    4 Point Cocktail

    Cocktails that are composed entirely of alcohol with no mixers

    can be exceptionally hard to make palatable. While

    themartiniandmanhattancocktails make pure

    alcoholmixologyseem easy, most drinks that contain only

    alcohol have little appeal to casual drinkers. The 4 Point

    cocktail takes goodbourbonand combines it withapplejack,

    Salerno Blood Orange liqueur and maraschino liqueur to create

    a rich, complex and ethereal cocktail. Try this one at home or

    ask your favorite mixologist to mix one up for you. Remember,

    with cocktails that are all alcohol,stirthe drink for best results.

    Ingredients:

    1 ozbourbon 1 oz applejack 1/2 ozSolerno Blood Orange liqueur

    How you could step away from this without

    thinking that it istruly a bloody good drink,I don't know. First off, it has a great anejo

    tequila from thehighlands of Jalisco,

    Mexicoalong with Disaronno, the great

    Italian amaretto. To that mix we add blood

    orange, the spice of ginger, a little sweet

    and sour, and top it off with a refreshing

    soda. It, quite simply, is the makings for 'A Bloody Good Time'

    and is a highball with just the right amount of complexity to

    keep your interest to the end no matter the occasion or season.

    1 ounceDisaronno amaretto liqueur

    1 ounce freshblood orange juice

    2gingerdials

    1/2 ounce lemon juice 1/4 ouncesimple syrup

    Soda Lemon wedge for garnishPreparation:

    1. Inmixing glass,muddleginger dials with lemon juice.

    2. Add simple syrup, blood orange juice, Disaronno,Cazadores Anejo tequila, and ice.

    3. Shakeand strain into ahighball glassover fresh ice.

    4. Top with soda, fold and stir into cocktail.5. Garnish with lemon wedge.

    Red Ball

    I was asked to create an original

    cocktail forAbout.comthat would be

    called the "About.com Red Ball" and

    this recipe was the result. It seemed in

    the process that everything was good

    except one thing was missing. The

    missing link was a shot of pomegranate

    vodka (specificallyCharbay). The

    addition of that one ingredient in place of clear vodka made the

    difference I was looking for and balanced the drink out nicely.

    4. Drop a maraschino cherry in the glass for a garnish.Absinthe Cocktail

    This Absinthe Cocktail is a trueclassic cocktailand can be

    found in many of the first bartending books including those by

    "The Professor" Jerry Thomas. I have adapted this recipe from

    the 1887 printing of Thomas'Bartenders Guideand it is a greatway to taste all of those reintroduced absinthes that are now

    dotting the market. It is an almost true taste of absinthe as that is

    the major ingredient, though I find it interesting that anisette is

    also used because it doubles up the anise flavoring. The other

    thing you will notice is that this is a very short drink, but it is a

    powerful one in both taste and affect.

    This recipe is for a classic absinthe cocktail. Since absinthe had

    been illegal for sometime, Pernod or Herbsaint were often used

    as substitutes, but there's nothing like the real thing. Luckily

    absinthe is beginning to once again see the light of the bar and

    has become legal to sell in more countries than it was in the

    better part of the 19th Century. The Absinthe Drip is a variation

    of theFrench-style of drinking the herbal liquor,the difference

    being the club soda and ice. Absinthe is a taste that grows on

    you, but it's worth the experience and traditionally this drink is

    served with two straws cut in half.

    Absinthe Sour

    The Whiskey Sour is

    probably the most

    popular of all the sour

    drinks and rightfully so,

    it is a great cocktail. It is

    sour, yes, but the

    sweetness of some

    whiskeys and simple

    syrup offset any tartness, especially the sweeter bourbons

    likeMaker's Mark. Fresh lemon juice is key for the best

    Whiskey sour and the choice of whiskey will create a differentcocktail depending on style and brand.

    As some reviewers have pointed out, a more traditional recipe

    for a Whiskey Sour includes egg white. This does tend to tame

    the sourness of the drink and make it a bit smoother. The use of

    raw egg is a matter of choice and has fallen out of favor for

    many drinkers given the potential for salmonella. If you aregoing to opt for the raw egg,read these tips on using eggs in

    extra brutfor that sweet-dry combination that is stunning.

