Shikoku is a beautiful island with a mild climate and a rich natural environment. Each region boasts unique, high-quality food products
that grew out of local histories, culture and natural environments. The island truly is one of the most ideal places to find genuine
Japanese food products.
Companies listed in this catalog are those who participated in the Food Business Meetings held in Kochi and Tokushima City, which
were organized by JETRO in March 2011.

OverviewShikoku is one of Japan’s four principal islands, which is located south of Honshu and east of Kyushu,
and is divided into four prefectures: Tokushima, Kagawa, Ehime and Kochi. These correspond to the four
former provinces of Awa, Sanuki, Iyo and Tosa, giving the island its name, which means “Four Provinces”.
The north coast of Shikoku faces the Seto Inland Sea, where many beautiful islands f loating in a calm sea
display impressive scenery. The south coast of Shikoku faces the Pacific Ocean, where the Kuroshio, or
“Black Current,” f lowing offshore makes for a rich fishing ground. The inland area is also covered by lush
forests and high mountain ranges, including peaks such as Mt. Ishizuchi and Mt. Tsurugi, which reach
nearly 2,000 meters. Running through these mountains are several beautiful rivers, such as Shimanto
River and Yoshino River, offering sometimes wild, and sometimes gentle views. Besides the region’s
impressive natural beauty, Shikoku also boasts rich cultural heritage, including Matsuyama Castle, the
Dogo Onsen and Kagawa’s plentiful artworks, as well as a number of popular festivals, such as Kochi’s
Yosakoi Dance and Tokushima’s Awaodori Dance.
Each area of Shikoku has its own special cuisine, many of
which are famous throughout Japan. These include Sanuki
Udon (wheat noodle) in K agawa , sudachi (c itr us fr uit)
and Naruto Kintoki (sweet potato) in Tokushima, yellow
tail and sea bream (fish) in Ehime, yuzu (citrus fruits) in
Kochi.

By Air : Regular flights connect Shikoku to Tokyo, Osaka, Sapporo and other major centers throughout Japan.

Kii Channel and the Pacific Ocean. Around 80% of the land is mountainous with bountiful forests and

Handa Somen NoodleSomen noodles are one of the most popular noodles among Japanese
people besides udon, soba and ramen noodles. Handa Somen is quite
unique because it is thicker than normal somen noodles, and is well-
known for its “springiness”, which is an important point for Japanese
noodles. You can use this noodle for a variety of dishes, not only
for Japanese cuisine but also for Western or Asian cuisines such as

Naruto Kintoki (Sweet Potato)
Naruto Kintoki is the most famous sweet potato in Japan, of which
the price is highest among sweet potatoes. It is grown in sandy soil
near the coastal area around Naruto City, which makes the potatoes
as sweet as they can be. You can find many delicious processed foods,
like sweets and cakes, made from Naruto Kintoki.

Our confectioners painstakingly cut sweet potatoes one by one
with a knife, steam them thoroughly and confit in a special syrup
called “Mitsudoko” that we have been using for over 80 years. This

2. Organic Oil Free Dressing (Soy sauce /Ume flavor ) 200ml
This is a f lavorful oil-free dressing which was accredited by
JAS organic standards. It uses organic soy sauce which was
authentically-brewed from Japanese round soybeans and wheat
flour and matured over 1 year. Japanese organic ume (Japanese
plum) is also added. We do not use sugar, but instead use malt
starch syrup. Since this dressing is thickened using organic
konnyaku powder, it can be used in many dishes. Additives are not

2. Narutotai Daiginjyo
This sake is sweet and fresh like an apple and fresh with a mild
light taste. The "Yamadanishiki" is the most suitable for brewing
sake and is polished down to 48% by our company. It is made

Naruto Kintoki Sweet Potato is steamed in a big pot. Steaming
Sweet Postato is traditional method. This product uses rice
malt, ground water and the sweet potato "Naruto Kintoki" from

Naruto Kintoki Sweet Potato is baked in a big oven. You can feel
slight roasting flavor. This product uses rice malt, ground water
and the sweet potato "Naruto Kintoki" from Tokushima which is
located in the eastern part of the Shikoku Island (1 hour flight
from Tokyo). This Japanese distilled alcohol has been drunk since
old times and our experienced craftworkers produce this with
passion.
Naruto Kintoki Distillery was established in 1901and is
a small company consisting of 5 employees. Japan has a
traditional distilled alcohol which is the same as vodka
in Russia and grappa in Europe. It is transparent and
has a delicate sweet potato flavor. The alcohol content is
comparatively low, and is better than Japanese sake for
delicate Japanese dishes.

2. Authentic Sweet Potato Shochu Naruto Kintoki Satomusume
This shochu uses the best Naruto Kintoki Satomusume. It is
carefully distilled under normal pressure and keeps the sweet
potato flavor and sweetness. The alcohol percentage is 25%.
1. Sudachi-chu
Sudachi fruit is a citrus fruit that originated from Tokushima
Prefecture. They are dark green and they have a refreshing flavor
and tartness. The sudachi harvested from late August to late
September are squeezed entirely and their juice is quick-frozen to
keep their fresh flavor. Sudachi-chu uses this fresh sudachi and
has a refreshing taste that is well blended with sudachi's sharpness
and biting taste. The alcohol percentage is 20%.

