Product Description
Red Star® ESL Compressed Yeast – 5 lb. Blocks are derived from a pure strain of Saccharomyces cerevisiae. A
specific fermentation protocol is used to provide fresh yeast with superior shelf life and more gas production in
doughs containing high sugar levels. The ESL 5 lb pound block is positioned for sales to in-store, and small bakeries
that receive through a distributor.
Regulatory
Red Star® ESL Compressed Yeast is produced from materials that are wholesome and free from extraneous matter.
Product is prepared following Good Manufacturing Practices, and complies with the Federal Food, Drug and
Cosmetic Act of 1938, as amended and published in the CFR.

Shelf Life & Storage
Red Star® ESL Compressed Yeast blocks have a shelf life of 28 days if stored at < 45° F – Unopened. Once
opened, cellophane removed, product should be used in 8 hours.
Product should be stored in refrigerated storage with a constant temperature setting of 36-40° F.
Yeast should not be frozen. Rotate yeast on a first in, first out basis.

There are several control points in our HARPC Plan related to cleaning and sanitation to control
contamination by pathogenic organisms. The controls are validated by testing each lot of finished product
for Salmonella, which must be Negative/375 grams. There is no “Kill Step” in the production of active
yeast products as a kill step would inactivate the yeast. End users are responsible for the ultimate microbial
control of yeast raised products. Do not eat raw yeast raised dough.

CONTINUING PRODUCT GUARANTY
(Food and Related Products)
In consideration of the purchase from time to time of certain products (the “Products”) from Lesaffre
Yeast Corporation (Red Star & SAF Brands) (“Seller”), by Valley Bakers Cooperative Association
W6470 Quality Dr. Greenville, WI “Buyer”), Seller hereby covenants, agrees and guarantees to Buyer
that, as of the date of shipment or delivery of the Products to or on the order of Buyer:
1. The products are not adulterated or misbranded within the meaning of the Federal
Food, Drug and Cosmetic Act (Sections 404, 409, 505 and 512) as now or hereafter
amended (“Federal Act”);
2. No product(s) is an article which may not, under the provisions of the Federal Act
be introduced into interstate commerce.
3. Seller further guarantees that it is in compliance with the FDA’s final regulations
regarding the notice and registration provisions of the Public Health Security and
Bioterrorism Preparedness and Response Act of 2002 (the “Bioterrorism
Regulations”) and will remain in compliance with the Bioterrorism Regulations for
the duration of its business relationship with Buyer. Seller agrees to provide Buyer
with the information necessary to comply with the record keeping provisions of the
Bioterrorism Regulations, including information regarding the previous source of
the food item and the transportation of the food item, as those terms are defined by
the Bioterrorism Regulations.
Seller hereby agrees to indemnify and hold harmless Buyer and its officers, directors,
employees and customers (each, an “Indemnitee”) from, and may at Seller’s expense and option
defend against, all liabilities, losses, damages (but specifically excluding consequential
damages), costs and expenses, including reasonable attorney’s fees arising out of any complaints,
claims or legal actions alleging injury to persons or damage to, or loss of, property resulting
directly from the purchase, resale and/or use of the Products (“Claims”), subject to the condition
that the Indemnitee provide prompt written notice of such Claim to Seller. Failure of an
Indemnitee to provide prompt written notice of a Claim to Seller shall negate Seller’s obligations
under this indemnity with respect to that Claim. Notwithstanding the above, Seller shall have
no obligations to an Indemnitee under this indemnification if the Claim is caused by or is
substantially contributed to by the Indemnitee.

EXCEPT AS EXPRESSLY PROVIDED HEREIN, SELLER MAKES NO WARRANTY OF
ANY KIND, EXPRESS OR IMPLIED, WITH RESPECT TO THE PRODUCTS,
INCLUDING WITHOUT LIMITATION, IMPLIED WARRANTIES THAT THE
PRODUCT(S) SHALL BE MERCHANTABLE NOR ARE THERE ANY WARRANTIES OF
SELLER WHICH EXTEND BEYOND THE DESCRIPTION OF THE PRODUCTS.
This Agreement revokes any guarantee, covenant and indemnity previously given or made by Seller to
Buyer and shall continue in effect for as long as Buyer purchases Products from Seller and provided not
terminated by Seller upon written notice of such termination to Buyer. This Agreement may not be
canceled, terminated, assigned, amended or supplemented except by a written document making specific
reference hereto signed by Seller. Notice of acceptance of this Agreement by Buyer is waived.

Subject: Foreign Matter Control for Compressed Yeast (Red Star Items 05020, 05040, 05050, 05075, 05200, 05500, and 05518)
The following measures are in place to prevent the introduction of foreign matter into the compressed yeast products manufactured for Lesaffre Yeast Corporation under the Red Star brand.
1.1 Prior to separation of yeast from the fermenter, it goes through a 60 mesh in line stainless steel filter.
1.2 The cream yeast is then screened with a second 60 Mesh stainless steel in-line filter as it moves to packaging.
1.3 All packaged product passes through a metal detector. The test pieces used are: 1.3.1 1 lb Blocks (05020, 05040, 05050, 05075)

Re: Non-GMO Project Standard and Red Star Yeast Products
Many business are considering using the Non GMO Project Standard to demonstrate their
products do not contain genetically engineered materials. Presently, the Non GMO Project will
not accept any materials produced using corn syrup even through no GMO proteins are present;
this includes our fresh yeast products and deactivated yeast products manufactured in the US.
The Non GMO Project will not accept these products because the dextrose isolate we use for
yeast fermentation is manufactured using GMO enzymes. The dextrose isolate used passes
through a 20K Dalton filter which removes the enzymes which have molecular weights from
35K – 65K. We can provide you with a non-genetically engineering certificate (NGE) which
supports our statement the product is not genetically engineered. The testing was done by an
independent laboratory, Genista Biosciences. Non-GMO Engineered Certificates have been
issued by “Biochecked” for all of our products. Please keep this for your reference.
Unfortunately, it will not change the ultimate decision by Food Chain ID at this time which will
be any products grown on corn syrup are not accepted for use in a Non GMO Project Verified
product. We are continuing discussions with the Non GMO Project in an effort to modify the
standard related to yeast grown on our dextrose isolate.
