Bluffton is often the May River, a pristine waterway and a wonderful and picturesque place to kayak, sail, fi sh, or stand up paddleboard. You might fi nd a sharks tooth in the banks of the May. Access the river via the Alljoy Boat Landing, located at the end of County Road 13.
Comprised of one-square mile, Old Town Bluffton is a fun and interesting area to shop and explore. Calhoun Street is the heart of Old Town and has shops, restaurants and galleries to discover.
The Bluffton Farmer’s Market is where you can fi nd resh, local produce (organic & traditional), plants, nuts, herbs, flowers, honey, cheese along with specialty items like spices, coffee, smoothies, olive oil and jams. The Bluffton Farmer’s market is every Thursday afternoon along Calhoun Street.

Farmer’s Market to Table
Coming late to the farmer’s market is like coming late to the party - most of the guests have left, the ice sculpture has melted and only a few wilted hors d’oeuvres remain on the platters. If you want to get the best of the bounty, arrive early and bring a tote bag or a backpack to carry your fi nds, which leaves your hands free to sample! You don’t want to be the one tussling over the very last stalk of rhubarb and making a scene…it’s just that you needed it for your strawberry and rhubarb pie! Farmer’s markets have evolved into events with not only wo-ven baskets brimming with organic seasonal vegetables, fruits and herbs but also now offer artisanal breads, grass-fed meats, free range poultry, eclectic honeys and jams, infused olive oils, fresh pastas and even prepared ethnic foods have become part of what many consider an integral part of their weekly shopping. The social aspect comes into play as well where both customers and farmers are on a fi rst name basis with each other. Having a farmer in one’s corner can only enhance one’s dinner table! They know what shoppers are looking for and which customers will be open to trying greens like a popular kale so deep in color that it is almost black and teaming with rich nutrients and vitamins. It is known by many names including dinosaur kale, Tuscan kale, palm tree kale or black Tuscan palm. Chefs aren’t the only ones who know how to prepare fruits and veggies - a farmer can also advise on how to best store and cook them. Do tomatoes belong on the counter or in the refrigerator? How do I know when this melon is ripe? How long do I cook my collard greens and do I leave in the spine or remove it? Take the advice of a farmer – you will be glad you did!

Crust: Butter the spring form pan. In a food processor, mix graham crackers, sugar, and butter. Using your fi ngers, pat down the crust mixture over the bottom and ½ up the sides of the pan. Refrigerate.
Filling: Preheat oven to 325º. Separate the egg yolks from the egg whites, reserving the egg whites to be used later. In a standing mixer, beat egg yolks until smooth and pale yellow. Add sour cream, ¾ cup sugar, fl our, salt, and vanilla extract, and beat until well blended. Add the farmer’s cheese and cream cheese and beat until smooth. In a separate bowl, using a hand mixer or whisk, beat egg whites until foamy then add in remaining ¼ cup sugar, continuing to beat until they form stiff, shiny peaks. Fold this mixture into the fi lling mixture. Pour into the crust. Cover the base and the outside edges of the spring form pan with aluminum foil so the butter doesn’t leak out from the bottom seam while baking. Bake for 50 minutes or until the top is light brown and small cracks appear. Remove from oven and allow to cool completely, then cover and refrigerate for several hours or overnight. It will “fall” as it chills.
Strawberry Sauce: In a small sauce pan, bring strawberries, honey and sugar to a boil, then simmer for 8-10 minutes, crushing strawberries with a potato masher to break them up, stirring often. Push through a fi ne sieve using a wooden spoon to extract as much fruit as possible. Discard pulp. Set sauce aside to cool, then refrigerate.
Serving suggestions: Place on cheese cake on cake plate. Use a sharp knife, dipped in hot water, to cut through the crust. Drizzle strawberry sauce over each slice.
Farmer’s Cheese Cake with Strawberry Sauce
Ingredients:Crust:6 graham crackers, broken into pieces¼ cup granulated sugar4 tablespoons butter, melted½ teaspoon butter (to coat spring form pan)
Filling:4 egg yolks, reserving egg whites¾ cup sour cream1 cup granulated sugar 2 tablespoons all-purpose fl our½ teaspoon salt1 teaspoon vanilla extract½ pound farmer’s cheese, at room temperature(1) 8-ounce package cream cheese, at room temperature4 egg whites

Directions: Preheat oven to 375 degrees. Pre-bake pie shell until almost brown (approx. 15-20 minutes). Remove shell from oven.
While baking shell, toss all ingredients except to-matoes in a medium sized bowl. Mixture should have a thick, paste consistency. Beginning with the sliced tomatoes on the bottom, alternate layers of tomatoes and cheese mixture, ending with cheese mixture on top.
Place back in oven and bake until top layer bubbles and browns (approx. 25-30 minutes). Let rest before serving (about 15 minutes).
Makes 8 appetizer slices, 5 lunch entrée por-tions, or about 1 dozen phyllo-minis.

Sea Grasse Grille’sCarolina Tomato Pie
At the Sea Grass Grille the Carolina Tomato Pie has become one of their signature dishes.
It is a very versatile and easy to make dish, which makes an excellent appetizer, side, or main course. Great anytime, but better in the summer when local tomatoes are at their peak. It goes great with some grilled shrimp and a nice bottle of Pinot Grigio. You can make several at once and freeze them for future use. If you do, Sea Grass recommends baking the pies fi rst and then freezing.
For a bite-sized appetizer, try dicing the tomatoes and tossing all ingredients together in a bowl. Spoon ingredients together into mini phyllo shells you can get in your grocer’s freezers. The shells come pre-baked so just fi ll and bake at 400 degrees until brown, about 12-15 minutes. Enjoy immediately! You’ll be the hit at your next holiday party!!

Directions: Pre heat oven to 425
Season ribs with salt and pepper then place in a Dutch oven, roast for 20 minutes uncovered. While ribs are in oven puree the poblano pepper and add it to the demi glace. After ribs are removed from oven pour off any grease. Turn down the oven to 350. Add red wine and poblano demi, cover and place in the oven. After three hours ribs will be ready.
While 30 minutes are remaining prepare the grits by combin-ing all ingredients except for the smoked gouda simmer over medium heat until tender, then fi nish with smoked gouda and salt and pepper to taste.
Serve ribs over the grits and ladle sauce over the top, garnish with fresh rosemary.
