‘Om Swastiastu...’

Another year has passed and here we are at our 15th

anniversary! It can be fun to reminisce about the years

that have passed, like back to the time that Bali & Beyond

was still in tabloid form, or how the island used to be

when the magazine fi rst started compared to how it

is now. However, we’ve decided not to do too much

reminiscing this year and instead we want to focus on

celebrating the now.

So check out a lighthearted piece we prepared titled

‘Fun Fifteen’ where we asked 15 people around the

island 15 questions that are all related to the number 15!

Our colorful Beyond Bali piece about the annual carnival

in Jember is sure to get you in a festive mood. As for Rest

& Relaxation, this time we decided to cover the W Resort

& Spa Bali because they always have great parties. If

you’re already familiar with their rooms then you’ll want

to check out this article to see their villas – the design is

completely different but of course still has that signature

W touch. It’s a surprisingly peaceful area where you can

rest your head after an eventful night out.

And to change things up, we’ve decided to teach you

a fun workout in Action & Attraction this month. Follow

our contributor’s 10-step workout to burn off those extra

calories from partying it up during the months ahead!

We hope you enjoy this edition and we thank you so

much for continuing to support and read our magazine.

We’re eager to work on some new ideas for the coming

The Green School in Abiansemal recently announced the three winners of their

global “Greenest Student on Earth” competition. After careful selection based on

eco-inspired video entries, Kashius Ford (4th grade - USA), Liva Adelstorp (5th

grade - Indonesia) and Achyuth Jaigopal (11th grade - India) were chosen to receive

one-year scholarships at The Green School. The school also congratulated their fi rst

batch of high school graduates on June 19. The graduating class received video

and written messages from some of the world’s top environmental leaders – Al Gore,

Jane Goodall, Richard Branson, Bill McKibben, Bob Brown and Daryl Hannah,

among others, urged the graduates to follow their dreams and pave the way to a

GREEN WINNERS

Billabong’s “GO BLUE – SAVE THE

CORAL REEF” campaign has succeeded

in planting 577 coral reefs in Tanjung

Kotal, West Bali. The campaign started in

April of this year and aims to support the

conservation of ocean life by encouraging

Billabong’s customers to adopt as well

as replant the coral reefs. Studies by the

Indonesian Institute of Sciences (LIPI) show

that over 70% of Indonesia’s coral reefs

have been damaged, so this initiative is a

(3 p.m.) are the Legian and Seminyak

beach breaks. It’s fun, relaxed, and

there’s a lot of good scenery and plenty

of food/drinks too. If there is the right

swell, Padang-Padang is the most epic

afternoon surf spot. There are big green

M E L A J A H B A S A B A L IA SHORT INTRODUCTION TO THE BALINESE LANGUAGE

Here in Bali, people speak “Basa Bali” (Balinese)

as their mother tongue. Indonesian and English

are widely understood and you’ll also fi nd

people in the tourism industry who have a handle on

languages like Mandarin and Russian, but Basa Bali

reigns supreme when it comes to casual interactions on

the island. Learning Basa Bali doesn’t have to be diffi cult,

so why not try to get a few phrases under your belt for a

more colorful experience while you are here?

THREE LEVELS

There are three levels of Basa Bali, depending on who

you are addressing. Basa Bali Alus is the highest level

of Balinese reserved for formal situations and for those

who are highly respected (parents, employers, people

with higher caste). Basa Bali Madya is the middle level

of Balinese that is used for day-to-day interaction with

friends and family. Basa Bali Kasar is the lowest level

used to express anger or used with close friends, as it

can be considered rude in certain situations.

