neutral oil• ½ tsp cayenne pepper• ½ tsp ground cinnamon• 1 tsp garam masala• ½ tsp salt

Curry• 20g chopped red onion• 6cmpieceofginger• 6 cloves garlic• 4tbspwater• 2tspsafflowerorother

neutral oil• ½ tsp cumin seeds• 4 bay leaves• 8 cloves• 560ml canned or culinary

coconut milk• 350g ripe mango pulp or purée,

unsweetenedorlightlysweetened,canned• 1 tsp salt • 4 tsp apple cider vinegar • generous pinch black pepper• ½tspgarammasalaforgarnish• 4tbspchoppedcorianderforgarnish

MethodTofu 1.Cutthetofuslabinto½-inchslices.Placethemonacleankitchentowel.Coverwithanotherkitchentowel.Placea10-pound(approximate)weightontopandletsitfor10minutes.Cutthetofuslicesinto½-inchcubes.

2. Heat the oil in a large pan over medium heat. When the oil is hot, tilt the pan so that the oil coatsitevenly.Addthetofuandcookuntillightlybrownonsomesides,stirringoccasionallyfor4minutes.Addthecayennepepper,cinnamon,garammasalaandsaltandmixwelltocoat.Cookforanothertwominutesandsetaside.

3.Inablender,combinetheonion,gingerandgarlicandblendintoasmoothpuréewithtwotablespoonsofwater.Heattheoilinalargepanovermediumheat.Whentheoilishot,addthecuminseeds,bayleaves,andcloves.Cookforoneminute.Addthepuréedonionandcookuntiltheonionmixtureisdryanddoesnotsmellraw.Stiroccasionallytoavoidstickingfor13to15minutes.Addthecoconutmilk,mangopulp,salt,andvinegarandmixwell.Addthetofuandallthespicesfromthetofupantothesaucepan.Addadashofblackpepper.

4.Mix,coverandcookuntilthesaucecomestoaboilfor5minutes.Reducetheheattolowandcookuncovereduntilthesaucethickensanddesiredconsistencyisachievedforabout15minutes.Tasteandadjustthesalt.Add½teaspoonormoresugarifthemangopulpwasnotsweet.Garnishwithcorianderandadashofgarammasalaandservehot.
