All our condiments are organic and fair trade, our sugar is natural and unrefined.

When we have the option we choose local and organic fruit but unfortunatelythis varies from season to season and depends on availability.

Our honey, jam and chutney supplier will take back empty jars for refilling, if you would like to assist us in returning them, please wash out jars after use and leave on the draining board on your departure. For all other packaging glass, paper, plastic, & cans, if you would like to

assist us in recycling, we provide a small recycling area in the rear parking yard for your convenience.

DeAr Guests,

My love of food began when I achieved my Cordon Bleu training which started me on a 20 year journey as a chef. I still get excited in sourcing regional ingredients and local

artisan products. I do my best to buy fresh, locally produced food according to the season wherever possible and ideally from local shops, farmers markets etc. This brings a two

fold environmental benefit, firstly it avoids the need for the typical trip to the out of town supermarkets and secondly it gets away from the current obsession with all manner of produce

being available from the four corners of the world at all times.

I am proud to launch our Breakfast Recipe Handbook hopefully giving you new ideas to old time favourites using our complimentary local and organic ingredients. Eating breakfast

means you “break the fast” so why not start with a bowl of fruit salad or apple juice – its sharp fresh taste will sharpen your appetite and wake you up. Or why not treat yourself to a nice

hot breakfast and some quality time before setting out on your day. As variety is the spice of life there is plenty to choose from and hopefully you will find your favourites and experience

“Muesli was first introduced around 1900 by a Swiss physician Maximilian Bircher-Benner who was inspired by a “strange dish” that he and his wife had been served on a hike in the Swiss Alps. He referred to the dish simply as “d’Spys” (Swiss German for “the dish”). Muesli in its modern form became popular in western

countries starting in the 1960s as part of increased interest in health food and vegetarian dishes. The recipes for some of Suma’s muesli has been tried and tested and remained unchanged for over a decade.”

“Welcome to the home of pure Yorkshire honey. This is a honey for the connoisseur and the cropping season is very short, only 4 weeks, from august to September, from the moors of Ilkley and Eldwick. As it is a thick honey it is impossible to spinout. Therefore we extract it by cold pressing then filtering it. This gives it a slightly bubbly consistency and it will not pour out when the jar is inverted. Heather honey should be

enjoyed on its own as a breakfast or tea time treat.”

The Fruity Kitchen are pleased to supply Croft Mill with a range of genuinely hand made preserves.All of our products are hand made in small batches in our dedicated catering kitchen at

Sutton-on-the-Forest, near York.

We do not add any preservatives, setting agents, flavourings or colourings to any of our products, so the ingredients for the fruit jams are just as you would use at home - lots of fruit, sugar and a squeeze of fresh lemon juice- this does mean our strawberry jam can be quite a “soft set” at certain times of the year as we

do not add pectin.

All of our products supplied to Croft Mill, apart from marmalades, have their fruit and vegetables grown in Yorkshire and we also source all of our other ingredients from Yorkshire businesses.

It all started back in London in 1991 when Craig Sams, founder of Whole Earth – the pioneering organic food company was sent a sample of dark 70% chocolate made from organic cocoa beans.

His wife, environment columnist for The Times and confirmed chocoholic, Josephine Fairley, found the half eaten bar on Craig's desk and sampled some for herself. The intense flavour was unique and unlike anything she had tasted before. Jo was convinced other chocolate lovers would appreciate it in the same way she had and

they set about making the world's first organic chocolate.

The final product was a high-quality, bittersweet dark chocolate bar, packed with 70% cocoa solids - enough to make chocolate fans sit up

and take notice.

POaChED EggsINGREDIENTS

2 Organic Bronte Eggs

Pot of Boiling Water

Poached Egg Cup lightly greased

Yorkshire Butter

Fill a pot with ¾ pint of water and bring it to the boil. Have your poached egg cup lightly greased with butter and break one egg into a poached egg cup. Place the poached egg cup onto the boiling water and cover the pot. Reduce heat slightly, water still boiling and time for 6 minutes for a softly poached egg.

Take care when removing the poached egg cup from the pot, two forks are handy. Tilt the cup or flex it inside out to remove the egg taking care as the cup can be hot. Lovely served with freshly toasted organic bloomer, Yorkshire butter and Denholme honey.

BasIC OMELETTEINGREDIENTS

2-3 Organic Bronte Eggs

Yorkshire Butter

Salt & Pepper

Yorkshire Milk (optional)

Small omelettes are easier to make than big ones. Every omelette must be made to measure – let your guest wait for the omelette, never let the omelette wait for the guest.

