We’re heading into the holiday season, and that means lots of fun traditions. We love learning about all the different ways our friends and families celebrate with special meals, treats, gifts and more.

In our holiday issue, we’re exploring the foods we see this time of year along with easy ways to cook them. Come with us to taste the flavors of Virginia and see how we came up with an idea to help others in our community.

Many of our holiday traditions are centered around food, and that means parents and other adults often spend a good amount of time in the kitchen. Have you ever wanted to help but were afraid of getting in the way?

Here’s a list of small things you can do to lend a helping hand in the kitchen during the busy holiday season!

Wash vegetables and fruit. Before it’s used in recipes, all produce should be cleaned with cold water. Use a vegetable brush to clean fruits or vegetables with thick skins, like squash.

Measure ingredients. It’ll help your parents while also making you more familiar with different measuring cups and utensils.

Stir, mix or sift. Combining ingredients or sifting flour for a recipe will help adults move on to the next step or start a different dish.

Offer to decorate. Once the meal is almost ready to be served, sprinkle dishes with spices or fresh herbs and top desserts with fresh fruit. Garnishing your dishes can add extra flavor and make food look as great as it’s going to taste.

Set and clear the table. Getting everything on and off the table for a big holiday meal is no easy task – offer to help and cut the time in half! And when the meal’s complete, don’t forget dish duty! Washing or drying can cut down on cleanup time, leaving more time for family, friends and fun.

smart snacks for the holidaysChoosing nutritious snacks is just as important as eating a balanced breakfast, lunch and dinner.

But sweet snacks – especially heavy holiday treats – may not always be the best between-meal choice. For a twist on everyone’s favorite marshmallow treats, try our super-satisfying peanut butter squares. Ask if you can bring a batch to your next holiday party!

3/4 cup chunky peanut butter3/4 cup honey6 cups Crispy Rice Cereal1/2 cup chopped dried cherries, cranberries or raisins Cooking spray

1. Combine peanut butter and honey in a large pot; cook over

medium-low heat until peanut butter and honey are melted

(about 2–3 minutes).2. Add cereal and dried fruit to the

mixture; stir until sticky.3. Press into a 9 x 13-inch pan

coated with cooking spray.4. Chill in refrigerator 40 minutes. Cut into squares and serve.

Makes 20 servings, 1 square each (2.5 inches)

Prep Time: 10 minutes + 40 minutes refrigeration time

the festival of lightsChanukah is a Jewish celebration. Over 2,000 years ago, the Jews fought for the right to worship freely, and when they finally did, they lit an oil lamp that burned for eight days when it only had enough oil to burn for one. This is known as the Miracle of the Oil, and it’s the reason why Chanukah lasts for eight days. Do you or your friends celebrate Chanukah? Below are a few Chanukah traditions.

Playing dreidel a game that includes spinning a four-sided top to win coins (or chocolate coins).

Lighting the menorah: a special holiday candleholder that holds eight candles (plus 1 for lighting.)

Giving gifts: many kids get eight presents – one for each night of the holiday.

Holiday meal: gathering with family for foods like brisket, kugel and latkes.

1 20 oz. bag frozen shredded potatoes1 medium sweet onion, diced (about 1 cup)2 eggs, beaten3 Tablespoons flour1 teaspoon black pepper1/4 teaspoon salt

1 Tablespoon dried (or 2 Tablespoons fresh) parsleyApprox. 1/8 cup vegetable oil to coat pansApplesauce and sour cream or Greek yogurt for topping (Try our applesauce recipe on page 9!)

1. Defrost potatoes and pat with paper towels until dry. 2. Preheat oven to 425˚F. 3. Line 2 baking sheets with foil and coat pans with a thin layer of oil. 4. Combine potatoes with onion, eggs, flour, pepper, salt and parsley. Mix gently with a fork until well combined. 5. Scoop mixture into 12 latkes on each baking sheet; flatten with fork. 6. Bake until golden crisp, about 10–12 minutes. Flip each latke, and continue to bake until

golden, about 8–10 minutes. Serve with desired toppings.

Makes 8 servings, 3 latkes each • Prep Time: 20 minutes • Cook Time: 22 minutes

1. In a saucepan, combine chopped apples, water and cinnamon. 2. Cover, and cook over medium heat for 15–20 minutes, or until apples are soft. 3. Allow to cool, then mash with a fork or potato masher.

1. Line a baking sheet with aluminum foil, spray with non-stick cooking spray and set aside.

2. In a medium bowl, combine the turkey, stuffing, eggs, green beans (or other vegetable), celery, cheese and pepper.

3. Use your hands to combine the mixture and form it into patties, about the size of the palm of your hand. If the mixture is too dry, add a little chicken broth, 1 teaspoon at a time, to get it to hold together.

4. Place patties on prepared baking sheet about an inch apart.

5. Turn oven to broil setting and place baking sheet on the middle rack.

6. Broil croquettes for 3–5 minutes on each side, or until they are slightly browned and crisp.

7. Serve each with 1 Tablespoon of leftover cranberry sauce and gravy (optional).