PRONOUNCIATION

Now that you know that there are three levels, don’t let

this discourage you. We’re not aiming for perfection,

just a few basic skills. Here’s a simple guide to

pronunciation:

• Balinese is pronounced not too differently than other

Malay-infl uenced languages. For example “tiang”, which

means “I”, is pronounced tea-young

• The stress should be put on the last syllable. So if you

were to say “Basa Bali” you would put the stress on sa

and li

• The most common vowel in Basa Bali is “a” but it is

also the most diffi cult because there are many ways to

pronounce it. For example:

• natah (yard) is similar to “a” in “rather”

• apa (what) is similar to “o” in “how”

• jelema (human) is similar to “i” in bird

• Pronouncing “e” in Basa Bali is similar to “i” in bird

• Pronouncing “ng” in Basa Bali is similar to “ng” in “mingle”

SENTENCE STRUCTURE

The sentence structure is identical to Indonesian, for

example:

• “Tiang ngajeng nasi” (I’m eating rice) issubject-verb-

object

• “umah ageng” (big house) is noun-adjective

• “kereng megae” (working hard) is adverb-verb

FUN TIPS

• Instead of saying good morning or good afternoon,

“Om Swastiastu” is the common expression used. To end

a conversation or to say goodbye, you can say “tiang

mepamit” (I have to leave).

• When giving directions, the Balinese rarely use left and

right. Instead, they will use north, south, east and west to

direct you to where you are trying to go.

• The Balinese name their children based on their order of

birth. The fi rst child is named Wayan, Iluh, Gede or Putu;

the second is Made, Kadek or Nengah; the third Nyoman

or Komang and the fourth Ketut. So if your name is John Doe

and you are the fi rst child in your family, your Balinese name

would be “Gede John Doe.”

The spices, the waves, the

weather, the smiles… as

an international chef, is it

even possible to need any

more reasons to stop by

Bali during a foray into Asia? This

is perhaps why so many talented

folks pass trough the island looking

for cooking inspiration. Some come

and go while others decide to stay

awhile, and among those who have

stayed to contribute to the constantly

evolving culinary landscape of Bali

are the four men that came together

on May 22, 2013 to host an epic

dinner at the Mozaic Beach Club.

FOUR CHEFSThe inaugural Four Chefs And A

Feast dinner brought together four

renowned chefs in Bali – Chef

Will Meyrick of Sarong, Chef

Chris Salans of Mozaic, Chef Phil

Davenport of Ku De Ta and Chef

Nicolas ‘Doudou’ Tourneville of

Metis. For months they prepared,

meeting to discuss everything from

the packaging of the event down to

the details of each specifi c course.

The four men are used to being

at the helm of their own kitchens,

so it is interesting that they chose

to showcase live behind-the-scenes

footage from the kitchen. Elbow-to-

elbow in the kitchen space, every

single facial expression was open to

being caught on camera. As for the

menu, Chef Davenport mentioned

that although they had initially

planned to present dishes heavily

infl uenced by Indonesian cuisine,

their ideas took them in a different

direction. What they ended up with

are four exquisite courses infl uenced

by the cuisine of several Asian

countries.

FOUR COURSESThe fi rst course came from Chef

Tourneville – a beautiful Seared

Poached Foie Gras served with an

aromatic chicken dashi broth, red

radish, white Shimeji mushrooms

and fresh seaweed. The combination

of East meets West in this dish was

extraordinary, with the dashi broth

smelling and tasting so authentically

Japanese and the seared foie gras

matching the broth’s fl avor in a

surprisingly beautiful way.

The next course was a Southern

Goan Curry with barramundi,

mustard seeds, sambar powder,

coconut milk and curry leaves from

Chef Meyrick. The fi ery Indian

fl avors would have woken up any

guest that might have been feeling

sluggish after several glasses of

wine. Luckily for those who couldn’t

take the heat, the curry was served

with plentiful amounts of pilaf rice

served in bowls to be passed around

the tables.

For the third course, Chef

Davenport served up Slow Cooked

Lamb Shoulder with urab salad,

smoked potato mash, rendang jus

and tendon crisp. The lamb was

braised for 10 hours and as a result

was incredibly tender. As for the

urab salad, many diners praised the

authentic fl avor and texture of the

well-loved Indonesian salad.

Last but not least was the dessert

prepared by Chef Salans. The Lemon

Basil Mousse was served with a

reduction of fresh pomegranate

juice, whole pomegranate seeds,

baby lemon and basil leaves, a

cocoa crisp and a scoop of turmeric

root sorbet. The local ingredients

really shone through beautifully, the

seeds provided some great texture

and the fl avor combinations were

surprising yet balanced and made

for a refreshing end to the meal.

