The Triple A The AAA National Committee is the governing body for AAA exams and comprises representatives from the principal chefs’ organisations in the UK, who have come together in order to establish a ‘licence to practice’ trade test for professional chefs. The Awards set the benchmarks that will define, develop, maintain and promote the skills needed in craft-led kitchens. They are intended to establish consistent, fit-for-purpose professional standards, requiring a breadth of skills and understanding in preparing, cooking and finishing a wide array of dishes. Focused on work-based apprentices and their learning providers, the process provides a common syllabus with online support culminating in a one-day practical exam mounted independently of prior training and conducted by Chef Examiners approved by the Committee.
