Alice MorseWhen my father was the pastor of Bethany Baptist Church, on the bor-

der between Dorchester and Roxbury, Massachusetts, 1948 - 1951, I became a member of BoyScout Troop 4 under the leadership of Mr. Albert Chamillard. Because of his leadership, Troop 4was on the lookout for ways to serve the community, in particular, assisting the elderly membersof Bethany. Dad was one of those devoted preachers who weekly visited the sick and elderly. Healso encouraged the Troop to visit many of the church elders, including one particular member,Alice Morse. She lived at 8 Folsom Street, just a few blocks from Bethany Baptist located on WestCottage Street, and just one block south of Dudley Street. One spring day in 1951, Dad encour-aged the Troop to spend a Saturday cleaning up Mrs. Morse’s outdoor property. At the time, Mrs.Morse was in her early 90s, meaning that she was born at the outbreak of the Civil War. Oneblustery spring morning, some five or six of the Troop showed up to rake leaves, pick up debris,sweep her porch and fix the fence separating her property from her neighbour’s property line.She sat in her enclosed porch and watched us work and offered drinks and kind words and lovinglooks. When it was all over, the Troop left but I remained behind at her encouragement. She alsoknew I was the pastor’s son. Anyway, she volunteered to tell me that she had borders in herhouse living on the second floor. They had been living above her for over fifty years. Then she toldme that she had, at one time, been diagnosed with tuberculosis and that her parents isolated herin an unheated back room of the house which they had built for her. She recuperated (I thinkher husband had left her after she became inflicted) and, at the time of my visit, had lived in thishouse at 8 Folsom since the 1860s.

One thing she wanted to make sure I learnedfrom her was that one of her neighbours wasAmerica’s first national sporting hero. John L.Sullivan was his name. In my Boston days,there was not anyone who had not heard ofJohn L. Sullivan! Born in Roxbury, 1858, aboutthe same time as Alice Morse, he was known asthe ‘Boston Strong Boy’. He was the last of thebareknuckle fighters to hold the heavyweighttitle, and the first to hold the heavyweight titleusing gloves. Mrs. Morse made sure I knew allthis information. In 1889, she claimed, theBoston Strong Boy fought and won abareknuckle bout that lasted 75 rounds.Overall, John L. Sullivan fought 450 bouts andwas the first sporting figure of any sport inAmerica to earn more than one million dollars.Mrs. Morse told me that she used to watch himpass her house strutting and blustering withthe biggest handlebar moustache on any malefigure she had ever seen. He did not walk, shesaid, but instead swaggered — all with a walk-ing stick which he flipped back and forth underhis arm to look important. With his Derby hatperking, he would tip his hat ‘Hello’ as hepassed her by but rarely said a word to her.Mrs. Morse told me this story, I feel, because itprobably was one of the highlights of her life,namely, to live on the same street with a manwith superstar power, a man’s man, so tospeak, who could ‘lick anybody in the house’.Mrs. Morse then gave me a couple of trinketswhich she had picked up on some of her worldtravels, sea shells and a couple of books.

She was a very dear woman with a gentle lookand thoroughout my life I still carry her smilingface in my memory bank. I wish I had a photoof her to share. All I have today is a book shesiged to my father. My daughter Kristy and Ivisited the outside of her house on FolsomStreet in November 2014, and took a photo ofwhat looks like, today, an Alfred Hitchcock set-ting for one of his horror movies.

My Dad always said, "I liveto eat, I don't eat to live."What would "Life on theFarm" recollections be ifthere weren't some thatwere centred around food?Mom was a very good cookand there are many differ-ent times that the tastebuds are flooded withsavory memories. However,few of the readership of thispaper would have the mem-ory of farm life that myselfand many of the guests inour home would have.Unless of course you are ofNorwegian ancestry or visit-ed in a home where thecook was.

My mother's family hailedfrom Saskatchewan via theDakotas in the UnitedStates. These descendantsof the Vikings settled inCanada when the railwaywas offering a quarter sec-tion of land to all whowould settle and farm thePrairies. My grandfatherand his brother took themup on their offer and movedto Saskatchewan to claimtheir little parcel of terra

firma. Living in a sod hut for the first year before grandma and other relatives fol-lowed a year later. Mom and her siblings were born and raised in the west and spokeNorwegian in the home. They only began to learn English upon entrance to school inGrade One. So some Norse traditions naturally followed Mom to Ontario and myselfand many others reaped the benefits of such over the years.

They were extremely poor people as far as monetary wealth was concerned. Then inMom's early teens the Great Depression hit North America. But Saskatchewan wasalso hit with a drought the brought on the Great Dust Bowl. No rain, no snow, nodew for years. Children actually started school during those years who had neverseen rain. One food source had to be cooked 20 different ways just to add variety tolife. Bales of dried cod (just like hay bales) came from the east coast as charity forthose proud yet starving farmers. Lutefisk (spelling maybe wrong) was made out ofdry fish or what milk the cow gave eating Russian thistle a cream sauce adorned thefillets. There was garrout (again I'm spelling these dishes the way Mom pronouncedthem) a simple dish made from flour mainly, sprinkled with cinnamon and a slab ofbutter, served hot. But the dish that came to Ontario that really stirs the fondestmemories of the farm at 68 Maple Ridge Rd. was Lefse.