CANDID MOMENTSAlthough a good kerfuffl e or

argument can almost always make

for interesting TV, it felt reassuring

that this didn’t happen on the night

of the dinner. Seeing the four chefs

work together was heartwarming,

and witnessing candid moments like

the wiping of sweat off foreheads

or a startled expression when one

of them found themselves face to

face with a camera was really

entertaining in itself!

After each course was served,

the chefs made their rounds in the

dining room and took time to mingle

with the guests. Lots of hand-shaking

and smiles were exchanged and

everyone looked to be in high spirits

despite the pouring rain. Afterwards,

the chefs thanked their very talented

teams of Indonesian chefs for

helping to make the event happen

as well as their families for being so

patient with them as they prepared

for this very important night. Then

the four men shed their chef jackets

and joined the guests to celebrate

with some well-earned drinks and

a bit of dancing to the sounds of

live DJs.

imbaran Bay has been known

for decades as the go-to

destination for those in search

of fresh grilled seafood, a table

on the sand and a nice sunset

view. While the simple shacks and

smoky barbeques are alluring in

their own right, those in search of

a bit more glitz and glam are often

left wanting. This is why the opening

of Sundara restaurant by the Four

Seasons Resort Bali is a welcome

addition to the area.

BEACHFRONT GEMThe word Sundara means “beautiful”

in Sanskrit and the restaurant

defi nitely does the name justice. On

the patio you can sink into the sturdy

furniture and gaze out past the lap

pool at the curved bay, from lunch

until late at night. Indoors you will

fi nd that the décor is dominated by

browns and greys, a surprisingly

dark color palate for a beachside

retreat, but somehow it still manages

to work. You might get the feeling

of being in a friend’s beautiful

beachside mansion – the heavy,

long dining tables are perfect for

elaborate food spreads to be shared

family-style. It is sophisticated yet

homey, and the food and cocktails

are nothing short of divine.

HEARTY GOODNESSExecutive Chef Greg Bundt’s menu

items are simple, but there is much

beauty in their simplicity. You won’t

fi nd strange fl avor combinations that

leave you puzzled, or dishes with

so much going on that it starts to

feel overwhelming. What you will

fi nd are fl avor combinations that go

together just perfectly!

Menu highlights include the

rack of lamb, the rib-eye steak and

the lemon linguine with herbs and

snapper, not to mention the sides

like baby beets with goat cheese

and thyme and the fresh bread that

comes straight out of the oven and

right to your table. Many of their

ingredients come from gardens

planted in the Bedugul area, which

the chef always makes time to visit.

Another lovely thing about

Sundara is the open kitchen, where

customers can watch the kitchen

team in action. The kitchen also has

a great view of the bay – a view

that Chef Bundt has said is always

tempting him to drop what he is

doing and grab his surfboard.

SIPPING PRETTYA term popularly used by Indonesians

these days is “minum-minum cantik,”

which literally means, “drinking

pretty.” Outside of the Seminyak

area, looking for delicious cocktails to

sip on while sitting pretty used to be

challenging, but Sundara’s cocktails

as designed by Javier De Las Muelas

of DRY MARTINI in Barcelona

will defi nitely fi t the bill. Light and

glass’ worth of frozen lime slush

and gin. It can be enjoyed as is or

stirred slowly (and sensually – as

Javier recommended during a recent

visit to Bali) for a slightly different

fl avor.

This is an example of how a

drink can change, something that

Javier described as very important

refreshing, the fl avors are interesting

yet balanced and the cocktail menu is

so extensive that it is hard to decide

where to start.

You can fi nd refreshing

concoctions like the Smoked Red

Berries or Tea Time cocktail and

sultry options like the Thousand

Nights cocktail, which consists of

star anise, passion fruit, lime juice,

green cardamom, and dark rum

topped with a dash of saffron.

Another must-try is the Jim-let Fox-

trot. The drink has lime juice and

tonic water topped off with half a

to him. One of his philosophies is

to always change and evolve while

staying true to oneself, much like

the artist Madonna. Aside from the

Jim-let, Javier also recommends the

pitchers, as not only are they good

for sharing but they also help to

keep the drinks cooler for longer in

the balmy, tropical air.

