city of Cairns! Cairns is the jewel in the crown of Australia’s natural attractions and what better place to hold this year’s Australian Grand Chapitre?

Nestled on the coast of Far North Queensland, Cairns is surrounded by the Great Barrier Reef in the Coral Sea, the lush tropics of the rainforest, and the rolling hills of the Atherton Tableland. It is one of the few places in the world where the ‘reef ’ meets the ‘rainforest’, a site not to be missed! Cairns is an international mecca and is home to people from all corners of the world. It is renowned for its tourism attractions like the reef and rainforest and is a haven for art lovers everywhere. There is something here for everyone to enjoy … adrenaline-charged adventures like diving and white water rafting or more gentle pursuits like bird watching, hiking or just sitting under a palm tree with friends sipping a cocktail (my idea of fun!). All this as a backdrop for four fun-filled days of Chaine excitement where we’ll share pleasurable culinary and gastronomic experiences all within a circle of friends, both old and new. A true Chaine experience!

Much excitement surrounds this Grand Chapitre and we look forward to welcoming you to our tropical paradise where we can all share in the ‘art of cuisine and the culture of the table’.

On arrival at Red Peak Station you will be greeted by Rangers who will provide you with a personal guided boardwalk tour, sharing their knowledge on these ancient tropical forests among giant buttress roots, ancient Kauri Pines and climbing wait-a-while palms. Red Peak Station has touch tables and

displays on rainforest flora and fauna and you will also have the opportunity to take photographs while immersing yourself in the still of the rainforest.

Enjoy your time at Red Peak with a welcoming glass of champagne and take in the rainforest at twilight before departing for Caravonica Lakes Terminal where canapés and additional drinks will be served.

Experience the vibrant visual arts of Tropical North Queensland in this elegant heritage building in the heart of Cairns. Construction of the former Public Curators Building was completed in 1936 – a

stately, two-story building of brick and stone. In 1995, the building was renovated and re-opened as the Cairns Regional Gallery.

Cairns Regional Gallery hosts exhibitions of fine arts, to major Australian and international collections covering historical and contemporary art including the work of Aboriginal and Torres Strait Islander artists.

Visitors to the gallery can also witness the creativity of local artists living and working in one of Queensland’s most dynamic regional arts communities. The gallery exhibits the work of artists based throughout the Tropical North.

We’ll meet at the gallery lobby at 11am for a welcome glass of champagne. We then join an informative guided tour of the Cairns Regional Gallery. Currently, the exhibitions scheduled for this time include a photographic exhibition by Australian artist Tim Storrier and an exhibition curated from the gallery’s collection.

RUSTY’S marketRusty’s Market has, over 30 years, developed into

one of the largest, most successful and best-known markets in Australia and overseas.

From an insignificant beginning of some six stall holders, Rusty’s has grown into an enormous, three-day event with more than 180 stall holders. It has become renowned for its carnival atmosphere, colourful stall holders, sumptuous displays of exotic fruit, vegetables, exotic flowers, bric-a-brac, delicatessens, specialty products

and an excellent selection of food and beverage stalls.Rusty’s is named after the late Emrys ‘Rusty’ Rees who

developed and expanded the market into the mega event it is today. The new owner, Gilligan’s Backpacker Hotel and Resort, has faithfully carried on the tradition and Rusty’s continues to offer its weekly delights to shoppers and tourists alike.

Craig Squire, renowned Australian chef and owner of Ochre Restaurant, aims to provide visitors

with the previously ‘missing link’ in the Australian experience … FOOD.

Start Time 10:00 amChef Craig Squire will meet you at Rusty’s Market and guide you around a Cairns institution! Delight in the range of produce, sample fresh coconut or sugar cane juice, tour the stalls and meet the characters. You’ll also have the chance to try some of the local produce including some fantastic Gallo cheeses and have an opportunity to purchase from the local stalls throughout the tour.

