INTRODUCTION

Welcome to Asia! We are as passionate about food as we are with the law. And no one knows local food better than those who walk the ground.

In our Rajah & Tann Asia Food Guide series, our lawyers are delighted to share with you their favourite dishes in the heart of the cities where we operate and give you a taste of the delightful food the region has to offer.

We bring you to savour the most authentic Asian food including under-the-radar eateries that only locals will frequent. This is our home ground, our advantage.

Vietnam is abundant with natural resources and exciting culinary possibilities. From its traditional (there are apparently about 500 traditional dishes) cuisine to its exemplary French, opportunities to savour great food in Vietnam are bountiful.

The quintessential Pho and refreshing spring rolls are staple comfort food together with the freshest herbs and aromatic sauces. End off your meal with a fragrant brew – the famed Vietnamese coffee reaches deep into the soul and warms the heart…

2. PHO"A ubiquitous Vietnamese dish. The unassuming broth is robust, full-bodied and has a nice umami flavour from the beef. They are also very generous with the beef slices, which are tender and melt-in-your-mouth. Delicious!"

1. BUN CHA“Bun Cha is a perennial favourite among locals. It is served with caramelised grilled pork over a plate of white rice noodle and herbs with a side of fish sauce. A plate of fresh greens is also served on the side consisting perilla, mint, coriander, and Thai basil. The flavours are clean yet bright, and it’s not hard to see why this is a lunchtime fixture all over the capital!"

5. BANANA FLOWER SALAD WITH DEEP FRIED EEL, AND DEEP-FRIED MACKEREL WITH GREEN MANGO & FISH SAUCE"Set in the middle of downtown HCMC hides a countryside oasis complete with murals of pre-1975 Vietnam and terraces of rice plants to mimic the rice paddy fields. This picture of juxtaposition is the brainchild of Tran Dinh Huy, a visionary restaurateur behind numerous celebrated and popular restaurants in Vietnam. The menu here is well-curated, extensive and includes popular Vietnamese dishes from all regions of the country."

3. COM TAM"Com Tam, or broken rice, is usually served with a slab of freshly grilled pork chop and fried egg. The pork chop is marinated in a mixture of soy sauce and sugar, then grilled over the coal until it is nicely charred and juicy. Frequented primarily by locals, this hole-in-the-wall eatery may be a bit of a track out, but you’ll be rewarded with one of the heartiest dishes around!"Try it at: Cơm tấm Ba Ghiền84 Đặng Văn Ngữ, Phường 10, Phú NhuậnHo Chi Minh City Tel: +84 8 3846 1073