I felt so relaxed during this

My session took place in one

of the two special rooms designed

specifi cally for this treatment. As I sat

on the manicure-pedicure chair, the

treatment began with the clipping

of my fi nger nails and cuticles and

pumicing of my heels. Afterwards

came an excellent hand and feet

scrubbing using a special concoction

of coconut oil and scrub cream,

which helped to clean all the dirt from

my pores and peel away dead skin.

My feet were then immersed in a

small jet pool of warm water while

my hands were wrapped in heated

Paraffi n wax – a special aromatic

gelatinous wax that improves blood

circulation, releases tension and

moisturizes the skin. I chatted away

with the warm and friendly staff while

my hands and feet got the best one

hour pampering they have ever had.

I hadn’t realized the kind of

battering my hands and feet were

getting from being in the sun every

day and wearing fl ip fl ops so

often. Reméde Spa’s manicure and

pedicure is something I think any

man would benefi t from, especially

those who have been in and out of

the sea or at the beach a lot during

their stay in Bali.

you’ll come face to face with the

bed. Placed in the center of the

room, it is accented with fl uffy green

throw pillows of an interesting

texture. To the right you’ll fi nd a

cozy sitting area and behind the

bed, a workspace with a desk

and high speed Internet that faces

a wall planted with orchids. The

bathroom and dressing room are

extra spacious and the oversized

bathtub equipped with bath salts will

beckon you to take a relaxing soak

while admiring your pretty pool and

garden area through the window.

We loved the body products by bliss

(made specifi cally for the W) as

well as the toiletries wrapped with

cute quotes like “Who’s got pearly

whites?” (toothbrush) and “When it

Nowadays there are less and

less beach shacks to be found. But

something interesting to note is

that they have infl uenced a trend

in architecture. If you head to the

Bukit Peninsula on the southernmost

point of Bali, where some of

the best beaches lie, you’ll fi nd

modern beach clubs inspired by the

traditional beach shacks. Beyond

Bali, for example at Gili Trawangan

island, you can also fi nd modern

beach shacks that serve as luxury

accommodation for travelers.

Decorated in vibrant colors with

high ceilings and a fancy bar

set-up, this new design concept

has taken the old beach shack

style to the next level. However, I

must admit that I really miss the old

beach shacks and the honesty and

simplicity of it all. Additionally, the

sleek new hangouts bring some

questions to mind: Will today’s

beach bars still welcome the same

crowd? Or will the budget travelers

be left without a place to lay low,

relax and be themselves?

Beach shack architecture is

wonderful because it enables the

structure to blend seamlessly into its

ropes, dry vegetation for thatching,

and bamboo or wood to hold the

structure up, beach shacks show

The last thing any of us

want to do while on

holiday is to break a

sweat. But even just a short

workout will help keep you

energized throughout the day while

fi ghting off that dreaded fat as you

eat a little more than you normally

would during your Bali holiday.

You don’t need access to a fancy

gym – just pop down to a local

market or ask your hotel staff for a

fresh young coconut, then follow this

simple 10-step workout for a leaner,

toner and fi tter you.

Each movement must be done

8 - 12 times and the entire workout

is to be repeated 3 times. This

workout will last 15 - 20 minutes. It

is important to note that to get the

absolute best effect you cannot have

breaks in between the exercises.

When you fi nish exercise 1, you

must immediately do exercise 2. The

trick is intensity and not allowing the

muscles to rest during the workout.

Breathe in on the way down,

breathe out on the way up. Repeat

this workout 3 times a week for the

best results.

1. COCONUT SQUATSThis exercise works out your legs

and shoulders at the same time

• Stand with your feet shoulder

width apart, then keep your back

straight and head up looking

forward. Hold the coconut at your

chest with your elbows bent.

• From here, squat down to 90

degrees (or less if it’s too hard for

you in the beginning). As you squat

down, raise the coconut as high as

you can over your shoulders. Make

sure you keep your back straight

throughout the movement and your

core (stomach area) tight.

• Bring your body back to standing

position and lower the coconut back

to chest level.

• Keep your back straight and look

straight in front of you. Make sure

your core is tight. Hold the coconut

in your hands with your arms

straight, hanging down.

