Coral Beach Resort Sharjah has recently welcomed a new member to its food and beverage staff. Originally hailing from the Philippines, Chef Rosemarie Prollo has

worked at some of the most prestigious hotel and restaurant kitchens in her native country, as well as in Japan, including the famed Peninsula Manila, and the popular Sun Rural Ogata Hotel Akita.

A resident of the UAE since 2006, Chef Rosemarie brought her cooking talents for three years to the Hilton Dubai Jumeirah Resort, a property which boasts some of the most well-liked food and beverage outlets in the city. She then went on to work at the world-renowned restaurant Nobu at Dubai’s Atlantis The Palm Hotel & Resort. Founded by celebrity chef and restaurateur Nobu Matsuhisa, Nobu is arguably the world’s most recognized Japanese restaurant.

Clark Francis Tennis (CFTennis) was founded by Clark and Jackie Francis in 1997 at Dubai’s Aviation Club. After 10 years of experience

Crema Catalana, Crema Cremada or Crema de Sant Josep is a Catalan dessert dish similar to the French Crème Brûlée. It’s a treat traditionally served on Saint Joseph’s Day (19 March), however, nowadays it is consumed throughout the year.

Crema Catalana features a custard that’s flavored with lemon or orange zest and cinnamon. Unlike with Crème Brûlée, however, the sugar in this dessert is traditionally caramelized under an iron broiler or with a specially made iron, not with a flame. Sometimes Crema Catalana is baked with a pineapple on top (Crema Catalana amb Pinya). Here is Coral Beach Resort’s variation as prepared by Pastry Chef Sarath...

IngredIentsLemon zest1.5 ltr fresh cream 15 egg yolks5 whole eggs250 grm sugar1 vanilla bean5 tbsp brown sugarPinch of cinnamon powder

Procedure- Whisk together egg yolk and whole eggs. Add sugar. - Boiled the cream with the vanilla bean. - Remove cream from fire, add it to the egg mixture. - Strained the mixture and pour it int fine oven proof tea cups or soup plate.- Baked in pre-heated oven at 160º C for 30 minutes or until set- Remove and let it cool. - Sprinkle 1 tbsp of brown sugar on every cup and caramelize. - Decorate it and serve.

8:00pm, the hotel hosts “Bingo Night,” a complimentary activity for in-house guests and members, where lucky players can win special prizes of hotel souvenirs or a dinner at one of the resort’s restaurants! Also, each Tuesday night at 8:00pm, Coral Beach offers complimentary “Movie Night” for children of guests and members, where kids films — from animated features to adventure favorites — are screened to entertain the little ones.

caesar salad, one of the most popular salads of all time, was created by caesar cardini, an italian chef and

restauranteur based between California and Mexico. Legend has it that the salad was invented when Caesar had to come up with a dish despite running low on ingredients after a Fourth of July rush in 1924. For dramatic flair Caesar decided to also prepare the salad at the table. Another story has it that caesar’s brother, alexander, made the salad for his pilot friends after a night out, so it was originally called the “aviator’s salad.” Just as there are many versions of its origin, so too are there many variations on the salad itself. Here is Coral Beach Resort’s version as prepared by chef Albert Peralta...

Preparation time: 20 minutesoven temperature: 200º ccooking time: 15-20 minutes

IngredIents FOr salad60 grm butter30 ml olive oil3 cloves of garlic, finely chopped1 sour dough bread, thinly sliced30 ml italian parsley, chopped90 ml Parmesan cheese gratedromaine lettuce leaves, separatedParmesan shavings

IngredIents FOr dressIng1 egg, room temperature6 anchovy fillet, finely chopped5 ml bottle capers rinsed and chopped15 ml lemon juice, to taste10 ml Dijon mustard100 ml olive oil

Hail Caesar!Step 1 - preparing the bread- Pre-heat the oven. Over the stove, melt the butter, add the olive oil and then the garlic.- Stir the bread through the mixture with the parsley, season with salt and pepper. - Arrange on the baking sheet. Bake until golden brown and crispy.- Cover with grated parmesan cheese as soon it comes out of the oven.

Step 2 - preparing the dreSSing- Place the egg in the small saucepan of cold water. Bring to the boil and boil for about 3 minutes.- Lift the egg from the boiling water and immediately immerse it in cold water.- Peel the egg once it has cooled down and then beat it in a bowl with the anchovies, capers, lemon juice, and mustard.- Season to taste.- Trickle the olive oil into the dressing in a steady stream while constantly beating. The dressing will thicken.

Step 3 - putting it all together - To serve, arrange the lettuce, roasted bread, and parmesan shavings on a serving plate, and drizzle the dressing over the ingredients.- Serve immediately.

Top Tip!Shredded crispy fried beef bacon or flaked

cooked chicken can also be added to the salad.
