W ater sports enthusiasts can now enjoy a range of activities at Coral Beach Resort Sharjah in partnership

with Sharjah’s aqua adventure specialists Al Khor Water Sports & Diving Center! Guests of the hotel can partake in non-motorized water sports such as sailing, catamaran, kayaking, paddle boating and wind surfing, as well as motorized water sports such as jet skiing, water skiing, wake and knee boarding, and banana boat and tube riding. during a Guests’ Cocktail this past summer, two female guests asked Mr. Simon — without knowing that he is Coral Beach Resort’s

General Manager — where they could borrow or rent sports shoes as they were interested in using the treadmill in the hotel’s Fitness Center. As a gesture of goodwill and generosity, Mr. Simon instructed Mr. Satheesh Kumar, Coral Beach’s Executive Housekeeper, to purchase sports shoes for these guests so that they could enjoy the hotel’s facilities to the maximum. The very next day, two pairs of sports shoes were delivered to each lady’s room.

Here is Coral Beach Resort’s variation of this delicious dish, which serves 4...

IngredIents- 1¾ large cucumbers, peeled,

seeded, & coarsely chopped - 2 scallions chopped - ½ cup assorted fresh herbs,

(basil, chives, & mint)- ½ piece fresh ginger, chopped - 1 small clove garlic, chopped - 3 tbsp extra-virgin olive oil - ¼ cup plain low-fat yogurt - ¾ tsp kosher salt - ¼ tsp freshly ground black

pepper - ¼ teaspoon Tabasco sauce - 150gms shrimp peeled, cooked, & cut into medium dice- 150gms watermelon or cantaloupe, cut into small dice

Method of PreParatIon- In blender or food processor,

combine coarsely chopped cucumber, scallions, coarsely chopped herbs, ginger, garlic, olive oil, & yogurt; process until smooth for about 1 minute.

- Stir in 1/2 teaspoon salt, pepper, & hot sauce, then transfer to large airtight container & refrigerate 1 hour, or up to 2 hours.

- In small bowl, stir together shrimp & remaining cucumbers, herbs, & salt.

- Fold watermelon or cantaloupe into soup bowl & top each with dollop of shrimp mixture.

- Serve immediately and enjoy!

Medovik, or russian honey cake is one of the most popular cakes in russia. in this torte, thin biscuit

layers are baked to perfect gold and slathered with luscious cream made of caramelized condensed milk and butter. this is now Coral Beach Resort prepares it...

Preparation time: 30 minutesoven temperature: 190º cCooking time: 25 minutes

iNGredieNts For Cake- 1 cup granulated sugar- 2 eggs, beaten- ¼ cup butter- 2 tbsp honey- 2 tsp baking powder- 3 cups all-purpose flour

iNGredieNts For Cream FilliNG- 1 (14 oz) can sweetened condensed milk- 3 eggs, beaten - 2 tbsp honey- ¼ cup butter

method oF preparatioN For the Cake- Preheat oven to 190º C. Lightly flour

a cookie sheet. Precut 5 sheets of wax paper or parchment paper into 8-inch circles (dimensions don’t matter, thickness of dough does). if using wax paper, lightly grease.

- in a small bowl, combine sugar and eggs; set aside.

- in a large saucepan over low heat, melt

ruSSian Honey Cakebutter. add honey, egg-sugar mixture, & baking powder; stir constantly until well blended & foamy. remove from heat. Stir in flour until dough is not sticky (note: if dough is sticky, add additional flour, a little at a time).

- Separate dough into 5 equal pieces & place onto the wax paper or parchment paper circles; cover each dough section with plastic wrap to keep warm.

- Using a floured rolling pin, roll one section into a round ¼-inch thick. Place on prepared cookie sheet (if using wax paper, remove) & bake 3 to 5 minutes or until just barely golden but not brown (watch it carefully). remove from and oven. remove from baking sheet and cool on a wire rack. repeat with the remaining 4 sections of the dough, re-flouring cookie sheet if necessary.

- Prepare cream filling. (See below.) - on a large serving dish, alternate 5

layers of cake circles & cream filling, applying the cream filling liberally between layers. With the 5th layer, crumble the cake into small pieces & sprinkle over the top of the cake. Let the cake sit 6 to 8 hours before serving.

method oF preparatioN For the FilliNG- in a large saucepan over medium

heat, combine sweetened condensed milk, eggs, honey, & butter. Stirring constantly, bring to a boil; boil until the mixture thickens. remove from heat & let cool.