• Keeping your legs straight raise

them up towards the sky and while

at the same time trying to reach your

toes with the coconut.

• Return your upper body to the

starting position. Don’t allow your

body to fall back down but control

the movement and repeat.

6. PULLOVER COCONUTTones and strengthens your back

• Lie fl at on your back with your

knees bent. Your head, back and

feet should all be in contact with

the fl oor. Hold the coconut in your

hands directly above your chest,

keeping your elbows slightly bent.

• From here, lower the coconut

behind your head, almost touching

the fl oor. Keep your elbows slightly

bent all the time and make sure the

rest of your body remains in the

position outlined above.

• Return coconut to the starting

position and repeat.

7. TOE TOUCH ABS• Lie down fl at on the fl oor and hold

the coconut in your hands, placing it

on your tummy.

• Keeping your left leg straight, step

out to the side with your right leg,

bending at the right knee. At the

same time, raise the coconut in front

of you to your shoulder level.

• Bring it back to the starting

position by lowering the coconut and

straightening your right leg, standing

up straight. Repeat the movement but

now with your left leg. Do 4-6 reps

on each leg (8-12 altogether)

8. TRICEPS OVER HEADTone up those underarms to give you

a leaner look

• Stand with your feet shoulder

width apart. Keep your back

straight, your core tight and your

head looking forward. Hold the

coconut behind your head with your

elbows bent.

• Raise the coconut up all the way

over your head and lock your arms

out fully if you can. The trick here is

to always ensure your elbows are

locked in the same position, close to

your head at all times.

• Lower the coconut behind your

head keeping your elbows locked

and controlling the movement on the

way down.

9. RUSSIAN TWISTExcellent way to tighten up your

core. Breathe in when you twist to

the left, breathe out when you twist

to the right.

• Lie down fl at on the fl oor and

bend your knees with your feet

slightly off the fl oor. At the same

time lift your back so your body is

in a ‘V’ position. Keep your head

straight looking forward and hold

the coconut in front of you at chest

level.

• From here twist your waist to the

left and then twist to the right. All

the time maintaining the position

outlined above.

10. COCONUT DEADLIFTExcellent for posture and trains your

lower back and hamstrings at the

same time

• Stand with your feet shoulder

width apart, keep your back straight

and your head up, looking forward.

• From there, bend down lowering

the coconut just in front of you but

keeping your knees slightly bent. Be

careful to not arch your back. You

will feel the pull on back of your legs

and your lower back.

• Bring your body back up,

straightening your knees and

returning to the starting position.

Don’t rush too much with this

exercise!

Don’t worry if you can’t get 8-12

reps in for each exercise. The main

thing is to do each exercise correctly

without breaks and don’t be afraid

to allow the muscle to burn. The fi rst

few times you do this program it

may take longer than normal as you

become familiar with the exercises.

But stick with it and you will truly feel

the benefi ts of this 10-Step All-Body

Workout in less than 20 minutes for

3 times a week. Do it by the pool,

in your villa, on the beach, in the

rice fi elds or anywhere that inspires

you to get into shape. The best thing

about this exercise is that you’ll be

able to enjoy the fruit afterwards!

up in striking costumes. This is not

a scene from a carnival in Rio de

Janeiro that I’m describing. It is

actually what Jember looks like

during the Jember Fashion Carnaval

(JFC).

It was almost 12 years ago that

they fi rst introduced the carnival. As

a local, I can safely say that back

then it wasn’t as spectacular as it is

today, but it was very festive for a

town as small as Jember. Dynand

Fariz, the man behind the JFC, fi rst

held the carnival without any support

from the local government or private

companies, but it has impressively

managed to grow into the world’s

4th biggest carnival event attended

by thousands from around the globe.

When I graduated from high

school I moved to Surabaya and

was surprised to see the buzz on

social media about the JFC. I never

imagined that JFC would grow to be

such a major event. When one of my

friends decided to join the carnival

as one of the artists last year, I

took the opportunity to go back to

my hometown and see the 11th

annual JFC.

