CARL’S CRAZY CATERING

• Remember Carl?

• You are the Kitchen Manager at Carl’s Crazy Catering, and he

came to you and said:

• “We’re losing all our major clients to Kathie’s Kulinary Kitchen. You

need to create a menu that will blow Kathie out of the water and

win me back that business”

• This is a practical lesson, it can be done individually or in a group

based on preference. This is not assessable.

CARL’S CRAZY CATERING• You asked some more pertinent questions, and because you asked in a

professional, confidential and sensitive manner, Carl gave you some more

information:

• Kathie’s Kulinary Kitchen is a newly opened organisation who have some

special introductory pricing which is significantly lower than Carl’s

• Kathie also has a new and exciting chef, although untried with large volumes

of meal turnover

• Kathie has targeted Karl’s high end and profitable clients in an effort to gain

market share quickly

• Carl has not done much by the way of “customer service”, he believes the

food “speaks for itself”

• Carl’s business is still sound, but he wants to win back the prestige

associated with these clients, so winning the clients back is the ultimate goal

• Carl has given you a budget of $15,000 and four weeks.

• Your project team consists of:

• You, Kitchen Manager

• Jason Pert – Kitchen hand, loyal friend of Carl’s

• Kate Simpson – Front of House Manager

• You have already briefed the team on the project, they are all

excited about the challenge.

• Having identified the roles and responsibilities within the Project

Team, you now must ensure that Team Members understand them.

• Using your Communication Strategy, you can now identify the best

ways to communicate these.

• Given the complex nature of roles in projects, it is usually best to

combine a verbal media, such as a meeting or one-on-one, with a

written media for later reference.

• Write a memo to advise all staff of the roles and responsibilities of

the Project Team over the next four weeks.

• Remember to copy in Carl and the Project Team.

• Change Request

• One of your team’s solutions was to have a special function for all

of your current and past elite client’s to show off your fabulous

menu, your brilliant staff, and great facilities.

• It’s also an opportunity for Carl to get to know the client’s on a

personal basis, making it harder for them to choose a different

catering company.

• Your preferred MC for the night is a well known food critic and TV

celebrity, but his fee for the night is $10,000 which will take your

overall budget up to $18,500.

• Complete a Change Request Form for Carl to approve.

• Carl thinks it’s a brilliant idea and has approved your Change

Request.

• Update the Change Request Register.

• Complete a risk assessment for this project using the information

you have to hand, and making an educated guess at what you

don’t know.

• Identify those risks that you are unsure of.

CARL’S CRAZY CATERING• You are half way through the project period:

• You are on schedule for the special guest function

• RSVPs are coming through with a lot of acceptances, but 10% rejected

outright, and 35% still not having answered

• The Guest Speaker has been booked but needs accommodation for the

night to be arranged for him (“5 star, no less”)

• A special menu has been devised showcasing the chef’s best and most

popular recipes, specialist suppliers need to be sourced for two key

recipes however

• Kate has caught the flu and is at home very unwell

• You are running over budget ($18,500 compared to the original $15,000)

• Write a Progress Report using the template provided.