11:00 amAfter your Rusty’s tour, chef Craig will take you for a short stroll to his restaurant Ochre. You’ll be guided through a history of bush tucker as you sample a variety of native spices and fruits, explaining their tastes, origins, commercial and traditional uses, for example, quandongs, lilly pilli,

Kakadu Plum, bush tomato and wattle seed. During this interactive tutorial you will be provided with a bush food glossary and menu to keep. You’ll then be escorted to the Ochre kitchen where chef will demonstrate how to prepare, cook and present three dishes which can be produced in the home using some of the products purchased from Rusty’s. Questions will be answered by Chef and you’ll also have the opportunity to get ‘hands-on’ for a real learning experience. Dishes such as sugar cane prawn sticks, salt and pepper leaf crocodile and wattle seed pavlova may be demonstrated. Recipes are included.

12:00 pmYou’ll then sit down to a three-course lunch which is generally based on the food prepared during the demonstration so you can enjoy what you’ve learned.

Approx. 2:00 pmYou’ll be presented with a gift of Ochre Dukka and are free to purchase further Red Ochre products prior to your departure.

Chef Leon Walker has been featured on CNN travel show Hot-Spot and The Lifestyle Channel (USA) and brings his

unique creativity and passion for fine cuisine and international culinary techniques to his restaurant Wink II in Cairns.

Start time 10:00 amChef Leon will meet you at Rusty’s Market, provide you with the history of the market and take you on a sensory journey that returns you to sources of pleasure you may have forgotten, and allows you to explore new flavours and dishes never before sampled. You’ll have the opportunity to purchase from Rusty’s throughout the tour.

11:00 am After your Rusty’s tour, chef Leon will take you for a short stroll to his restaurant, Wink II. On the way, you’ll have the opportunity to check out the local surrounds of the city.

You’ll then be escorted to the Wink II kitchen where chef will prepare, cook and present three dishes which can be produced in the home using some of the products purchased from Rusty’s. Its goal is to promote the enjoyment, appreciation and knowledge of fine wines, quality spirits, beers and mineral waters from around the world. truly memorable experience. The venue for this extravaganza is the Salt House Restaurant. JeunesSommeliersCompetitionIn 2007, the Chaine des Rotisseurs initiated the annual

International Jeunes Sommeliers Competition to offer young sommeliers an opportunity to present their skills. In keeping with this tradition, this year’s Australian National Jeunes Sommeliers competition will be held at Sydney prior to the Grand Chapitre. The winner of the competion will be announced at the Gala dinner.

Therefore, we happily support and encourage the training of young chefs worldwide through our ‘International Jeunes Chefs Rôtisseurs Competition’. This year’s Gala Dinner brings something spectacular to the table! Join us for an incredible combination of culinary skills. Some of the menu highlights for the evening have been prepared by one of

Australia’s leading chefs and restaurateurs; Luke Mangan. Chef Luke is highly regarded internationally as a shining example of Australia’s culinary culture. His cooking philosophy is to source the finest and freshest local and Australian ingredients and showcase unexpected creations, which highlight his French classical training and Asian influences. Luke’s creations for our Gala event and other menu creations will be prepared and designed by an equally talented team of chefs including Cairns Hilton executive chef Nathan Johnson, Philippe Leban executive chef at The Source at MONA and our own chef David Bres. Chef Nathan brings with him extensive experience that includes 11 years at Hilton Adelaide where he ‘wowed’ patrons with his enthusiasm in cookery and advanced patisserie. Chef Leban’s provenance is Michelin-starred working at Alain Passard’s L’Arpège, Pascal Barbot’s L’Astrance and restaurants

of Hôtel Plaza Athénée and the eponymous Hélène Darroze restaurant. Phillip worked with Guillaume Brahimi as sous chef at Sydney’s Quay and also as head chef at Bennelong at the Sydney Opera House. Philippe also gained international recognition during his time at Hamilton House, on the Bund in Shanghai putting the restaurant on Conde Nast Traveller magazine’s ‘100 Hot List Tables of worldwide restaurants. Chef David’s resume includes some of the finest restaurants in Australia and Europe such as Oliver’s Restaurant, Le Clos de la Violette (2 Michelin Stars) and Restaurant Michel Gerard (3 Michelin Stars). Together, these fine chefs and their team will bring us a night to remember!