One of the fi rst things I saw

was 600 artists walking along

the 4 km catwalk located right in

the heart of the town, all dressed

up in beautiful and dazzling

handmade costumes. Every year

the event has a theme, and last

year’s was ‘Extremeagination’ with

10 categories of costumes; Roman

Empire, Madurese, Oceanarium,

Persians, Orchiaceae, Savana,

Mushroom, Dragon, Trinidad &

Tobago, and Planet Heredity.

Trinidad & Tobago is the

category that I believe deserves a

special note. As participants came

out on the street dancing to the

music, they were utterly engaging

with their fantastic costumes and

huge wings adorned with thousands

of brightly colored feathers. They

were able to lure everyone into

joining in and dancing.

In my personal opinion I

think that the carnival has really

progressed over the years.

Everything seemed to go smoothly

and the organizers managed to

keep everything in order. The city

itself has grown from it and slowly

but surely there have been more and

more hotels popping up as well as

more places to hang out. One can

even say that the JFC has single

handedly brought many positive

changes to this little town.

As the popularity of the carnival

continues to grow, the Jember

Fashion Carnaval will return

this year for three full days from

August 23 to 25 with the theme

‘Artechsion.’ The new costume

SOUTHERN BEACHESDuring your stay in Jember, you

should take some time to visit the

southern beaches. The Payangan

and Papuma beaches are located

about 40 km away from town, and

you will pass magnifi cent views of

tobacco fi elds and teak plantations

along the way. Jember is renowned

for their tobacco production and

even the batik prints from this area

have hints of tobacco-inspired motifs

in them.

Pasir Putih Malikan Beach, or

what the locals like to call Papuma

beach, is really popular with tourists.

With expansive coral reefs and

white sand, the place is perfect for

catching the sunrise and watching

the fi shermen head out to sea.

Just a 10-minute ride from

Papuma you will fi nd Payangan

Beach. It’s a beautiful hilly seafront

with a busy morning fi sh market

where fi shermen sell their fresh

catch of the day. I also recommend

climbing up to the top of Semboja

Hill to catch a glimpse of Nusa

Barung, which is a no-visitor

conservation island.

FROM BALI WITH FUNLast June, Surfer Girl held its

largest event to date outside Bali

at the Grand City Mall Surabaya,

with the main atrium transformed

into a colorful tropical oasis. The

month-long event was packed

During the months of May and June a photography exhibition titled “Moeka

Djakarta” (meaning the “Face of Jakarta”) showcased different corners of the capital

as captured by three young and talented photographers; Nicholas Hilman, Nicholas

Raditya Santoso, and William Tan. Held at the Four Seasons Hotel Jakarta, the

show was curated by the renowned photographer Martin Westlake. On June 4, a

celebration for the exhibition was held in conjunction to Jakarta’s 486th anniversary.

The celebration also marked the launching of the namesake book – a compilation of

the photographs displayed in the show. The book is now available for purchase at

and 10 elderly folks had on-site cataract surgeries. The next

day the team visited two elementary schools and examined

Call an ambulance by dialing 118, but it is a lot

more practical and quicker to hire a taxi. Most

hotels have on-call doctors on standby. For “Bali

Belly”, Lomotil and Imodium eliminate symptoms,

but not gastro-related infections. A fever along

with symptoms requires doctor-prescribed

antibiotics.

Drink as much liquid as possible. Isotonic

drinks under various brand names are widely

available and are known to replenish body

hydration and replace fl uids. For discomfort,

diarrhea and cramping, drink strong, hot tea;

avoid fruits and spicy foods.

Some day-biting mosquitoes carry dengue

fever, but this is not a problem in tourist areas.

Bali is non-malarial and prophylaxis is not

required. Mosquito bites, cuts or abrasions

easily become infected in the tropics. Treat them

immediately.

Drink only bottled or boiled water. Peel fruit

before eating; avoid raw vegetables except at

reputable restaurants. Ice in restaurants is safe.

Protect yourself from the intense equatorial sun.

Use high SPF sunblock and a hat.

AIDS and sexually transmitted diseases

are increasing in Indonesia. Local sex workers

have multiple partners from around the world.

They are not checked for sexually transmitted

diseases. Act responsibly and use condoms,

available over the counter at pharmacies.
