Charlie Baxter First of all, Charlie is an old geezer, and as with many true legends, we know very little about his past. For us, the story begins in the early 1900’s. The first

ever mention of Charlie Baxter is a postcard from the Pegu Club in Burma, dated May 20th, 1910. It was addressed to his wife in England, but got lost

somehow and eventually ended up in a post card museum in Harlem, where we found it after a lot of research. One of our companions met Charlie in Indonesia about a decade after that postcard was sent. After sleeping in

back alleys, falling in and out of bars together and whatever trouble they got up to, our travelling companion somehow convinced Charlie that the grass was greener in Copenhagen. One day he fell down the stairs to our little bar, dehydrated, hungry and scruffed up. We helped him to a big bowl of Tequila

and to this day, he is still with us. Slightly tipsy, he fights off demons and bad spirits for your convenience, all day, every day. Salud!

Naming drinks is a funny old thing. Sitting here for a while, forcing a name to this drink that is an obvious take on the Paper Plane. The Blackbird was a pretty

sexy plane, a great record, a Beatles song and a very bitter cocktail.

WinehouseTo be quite Frank, Amy had both a blessing and a curse. She had amazing talent, as in, one of the greats of this century. This is our ode to her, a winey bittersweet love story, with Tequila as the spice of life in place of a multitude of other ‘substances’.

Legend has it that Nordic gods with golden hair came down from the north to Mexico on flying dragons and quickly became friendly with the Indians. They

got high on chocolate and the purest sugar cane spirits man had ever seen. Since none of us are gods we diluted the elixir with Nordic Tonic.

BananrepublikkenStraight outta the banana plantations of Xaymaca! Or Jamaica as the British

later named it, incapable of figuring out the correct pronunciation. An Old Fashioned, but bananas!

Bullfigthers are said to be some of the toughest people alive. But we are not bullfighters. Not even close. The closest we’d ever get is sitting at the bar next

to the stadium, drinking Tequila Fortaleza and eating apricots while feeling sour about the whole situation.

New Whisky Sour

We got inspired by the US export tariff to rethink the whiskey sour a bit. Along the way we lost the ‘e’ in whisky and added Spanish bitters from Scotland as well

as wild elderflowers from the Italian alps. Think of a whisky sour that just got back from holidays, vegan, full of energy and straight up.

Imagine yourself walking down a dusty road in the old town of Tequila. You step in to that one very special bar you always go to when you visit and order a

Batanga. Only that we can’t get hold of Mexican cola, so we made our own out of amaro, lemon and a hint of sugar.