It too was from simple ingredients, potatoes, milk and flour. A dough was formedfrom those starch ridden, calorie laced, fat forming items. They were then rolled intothin tortilla shaped pastries. The surface of the wood cook stove was transformed intoa grill and the Lefse was cooked one side at a time. These are not potatoes cakes, noteven close in taste or looks. Good lefse was rolled to about the thickness of heavyBristol board or maybe thin cardboard. After it was cooked it was spread out to cooland wasn't stacked until the cooling process had completely occurred. Always bettertasting the next day but many didn't make it to that birthday, two days old was rare,three days old just wasn't happening.

You would take a piece of Lefse, slather it with butter and roll it up to form a little logshaped morsel of ecstasy. Some liked spreading on a fruit jam as well. My Dad wouldsometimes roll up slices of bologna in one and treat it like a sandwich. I was just aplain butter man myself. It was a labour intensive treat so didn't get made that often.It was made only in cold weather in the old days. I don't know if the expression, "ifyou can't stand the heat stay out of the kitchen," came from a lefse baker but a cook

LLiiffee oonn tthhee FFaarrmmstove just wasn't fired up for long periods of time in the summer months. Mom mas-tered the making of lefse on a Teflon skillet in her later years. Every November whenDeer Season approached my hunting buddies and I would always gather at Mom'stable for lefse and coffee. A twelve point buck could have walked in the lanewayunscathed if there was a piece of lefse to be had. Priorities even for harden hunterswas our "manna from heaven" the Norwegian treat, lefse.

I have tried to make lefse to moderate success. I get the taste very close to Mom's butrolling it out to the nice symmetrical shape that she could and as thin just hasn'thappen yet. Now that Mom has passed on it is funny what brings a tear to my eye asI remember her. Lefse is one of those things.

• • • • • • • • • • • •What I wouldn't do to taste my great grandmother's cooking with her roasted chick-en made in the old coal/wood stove or her homemade bread spread with her ownchurned butter and fresh raspberry jam. There was a bounty of farm fresh foodsserved at every meal. • • • • • • • • • • • •When I was about ten, my grandmother would have us over every Wednesday for theday. We'd get there in the morning for breakfast (usually had “big pancakes” other-wise known as crepes) then we'd have a simple lunch in the afternoon. There was asecond floor porch out back just off the kitchen which was surrounded by a wroughtiron fence covered in grapevines. Between lunch and dinner I'd go out there and takea nap on the old white wicker cushioned sofa. As I'd drift off I'd hear my grandmoth-er and mother chatting in the kitchen while preparing dinner. I'd wake up to the won-derful aromas of comfort foods such as pot roast or fried chicken baking in the ovenand mouth watering side dishes being cooked on the stove. And there was alwaysdessert. • • • • • • • • • • • •I remember my mother and I cooking jellies using oil lamps at night because duringthe day we were outside cutting wood. The daylight hours were always full of choresthat needed sunlight.

• • • • • • • • • • • •Mom had a tradition for using up leftovers. Usually on a Saturday she would gothrough the refrigerator and take out all the leftovers from the week, throw them ina pot, add some broth and make a soup of all the stuff she found. She would put acloth tablecloth on the table, put out her best dishes and we would all sit around pre-tending we were eating soup that was made for kings and queens. This was servedwith fresh baked homemade bread and butter we churned ourselves. We lived by thesaying "Use it up, wear it out, make it do, or do without".

• • • • • • • • • • • •On Grandpa's farm, there was no such thing as ‘lunch'. Grandma served dinner inthe middle of the day, unless Grandpa was plowing a long way from the house. Inthat case she'd make him up some sandwiches and send them down with a masonjar of lemonade. But if Grandpa was going to be near the house at noon, she mightfry up some beefsteak, pounded on the back step by whatever child is handy, dredgedin seasoned flour and fried in bacon grease. Of course, whatever vegetables were inthe "truck patch" showed up on the table, too. For example, just picked tomatoes,fried; new peas in cream sauce or morrel mushrooms dredged in flour and fried inbutter. No meal was complete without bread of some kind. If she hadn't done her bak-ing yet, then hot biscuits would come out of the oven. Otherwise, she'd slice into aloaf of homemade bread. Store-bought bread wasn't good enough to suit Grandma,but we kids thought it was a treat.

