For owner Gina Von Ah, three things make La Estrellita stand apart from other Mexican restaurants.

We always advertise that our green chile is the best in Brigh-ton, and so is our service and margaritas, she said. Our sta works really hard to be the best and (winning Best Mexican Restaurant) is quite an accomplishment.

e Montoya family operated the rst La Estrellita in Fort Lupton from 1955 through 1968. In 1986 their son John Mon-toya opened the Brighton restaurant. Von Ah is John Montoyas daughter.

Were all a big family here and our customers have become a part of that family, she said. She added that most of her em-ployees have been there for ve years or longer.

Customers generally praise the restaurant for its green chile. Its the most avorful on the market, Von Ah said. It actually has pork in it in other restaurants you have to search for it. e restaurants green chile and salsa are available for sale online at www.laestrellitasalsa.com.

e restaurant started bottling its salsa and o ering it for sale in 1995 due to an enormous demand from customers. e res-taurant promotes its salsa, green vegetarian chile and enchilada sauce as being 100-percent natural and made in Brighton.

e restaurant o ers catering services around the Denver metro area and can host parties from 10 to 100 people.

Since opening its doors in August of 2013, Castle Rock Adventist Hospital has provided emergency and outpatient care for a community that otherwise wouldnt have it.

Among other services, Castle Rock Adventists provides 24/7 Emergency Services, Level III Trauma Center, Labor & Delivery, Level II NICU, Orthopedics, Critical Care Servic-es (ICU), Cardiac Services, pediatrics and medical imaging.

Prior to us coming, any member of the community had to basically leave the community in order to get those ser-vices. Now theyre able to get all of those things right here in the community, Chief Executive Offi cer Todd Folkenberg said. We already have numerous examples of people in the community whose lives we saved, that, you never know for sure, but had they have had to be transported an additional 20 or 30 minutes up the road may not have had those same positive outcomes.

Castle Rock Adventist currently has 50 beds but has its eye toward expansion as the community grows.

I think theres been a signifi cant economic impact to the community as well. We have hired over 450 people here in Castle Rock, he said.

Folkenberg said womens health and the birthing center are areas where they expect to expand services in the near future.

LostCoffee finds home in Castle Rock By Mike DiFerdinando

In 2010, friends John Paulsen and Scott Garrity made their dream of owning their own co ee company a reality when they created LostCo ee and began selling it around the Denver Metro area in their food truck, Brewtus.

Brewtus serves custom espresso beverages, blended cof-fee Frappes and fruit smoothies.

We were really one of the rst co ee trucks, Paulsen said. We were one of the rst full on espresso bar-type cof-fee trucks in Denver, if not the country.

Since then, they have opened two traditional co ee shop locations, one at 390 Perry Street and one at 3980 Limelight Ave, in Castle Rock.

LostCo ee specializes in combining the convenience and consistency of a large chain co ee shop with a small-shop, artisan approach. According to the company, LostCo ee combines speed with quality and convenience and friend-ship.

We knew all along that the idea was to generate enough revenue with the tuck and with our brand to grow into stores, he said. Scott and I have always told each other, its ve stores in ve years. Were both ambitious enough to know that were building a co ee company not a co ee shop, where our wives and us will work behind the counter and stu like that. Were building a business.

LostCo ee has designs on opening three more stores in the near future. Paulsen said they are interested in Parker and Lone Tree as possible locations. ey also havent ruled out expanding into Denver but said the location would be a key factor on where and when a move into the city happens.

John Stebbins was treating an overweight man with a pack of cigarettes in his pock-et for a heart attack while he was a paramedic for the Chi-cago Fire Department.

As a paramedic I worked in the ghettos of Chicago, recalled Stebbins. We had 18 to 20 ambulance runs in a 24-

hour shi . I was in my early 20s, so I wasnt taking care of myself and I got burned out.

Stebbins moved to California with a desire to some way stay in medicine and eventually was introduced to acupunc-ture and Chinese medicine.

At the time I was very disillusioned with Western medi-cine, said Stebbins. About halfway through my training in Oriental medicine, I realized the key philosophical element in Oriental medicine is balance. at was the day I realized theres a place for Western, theres a place for alternative and we should be working together.

Stebbins is a doctor of Oriental Medicine and a National Board Certi ed acupuncturist. Hes been a licensed acupunc-turist since 1987 and owns the thriving Natural Balance Well-ness Center in Centennial.

Patients are o ered several services including traditional acupuncture, sports injury acupuncture, asyna advanced electro-dermal screening, bioSet natural allergy reduction therapy and BAX 3000 laser allergy reduction therapy.

If somebody has a health problem, they should look at some of the natural things that can be done and then if that doesnt work they can go to the pharmaceuticals, surgeries and things like that, said Stebbins. Sometimes those are necessary.

e bottom line is we want to help people. My philosophy is to try to do it in as few treatments as possible. We do use herbs and vitamins and things like that but we do try to get things done as fast as possible, but the body is limited.

Branch manager Mackenzie Roberts said that while Fri-day is the busiest day at Arapahoe Credit Unions Engle-wood o ce there is always time for the tellers to chat with customers.

I am proud to be part of Arapahoe Credit Union be-cause the organization is committed to provide service to its members and to the community, she said.

e organization was chartered as a credit union in Arap-ahoe County in 1937 to provide nancial services for school district employees. Over the years, the focus has shi ed and now Arapahoe Credit Union o ers its services to anyone working, living or going to school in Arapahoe County.

ere have been a variety of locations, including an of- ce in Englewood until 2007. at o ce closed but a new o ce reopened in 2009 when the organization reorganized the former bicycle shop at 303 E. Hampden Ave. into its branch o ce. Roberts, who has worked in credit unions for 15 years, was brought in to be the manager and open the new Englewood branch.

Our credit union members tend to be teachers, hospital employees and other Arapahoe County residents, Roberts said. We have 10 employees here in our branch. Our focus is to provide the best service we can to all our members.

Arapahoe Credit Union also has a branch at 3999 E. Arapahoe Road, Centennial. at branch o ers lobby ser-vices plus there is service for members who use the drive-through.
