Forthepastfewyears,Larahastakenonthechallengeofcreatingmouth-wateringdishesfromthegalleyofa75footyachtformanyguestsandcrewmembersastheysailaroundtheGreekIslandsoftheIoniansea.Manytipsandtrickswereexchangedwithlocalproducesandothergalleycooksalongtheway.Particularlyaboutbeingorganised,nottobeafraidofcannedvegetables,ensuringeverythingisstoredawaybeforesailingandpurchaseproduceonlyasyouneedit.Takingallthisadviceonboard,Laraisabletocombinebeautifulfreshseasonalproduceandlonglifeproductswhenmakingmealsandaccompanimentsinagalley’thesizeofashoebox’.

Beginwiththepikelets.Siftdryingredientstogetherinamediumbowl.Whiskmilk,egg,syrupandzesttogether,thenaddtodryingredients,whiskinguntilsmooth.Standmixturefor15minutes.Thenwhiskinbicarbonatesodamixturejustbeforecooking.

NowontotheCaramelSauce;meltbutterinasmallsaucepanovermediumheatforabout1minuteuntilnuttyincolour.Whenbutterisfoaming,addbrownsugar,

stirtocombine;cookforabout1minuteuntilmixturebeginstosmelldivineandsugarisdissolvingandbubbling.Takeoffheat;stirincream,coconutandvanilla,whiskingquicklyuntilwellcombined.Placebackonheatforabout2minutes,whiskinguntilmixturehasthickenedslightly.Coverandsetasideuntilreadytoserve.

Stirbicarbonatesodaandmilkmixturetogetherandpourintothebatter,stirtocombine.

Heat(preferably)anon-stickmediumfrypanovermediumheatandaddalittleoftheextrabutter.Swirlbuttertocoatbottomofthepan.Whenbutterisfoaming,dropleveltablespoonfulsofthemixtureintothepanandcookforhalfaminuteoruntilbubblesappearonthesurface.

Flipoverpikeletsandcookforafurtherminuteuntilgolden.Transfertoaservingplate,covertokeepwarmandcontinuewithremainingingredients.

IusuallymakethisinthebeginningoftheseasonwhenStrawberriesareplentiful.Thisisagreatrecipeforusingmarkedorbruisedstrawberries.Thecontrastofthevibrantredstrawberriesandthecreamywhiteyoghurtmakethisbrekkyasimpleyetimpressivebreakfasttoserveyourguestsorlovedone.

Inasmallsaucepan,tossplums&extrasugartogether.Placeoverhighheatandcookplumsforabout3-4minutes,turninghalfwaythroughcooking,untilplumsbecomeslightlybrownedandbegintoreleasetheirjuices.Addamarettoorlemonjuice.Cook&tossoccasionallyforabout2minutesoruntilplumsaretender.Removefromheat&setasidetocool.

Pre-heatovento180C.Grease&linebaseandsidesofa20cmsquarecake/slicepan-leavepapertooverhangabout2cmonallsides.Mixdryingredientsalongwithlemonzest,togetherinabowl.Whiskwetingredientsinajug.Addwettodry&stiruntiljustcombined.Youwanttoseelumpsastheywillgiveyouatendercake.

Spoonbatterintoprepareddish.Smoothtopwithbackofawetspoon;dollopplumsontop,pressingthemintobatter.Bakefor25minutes,untilcookedwhentestedwithawoodenskewer.Leavetostandfor5minutesbeforeremovingfromdish.ServewarmwithadollopofthickGreekyoghurt,drizzleofhoney&sprinkleofcinnamonifyousodesire.