• • • • • • • • • • • •Mom did the cooking on our old green wood-fired Kalamazoo cookstove. A large greenpump handle stood in the sink for water. The fresh milk, spotted with the occasion-al fly, came from the Holsteins in the barn. Our old farmhouse always smelled of wetdog, wood smoke, molasses, yeast, apple butter, leather, and a faint undercurrent ofdry horse manure. It is the happiest scent I know.

OOLLDD TTIIMMEE NNEEWWSSLANE DAMAGE AVOIDED(Schomberg) — Damage to homelanes softened by the mild Marchweather is avoided by a pressuredelivery feed device on the WhiteRose delivery truck of Walter

Wideman of Newmarket. He can park as far away as 150feet from a village or farm home, whether up or downgrade, when filling furnace oil tanks. The pump is pow-ered by a miniature gasoline motor built into the rear ofa truck. It was admired by several passers in front ofthe W. E. Dale store here on Tuesday when the storagetanks there were being refilled. The outfit also saves himtime in keeping him from getting stuck in muddy lanes.

TWO HURT IN COLLISION (Schomberg) — Severe headinjury was suffered by two young Schomberg men, JackGourlay and Norman Hamilton, when their cars were incollision on No. 27 highway a mile south of the villageabout 6 p.m. on Monday. Both were attended by Dr. A.F.Kay and allowed to proceed to their homes. Damage toeach of the cars was extensive. In each case the head in-jury was caused by impact with windshields. Normanhas been working as an apprentice-mechanic at the Arm-strong and Stonehouse garage in Schomberg since April.Jack had just completed a six-day series of Ontario LandSurvey examinations that afternoon. He is planning tostart work next week at Windsor with the Ontario De-partment of Highways. He has been engaged in his linefor the past three years.

FORMAL HALL OPENING (Hockley) — Several for-mer rectors as well as rectors from neighboringparishes will be invited to attend the formal open-ing of the new hall adjoining. At the meeting were Rev. A. A. Read andMrs. Read, R. J. McCarthy, Angus Coles, Mr. andMrs. Joseph Coles, Lenvard Purdon , Warren Sum-merville and Mrs. Norris Coles. Work on the foun-dation of the new hall had been started in June ofthe last year. Outside work on the main body of thebuilding had been completed before the end of theyear. Interior finishing has been in progresssteadily during the winter months. A hot air fur-nace in the hall basement provides heat for boththe church and the new building. It burns eithercoal of wood. There is a passageway through thekitchen structure from the hall to the Church.

Mr.Hunter’s last previous visit at Newton Robinson had beenfour years ago when he had been engaged in pre-ordina-tion Forward Movement work.

STORY OF “LITTLE AGNES” (Woodbridge) — Work ofthe W. M. S. among Indians in Canada was describedby Mrs. J. A. Ross at a meeting of the PresbyterianC.G.I.T. in the Church on Thursday evening, March 8.She had pictures to illustrate her references to resi-dential schools for Indian children at Birtle, Manitoba,and at Kenora in Ontario. Mrs. Ross told of how oneIndian tribe during a period of a near-starvation in re-

cent years had decided to sacrifice a six-year-old girl to,“Little Agnes,” to the “Great Spirit.” They abandoned herto her fate after leaving her tied to a tree overlooking alake. A Christian Chief of another tribe chanced to comealong, fortunately, and took her to the Cecilia JeffreySchool at Kenora. That such a thing could happen in ourown age in a country such as Canada seemed almost in-credible to some of the members. Later in the meeting,some of the girls dramatized the “Little Agnes” story.There was a “Circle of Prayer” during the devotionalservice in which each of the girls led in prayer. No moremeetings will be held until after the Easter examinationsat schools.

WILLIAM JOHN COULTER — A native of Palgravedied on Friday, Feb. 16, 1951, at Allison where he hadbeen residing fo 27 years. He had seemed in goodhealth up until the time of the heart attack on theday of his death. He had served for 21 years with theGrand Trunk Railway, mainly at Tottenham. Trans-ferring to the C.P.R., he was operator at Essa stationand at Alliston for 27 years until his retirement. Hehad worked with William Hunter at Alliston for eightyears up until last January. He was a member of thePresbyterian Church and of Seven Star MasonicLodge. His wife, the former Sara Johnson, prede-ceased him in 1950. He also was predeceased bythree brothers, Lawrence, Tomas and Robert Coulter.He is survived by a daughter and two sons, Mrs. Paul(Isabel) Copeland, Orillia. Thomas R. Coulter, Toronto;and Wilbert J. Coulter of Alliston. One brother, AlexCoulter is living in Winnipeg. The funeral service atthe Thomas Funeral Chapel on Monday, Feb. 19, wasconducted by Rev. Karam Guergis of Angus, Ivy andBaxter circuit, in the absence through illness of Rev.H.P. Maitland of Alliston Presbyterian Church. Pall-bearers were William Caesar, William Hunter, J. R.Williams, J.D. Bowerman, R.D. Boyes and M. Hartley.Burial took place at Alliston Union Cemetery.
