Macaroons (Class 7) Ingredients: Whites of 2 large eggs, 100g ground almonds, 175g caster sugar, 25g ground rice, a few drops of almond essence, 8 blanched almonds halved. Method: Preheat the oven to 150°C, 300°F or gas mark 2. Place about 1 teaspoon of the egg white on one side in a small bowl. Then whisk the remaining egg whites with an electric mixer or rotary whisk until they form soft peaks. Fold in the ground almonds, sugar and ground rice, add a few drops of the almond essence. Place heaped teaspoonful of the mixture well-spaced on two baking sheets lined with either rice paper or baking parchment. Smooth the mounds out with the back of a spoon. Place halved almond in the centre of each macaroon. Brush each macaroon with a little of the reserved egg white. Cook for about 20-25 minutes until the macaroons are pale golden brown, leave to cool slightly before taking off the baking sheet, remove excess rice paper if used then leave to cool.