Break eggs into a bowl and season to taste with ground black pepper and salt. Add a tablespoon of water or milk, if desired. Beat the eggs with a fork just enough to mix the yolks and whites. Heat the pan under a medium heat. The spot turns solid red when the pan is perfectly preheated and ready to cook. When the spot turns solid red, reduce the heat to maintain the temperature. This Thermo-spot technology should therefore help to prevent you overheating the pan. Add 1 tablespoon of butter, shake the pan so the butter coats the bottom evenly then pour in all the beaten eggs.

Quickly stir the eggs for a second or two to evenly cook the eggs as you would for scrambled eggs. As the eggs start to set, lift edges with your spatula so that the liquid can run under. Repeat until liquid is all used up but the eggs are still moist and soft. Keep the eggs slipping-free by shaking the pan during the process.

Remove pan from the heat and with one movement press the handle of the pan downwards and slide the omelette forward towards the handle. When a third of the omelette has slid up the rounded edge of the pan, fold this quickly toward the centre with a spatula Then raise the handle of the pan, and slide opposite edge of omelette a third up the side farthest away from the handle. Hold a heated plate under it and as the rim of the omelette touches the plate, raise the handle more and more until the pan is turned upside down and your oval shaped lightly browned omelette rests on the plate. Serve immediately with a little butter.

Tip: Always make your fillings in advanceCheese OmeletteAdd 2 tablespoons of crumbled Hawes Wensleydale Cheese just as the eggs begin to set

BaKED EggsINGREDIENTS

Salt and Pepper

Preheat oven to 160C. Butter two ramekin dishes. Slide one egg into each dish, be careful not to break the yolk. Sprinkle the top with salt and pepper to taste and add a small knob of butter. Place the ramekins into a tray or dish of hot water ½ way up the side of the ramekin and bake for 8-10 minutes. Be sure to remove the eggs from the oven before they are fully cooked. They will continue cooking from the heat of the baking dish.

Variation:-Fill two ramekins with 2-3 Tblsp baked beans ease them up the sides creating a well effect. Break one egg in to each taking care not to break the yolk. Place the ramekins into a tray or dish of hot water ½ way up the side of the ramekin and bake for 10-12 minutes. Check that the eggs are fully cooked before removing them from the oven.

Tip: If using a ceramic dish the cooking times may vary.

FRENCh TOasTINGREDIENTS

2 Organic Bronte Eggs

½ cup of Yorkshire Milk

Sprinkle of Cinnamon (optional)

2-3 Tblsp Yorkshire Butter

6 Slices of Organic Bloomer

Break the eggs into a bow and mix well with a hand whisk. Add in the milk and cinnamon if using and continue to whisk until all the milk is incorporated. Pour the mixture into a large dish.

Heat the pan over a medium heat. The spot turns solid red when the pan is perfectly preheated and ready to cook. When the spot turns solid red, reduce the heat to maintain the temperature. This Thermo-spot technology should therefore help to prevent you overheating the pan. Melt 1 tablespoon of butter, shake the pan so the butter coats the bottom of the pan evenly.

Turn one slice of bread with a fork so both sides are covered in the egg mixture. Place in the pan and cook for about 1 ½ - 2 minutes on both sides. A little peak under the bread will let you know when to turn. Repeat with the other slices of bread, Serve with Denholme Honey or a sprinkle of Suma Fairtrade refined sugar.

INGREDIENTS

2 Slices of Organic Bloomer

3-4 Slices of Hawes Wensleydale Cheese

Autumn Chutney with Black Sheep Ale

Hendersons Relish

Dash of Yorkshire Milk

Yorkshire Butter

Preheat the grill

Toast the bread on one side under the grill. Spread the untoasted side with a little butter and chutney, cover with some slices of cheese. Return to the grill so that the cheese melts, bubbles and browns a little.

Remove and sprinkle with a little fresh ground black pepper and Hendersons Relish and serve immediately. Or the old method, crumble the cheese and then melt it slowly on the stove top with a little dash of milk inside the pot, you need to keep stirring it and remove from the heat as soon as it is almost melted.

Then spoon the melted cheese onto the untoasted side of bread that has a little butter and chutney on it and then return it to the grill to brown.

INGREDIENTS

2-3 Organic Bronte Eggs per person

Yorkshire Butter

Salt and Pepper

Yorkshire Milk

Mix eggs slightly but do not over beat them, season with salt/pepper. Add 1 tblsp water or milk for each egg. Water will make exceedingly fluffy eggs whereas milk gives a richer, smoother mixture. Use plenty of butter in a pot it should be hot when the eggs are added, but not smoking or browning. Stir constantly with a wooden spoon, being certain to run the edge of the spoon around the edges and into the centre of the pot. Good scramble eggs need constant and careful attention. If the pot gets too hot remove from heat for a few moments before returning back to the heat.

Tip: Lovely served with crumbled Hawes Wensleydale Cheese or some Autumn Chutney with Black Sheep Ale.