    There are two versions of the

    Orange Blossom according

    Bar Book, one neat and one

    on the rocks. In the 1935

    book A.S. Crockett says that

    the Orange Blossom No. 1

    (neat) was likely created by

    "some young bridegroom or other who wanted something novel

    to use at his final stag party." His recipe for the Orange

    Blossom No. 2 isbuiltin a "bar glass," for this you'll want to

    use an old-fashioned glass filled with ice. It also calls for 1:1

    gin and orange juice so you want to keep the glass small or go

    with a little more juice to keep the alcohol content manageable.

    An Admiral Benbow is a refreshing lowball drink that blends

    the sweet flavors of Plymouth gin, lime juice and dry vermouth.

    It's an obscure cocktail that I've fallen in love with but its

    history alludes me. It could have been named for the fictional

    Admiral Benbow Inn that housed Jim Hawkins inTreasure

    Island. But then again there was a Royal NavyAdmiral John

    Benbowwho was immortalized in song after a mutiny among

    his captains. That was 1702 so the Treasure Islandlink is more

    believable.

    Lemon spirals look fancy, but they are actually very easy to

    make, and they make a nice addition to drinks and cocktails.

    Start the Lemon Spiral

    You will need a lemon zester like this one. Begin by washingand drying the lemons.

    Using the blade in the middle of the zester, start at the top of the

    lemon and cut in a spiral all the way around.

    Twist the Lemon

    Pressing the blade firmly into the lemon peel with one hand, use

    your other hand to slowly twist the fruit. You want to go deep

    enough that you grab a good chunk of the peel, but not so deepthat you puncture the fruit.

    If you are really talented, you may be able to make it all the way

    down the lemon in one cut. But most likely, the peel will break

    off about halfway down.

    Add the Lemon Spiral to a Drink

    When it comes off, the peel will be slightly twisted, but you

    may have to do a bit of manual adjustment to get a really good

    spiral.

    Now you can drop the lemon twist right in a drink, or artfully

    lay it over the rim of a glass.

    How to make matcha powder

    The matcha ceremony is an elaborate art form, but with a little

    practice, making delicious, clump-free matcha is simple. To

    whisk great matcha at home, youll need:

    Matchapowder, preferably ceremonial grade (You can buy

    ceremonial-grade matcha powder from companies likeArt of

    TeaandDoMatcha.)

    A matcha whisk (These are also available from many online

    tearetailers.)

    A matcha scoop or a 1/2 tsp measuring spoon

    A chawan (matcha bowl) or any wide, shallow bowl

    1. Place two scoops or one heaping 1/2 teaspoon of matchapowder into your bowl.

    2. Pour three ounces hot water (just simmering is best) into thebowl.

    3. Holding the bowl with your lefthand and the whisk with your right

    hand, whisk the matcha powder

    into the water. Use your wrist (notyour elbow or arm) to make W-

    shaped whisking motions.4. At some point during whisking, run the whisk around the

    perimeter of the bowl to remove surface clumps. You can

    also gently press the whisk against the bottom of the bowl

    as you whisk to break up any hidden clumps.

    5. It will take thirty seconds to one minute to whisk out theclumps and develop a foam on top of the matcha.

    6. Once the top of the matcha is frothy, gently lift the whiskout of the center of the matcha bowl. This will leave a small,

    Zesty Irishman

    The Zesty Irishman, on the surface, is

    similar to aWhiskey Sourwith the

    exception of a couple of rather interesting

    twists. It was created by mixologist

    Anthony Caporale, who is also Drambuie

    brand ambassador.

    If you are familiar with Drambuie in

    drinks like theRusty Nail, you will be

    pleasantly surprised with its pairing

    withScotch'scounterpart. Though, here

    the liqueur not only paired withIrish whiskey,but the citrus is a

    distinct contrast that we typically do not think of mixing with

    Drambuie. It's interesting, certainly different from the norm,

    and gives a new perspective to the liqueur's pairing potential.

    Ingredients:

    3/4 ozDrambuie 1 ozIrish Whiskey

    1/4 oztriple sec

    Juice of 1/2 lemon Ginger ale

    Sweet and seductive, the Yellow Fairy is one of my favorite

    spring dessert cocktails. For this drink I've paired the botanicals

    of gin (I preferBulldogorDamrak) and the ultra-sweetness of

    lemoncello with a hint of absinthe. It all ends up balancing out

    nicely but you do want to be gentle with the absinthe as it can

    easily take over the entire drink. In this case (as it often is in

    absinthe cocktails, such as aMile High Manhattan)less is more.
