We do not cook everything incoconut oil and don't want
everything to taste like coconut butit is HANDS DOWN the product weget asked about most so here is a
guide to explain the different types,the benefits and how to use it.
As you will see, we use it more inour beauty cabinet than we do inthe kitchen but this information is
important all the same!

There will be no touting of the stuffas a miracle oil, superfood or
otherwise.
It is a real food, that has greatnutrient density and is economical
to use - and if you have attendedany of our workshops you know that
this is the basis of how we chooseingredients to use in our kitchen
creations.

So, what should Iconsider when
buying my coconutoil?

It should be white and free of contaminants!
TIP: When you get an oil home be wary if ittastes cooked or smokey.
It may indicate that it was exposed to reallyhigh heats in processing. It does take a super
high heat to damage the coconut oil, but Iwould try a another brand where this attribute
doesn't exist just to play it safe.

Price doesn't determine quality, there aregreat priced ones around of awesome
quality and some that are expensiveand leave a lot to be desired. In any
case, if you find one your like considerbuying in bulk as the cost really comesdown and as I have mentioned, coconut
oil is shelf stable...so no worries about it going off!

Look for the words that you havedecided are important. An unrefinedvirgin centrifugally processed oil is ofbetter quality than a refined expeller
pressed that is off white and hassome floaty bits in it, right?!

Refined coconut oils are lower in scent,have been refined, bleached and
deodorized as it is made from the driedcoconut meat. The good fatty acids incoconut oil still exist in this oil, and is
often cheaper than its unrefinedcounterparts.
This is a great oil for frying and use onyour body.

When buying refined coconut oil thecompany matters, there are different
chemical and extraction processes thatcan occur so you need to exercise a little
more caution
(you don't want to end up withreplacing one less than desirable fat in
your diet with another, do you?).

Unrefined oils are slightly more expensive as itused the fresh raw coconut meat to extract the
oil.
There is no notable difference between virginand extra-virgin.
Unrefined Cococnut Oil

In regards to first pressed, or cold pressed,expeller or centrifugal processing - this relatesmore to the amount of coconut flavour that will
be in the end product (in a nut shell). A coldpressed coconut oil will have a more delicateand subtle flavour as it is heat that brings outthe coconut flavour in the extraction process.

Niuginui Coconut Oil is truly raw, the business isfull of integrity though it can be a little priced. It
is true that is smells like fresh coconut milk.
Delicious.

In summer I prefer to keep it in the fridge, fortwo reasons. To keep it scoopable and to
protect against any extraneous additions thathappen when other delve into my coconut oil
stash! In cooler months I am happy to leave it inthe pantry.

Whether it is raw depends on extraction process- heat can be applied in expeller processing so
look for an oil that undergoes centrifugalextraction is your best best.
We love Niuguini and the oil from Peace Loveand Vegetable - with the latter being more
affordable..
Is My Coconut Oil Raw?

As no heat is applied a raw coconut oil is moresubtle and delicate in flavour than those oils
processed with heat.
The fatty acids in coconut oil are heat stable sokeep this in mind when considering whether youwant to invest in truly 'raw' coconut oil product
....you just might sneak in afew more nutrients,but the ones that truly matter are still in good
condition when heat is applied!!
Is Raw Worth It?

This comes down to the extraction method - heatbrings out the coconut-ty flavour.
If you want a more subtle flavour try acentrifugally processed oil. If your coconut oil is'deoderized' you may like to consider whetherthis is done in a chemical process, or through
ceramic distillation or using something likediametaceous earth.

I love coconut oil for a few reasons, and they aremore practical than health related.
I am always hesitant to get into the nitty gritty asto the chemical component of foods as I reallydon't feel that er need to know that for good
health.
What I will say is this...

...so makes is a better choice for cooking at highheat. High heat damages oils like olive,
macadamia and grass-fed butter - and ingestingthose isn't a great idea!
Coconut oil isstable at a high
temperature

...and this means that you have more flexibilitywith how often you purchase it, how to store and
and how long it lasts.
Unlike more fragile oils, coconut oil is morerobust and, in my opinion, user friendly.
It is shelf stable too!
Slather your bodyin some coconutoil, with a couple
of drops oflavender oil before
bed for extraenjoyment!
