The Healthy Italian: Shrimp Skewers with GremolataPlan an after-work soiree in a flash with a few easy, colourful appetizers likethis one. Pair it with grilled veggies (artichokes, asparagus, zucchini) on a bedof brown rice and lentils along with a white wine sangria, and you'll have theentire office talking about it for weeks.

Shrimp Skewers10 8-inch bamboo skewers1 lb (454 g) frozen raw large shrimp, peeled, deveined and thawed1 tbsp extra-virgin olive oilLemon slices for garnish Gremolata1 cup packed chopped fresh Italian (flat-leaf) parsley2 cloves garlic, coarsely choppedZest of 1 lemon1 tsp freshly squeezed lemon juice¼ tsp sea salt



Pinch freshly ground black pepper1 tbsp extra-virgin olive oil

To make the gremolata, combine all gremolata ingredients, except olive oil, in the bowl of a food processor and pulse untilall ingredients are well chopped. Add to a bowl and stir in olive oil. Soak wooden sticks in warm water for at least 10 minutes. Remove from water and pat dry. Preheat grill to medium-highheat. Finish thawing out shrimp by running them under cold water. Pat dry and skewer 4 shrimp per stick. Spray skewers lightlywith cooking spray. Place shrimp on preheated grill rack that has been brushed lightly with oil and grill until opaque andpink, about 4 to 5 minutes on each side. Place skewers on a serving platter and spoon gremolata evenly over them while hot. Serve with lemon slices. Makes 10 skewers VARIATION: Substitute chicken breast pieces for shrimp on these skewers. Make gremolata less tangy by adding 1 tbspminced green olives.