Boiled Eggs

INGREDIENTS

Organic Bronte Eggs

Salt & Pepper

Fill a pot with enough water to cover the eggs thoroughly. Bring the water to a rolling boil and lower the eggs into it gently, using a spoon. Then lower heat until the water is just barely bubbling, otherwise the eggs will bang against the sides of the pot and shells may break, and eggs boiled more gently seem to taste better, too!!

Classic soft-boiled eggs 3–4 minutes, 4-6 minute egg has a firm white and runny yolk and a true hard-boiled egg is cooked in simmering water for 8-10 minutes.

Served with some toasted organic bloomerand Hendersons Relish

Tip: If you want to tell how well an egg is cooked inside its shell just spin it on a counter surface.If it wobbles as it spins the egg has not set fully inside but if it stays stationary as it spins , it is close, if not, hard boiled.

Lottie’s have baked for over 100 years in Yorkshire and this Yorkshire Parkinrecipe has been passed down through the generations.

One of the ‘Seriously Good’ things about Lottie Shaw’s Yorkshire Parkin is that the treacle in the recipe caramelises and hardens during baking, so before the Parkin leaves the bakery it is kept for a few days to

allow it to ‘come again’ - this is where the caramel softens, giving each piece the perfect crumbly stickiness.”

3 Organic Bronte Eggs, separated

2 Dstsp Unrefined Organic Sugar

Yorkshire Butter

The Fruity Kitchen Raspberry Jam lightly warmed

Separate eggs in to two bowls. Add sugar to the egg yolks and whisk until the mixture is slightly thick and creamy. Whisk the egg whites until stiff (make sure to sure to use a clean bowl and whisk) and using a metal spoon lightly fold them into the yolks.

Heat the pan over a medium heat. The spot turns solid red when the pan is perfectly preheated and ready to cook. When the spot turns solid red, reduce the heat to maintain the temperature. This Thermo-spot technology should therefore help to prevent you overheating the pan.

Melt some butter in the pan and turn the heat on the grill to very hot. When the butter starts to foam pour the whole egg mixture into the pan, using a spatula stir a bit to prevent anything sticking to the bottom. After 15-20 seconds check the underside is browning well, if so place the pan under the grill leaving the oven door ajar to avoid pan handle overheating.

Warm 2 tsp of jam in a pot and pour over omelette and serve immediately.

9Croque Monsieur Vegetarian style

heNDersoN’s relish

The spicy Yorkshire sauce has been made in Sheffield for over a 100 years and is unique in its aromaand flavour. It can be used as both a sauce on meat dishes, soups, and marinades.

Unlike other comparable sauces, the relish is also suitable for vegetarians and vegans.

The special mix of spices is combined with our secret recipe producing Hendersons unique sauce.The way in which our sauce is blended is still a closely guarded secret and at least once a year a rumour

sweeps through Sheffield that the owner is retiring and taking the secret recipe with him.Upon hearing this supermarket shelves are cleared as people stock up on their favourite sauce.

Fortunately all these rumours are unfounded and Hendersons is going from strength to strength.

Croque Monsieur Vegetarian style

INGREDIENTS

2 Slices of Organic Bloomer

2 Tblsp Autumn Chutney with Black Sheep Ale

3-4 Slices of Hawes Wensleydale Cheese, crumbled

Yorkshire Butter (and a little melted)

Preheat the grill. Butter one slice of bread, spread some of the chutney and top with the crumbled cheese, then press the other slice of bread on top and press it down very firmly. You can at this stage cut off the crusts, but I think they add extra crunchiness.

Now brush half the melted butter on the top side of the sandwich. Transfer the sandwich to the grill and grill for about 2 minutes, 2 inches from the heat. INGREDIENTS

2 Slices Organic Bloomer

2 Organic Bronte Eggs

2-3 Tblsp Yorkshire Butter

Autumn Chutney with Black Sheep Ale

Break one egg into a ramekin. Heat the pan over medium heat. The spot turns solid red when the pan is perfectly preheated and ready to cook. When the spot turns solid red, reduce the heat to maintain the temperature. This Thermo-spot technology should therefore help to prevent you overheating the pan. Add a tablespoon of Yorkshire butter, shake the pan so the butter coats the bottom evenly.

Add in the eggs and cook to preferred yolk softness.

Toast the organic bloomer, butter and add chutney to taste. Place the eggs on top of the chutney and top with the second slice of toast.

Many processes for removing caffeine from raw coffee beans use chemical solvents.With our decaffeinated coffee, the caffeine has been gently removed using the Pure Water Process,

a technique developed in Switzerland. The unroasted coffee is soaked in water, which has been enrichedwith only the natural compounds found within coffee: sugars, minerals, and so on.

This water draws the caffeine from the beans so that it becomes dispersed equally throughout the water.It is then washed away, and the process is repeated until no caffeine remains within the beans.

We have chosen excellent arabica coffees from Brazil and Guatemala.
