Your Executive Chef

In 1996, Executive Chef Joe Levesque received the Interprovincial Red Seal endorsement, the highest level of government certification. Soon after receiving this significant acknowledgement, Levesque accepted his first position as Chef de Partie. Under the tutelage of Executive Chef Lee Parsons, Levesque further refined his culinary talents.

Executive Chef Levesque progressed through the fine dining industry before accepting a Sous Chef role at a prestigious hotel and conference centre in Niagara Falls, Ontario. After flourishing as a Sous Chef, Executive Chef Levesque expanded his repertoire, crossing the country to accept a position in Banff Springs, Alberta.

Levesque’s growing reputation led him back to Ontario, where his status was elevated to Head Banquet Chef at one of Toronto’s landmark hotels, where he learned to perfect his stylish flair for fine dining. During his career Levesque had many opportunities to cook for some of Hollywood’s most affluent celebrities, such as Catherine Zeta-Jones, Michael Douglas, Robin Williams, Matt Damon, Shakira, Richard Gere, Meg Ryan, Alec Baldwin, Glenn Close, Robert Kennedy, and others.

Since joining the Hamilton Golf and Country in June 2014, Levesque’s main focus is to deliver a unique culinary experience for all guests. His inspiration derives from the freshest ingredients, historical ambiance and his drive to present a creative and memorable experience in every bite.

Executive Chef Levesque is a local food pioneer and has dedicated his passion to support local businesses, growers and suppliers, utilizing their goods at every chance. Executive Chef Levesque’s philosophy of food is simple; “Great food starts with good wholesome ingredients”. He has built a culinary team that not only supports this philosophy, but is passionate about providing outstanding service, innovative ideas and exceptional, worldly cuisine.

Great food starts with

good wholesome ingredients.
