CHICKEN WITH ROASTED GARLIC

INGREDIENTS:

2 chicken breasts, boneless and skinlessSalt and pepper2 tsp olive oil6 garlic cloves, peeled1/2 onion, sliced1 1/2 medium carrots, sliced1 medium potato, peeled and sliced1 tomato, sliced1 tsp favorite dried spice2 tbsp champagne, dry white wine, chicken broth, or apple juice

DIRECTIONS:

Preheat oven to 350°F. Line a 9”x13” baking pan with aluminum foil. Spray foil with nonstick cooking spray.

Season chicken breasts with salt and pepper, to taste, and place on foil. Dip garlic cloves in olive oil and lay on top of chicken. Then, place onion slices on top of chicken, followed by carrot

http://www.wmboundsltd.comslices, potato slices, and tomato slices. Sprinkle with favorite dried spice. Drizzle remaining olive oil over top and finish with champagne, wine, broth, or juice.

Fold foil to snugly encase chicken and vegetables. Bake one hour or until center of chicken is no longer pink.

MASHED POTATOES WITH ROASTED GARLIC

INGREDIENTS:

1 medium head of garlic1 tbsp olive oil2 pounds russet potatoes, peeled and quartered4 tbsp butter, softened1/2 cup milkSalt and pepper

DIRECTIONS:

Preheat oven to 350°F. Drizzle garlic with olive oil and place in Sili Gourmet Garlic Roaster. Bake approximately 40 minutes or until garlic is soft and pliable.

In the meantime, bring a large pot of salted water to boil. Add potatoes and cook 15 minutes or until tender. Drain potatoes. When cool, coarsely chop potatoes and stir in butter, milk, salt, and pepper.

Remove garlic from oven and slice garlic head in half. Squeeze cloves into the potatoes. Blend potatoes and garlic with an electric mixture until desired consistency is reached.

SQUASH WITH ROASTED GARLIC AND SAGE BUTTER

INGREDIENTS:

1/2 cup garlic cloves, peeled4 tsp olive oil, divided1 large butternut squash, peeled, seeded, and cut into 3-inch chunks1 tsp kosher salt1/4 tsp pepper

DIRECTIONS:

Preheat oven to 400°F.

Toss squash with 3 tsp olive oil, salt, and pepper. Place on baking sheet and roast one hour, turning pieces until they are brown and tender. While the squash begins roasting, coat garlic with 1 tsp olive oil and place in Sili Gourmet Garlic Roaster. Bake next to squash approximately 40 minutes or until garlic is soft and pliable.

Five minutes before the squash is finished baking, melt butter over medium heat. Add sage leaves and cook 2–3 minutes until butter is lightly browned and sage leaves begin to crisp. Remove from heat.

Place squash and roasted garlic in a large serving dish. Top with browned butter and sage leaves.
