Anzac Biscuits Makes about 24 biscuits. Ingredients 120g butter or margarine 2 tablespoons golden syrup 1 cup rolled oats ¾ cup desiccated coconut 1 cup plain flour ½ cup sugar 1 tablespoon boiling water 1/2 teaspoon bicarbonate of soda Method Preheat oven to 180 degrees Celsius. Combine oats, coconut, flour and sugar in a large bowl. Melt butter. Stir golden syrup into melted butter. Disolve bicarb soda in boiling water. Add to melted butter and golden syrup. Add melted butter and syrup to dry ingredients. Stir until well combined. Grease tray with butter. Roll spoonfuls of mixture into balls. Place 5cm apart on tray. Flatten the balls with a fork. Bake for about 16-19 minutes, until biscuits are golden brown. Cool biscuits on trays or wire racks. Note: Add ¼ cup sultanas for a different taste. For a healthy but delicious option, substitute butter with coconut oil and golden syrup with rice malt syrup.