These rusks use a high quality wheat flour "Sanuki no Yume 2000"

2. Yakitori Momo Kushi (Tare)
This is a popular Japanese food called “yakitori”. Safe and reliable
Japanese meat from the thigh is put on a bamboo skewer,
seasoned with "Teriyaki sauce", and broiled.
1. Awaodori Boneless Breast
This is the breast meat from "Awaodori" which was the first
chicken to obtain JAS standards as regulated by the Ministry
of Agriculture, Forestry and Fisheries of Japan. It is the kind of
chicken bred specified to be used as food. It is the first-generation
bred checken: female chickens are bred with Shamo and male
chickens are bred with white Plymouth Rock. It has a rich taste.

Yoshida handmade noodles are thicker than the average noodles
produced by manufacturers from other regions (approximately
1.7m/m). Our noodles are famous worldwide for their unique

1. Yoshida Handmade Noodle (Daichi no Megumi)
Yoshida noodles are made from 100% Kyushu wheat grown
around Chikugo River Springs. This wheat is the result of
hybrid wheat experimentation endorsed by MAFF (Ministry
of Agriculture, Forestry and Fisheries) in Kyushu Okinawa
Agricultural Research Center, Japan and is backed by extensive
research and experimentation. Chikugo River Springs wheat is

Sanuki UdonPercentage-wise, Kagawa has more fields than any other prefecture
in Japan, and the long days, warm climate and well-drained, rich soil
all combine to create the best conditions for growing wheat. This
superior wheat is used to produce Sanuki Udon, one of the area’s
signature dishes. These Sanuki Udon noodles are fragrant, chewy
and a delight to eat. Sanuki Udon is some of the most delicious udon
in the nation, and people visit from all over Japan just for a taste.
There are over 900 udon restaurants packed into this small region.
Soy SauceSoy sauce is an impor tant par t of Japanese dishes such as sushi,
tempura and teriyaki. It goes well with another food and soy sauce is
rumored to be a secret ingredient used by many chefs in French and
Italian food. The long, warm days create salt-pans, and the resulting
natural salt and high-quality wheat are combined to produce soy
sauce using traditional methods to this day.

2. Ponzu
This is a ponzu vinegar which uses very precious soy sauce
naturally brewed in barrels made of cypress trees as a base
ingredient. It is blended with Soda bonito flakes and kelp broth
with yuzu and sudachi juice. Preservation agents and artificial
flavoring are not used.
1. Tsuru Bishio
This soy sauce is naturally brewed in barrels made of cypress
trees, which are precious even in Japan. Commonly, soy sauce is
brewed over a period of about 3 months in tanks, but we prepare
in winter and brew for about 2 years. We then add more soy beans
and wheat and brew an additional 2 years for a total of 4 years.
Our sauce's rich and mild taste is perfect for pouring on or dipping
with your dish. Add a little bit of this sauce on vanilla ice cream to
create a caramel flavor.
Though we are a small organization consisting of just 3
employees, we take pride in preserving the traditional
method of brewing soy sauce. Commonly today, soy sauce
is produced at factories in tanks over a period of about 3
months, but we believe soy sauce should be made in barrels
made from cypress trees using the unique microorganism in
each brewery over a greater period of time. At present, ony
less than 1% of soy sauce is produced using this procedure.
We currently maintain 57 cypress tree barrels and brew our
product over a period of 1 to as many as 4 years.

Festivals in Shikoku
Awaodori is a traditional performing art that dates about 400 years ago. A total of 1000 dancing teams gather around the center of Tokushima City during the period of the festival, and dance to the double rhythm called Zomeki. You can enjoy watching the teams dance, as well as joining in and dancing with them.
About 50 dancing teams gather around the center of Takamatsu City, and dance to the music of Ichigomaita, a local Bon Odori song in Sanuki, arranged in a Pop music style. A fireworks festival called Don Don Takamatsu is also a spectacular with as many as 6500 fireworks.
This traditional festival is said to date back to the Heian period. A total of 48 f loats called Taikodai gather from 5 districts of Niihama City, with people on top of the f loats calling “choosaajya, soorya, soorya.” Decorations of the f loats, which are woven from gold and silver threads, are breathtakingly beautiful.
A tota l of 194 teams , about 21000 d ancers wear ing decorat ive costumes wielding a musical instrument called Naruko, gather around the center of Kochi City, and dance to the music in various styles such as samba, rock ‘n’ roll or traditional. You will never get bored with their passionate performances.

Citrus fruits and their processed productsFrom November to April , more than fifteen kinds of citrus fruits
come to harvest in Ehime. Besides the mandarin orange, the Iyo-kan
orange is one of the most popular citrus fruits from Ehime, which
is named for the traditional name of the Ehime area “Iyo”. Some
fruits are produced only in Ehime. Those unique and special citrus
fruits, such as Beni-Madonna, Mari-Hime and Kampei, are suitable
for seasonal gifts. There is also a wide variety of processed products
made from citrus fruits. There are many companies producing unique
orange juice and je l ly for grocer ies . Some of them even produce
powder or puree of mandarin oranges for industrial use.
Yellowtail and sea breamYellowtail and sea bream are well-known parts of Japanese cuisine.

This soup uses sea breams, so you can have this even when you

2. Mugi Miso Curry
We have retort production facilities and have been producing
retort curries, retort stews, pasta sauces and other goods under
hotel brand names. Miso, one of the essential seasonings for
Japanese, is used for the Miso Curry in order to give the curry
a unique flavor. We selected sweet Ehime-made Miso for this

sometimes be candied. People are taking an interest in yuzu around
