When  Greek  Yogurt  is  made  there  are  9lbs  of  milk  to  3lbs  of  yogurt.

SO  WHAT  HAPPENS  TO  THE  OTHER  6lbs?  It  turns  in  to  whey.

1

Whey  Permeate  is  the  liquid  remaining  after  Milk  has  been  curdled  and  strained.  There  are  two  Classifications  of  whey  –  Sweet  Whey  &  Acid  (Greek)  Whey.    Though  similar,  Acid  Whey  is  just  slightly  more  acidic  than  Sweet  Whey.

What  is  Acid  or  Greet  whey?  Is  it  toxic?  Does  it  melt  drains?  Is  the  acid  content  so  high  it  harms  water  and  crops?  Does  Acid  Whey  cause  Acid  Rain?  The  answer  is  No  to  each.

Greek  or  Acid  Whey  is  not  toxic  and  contains  nutritionally  beneficial  components.

2

Most  Acid  or  Greek  Whey  Permeate  is  94%  water,  plus  lactose  (also  known  as  “milk  sugar”),  protein,  vitamins,  minerals  and  fats.

Excess  Whey  Permeate  in  used  in  several  ways:

Reducing  Feed  &  Food  Prices

• We  reduce  Animal  feed  costs  by  working  with  nutritionists  to  add  whey  to  animal  diets.

• Food-‐  lactose  can  be  extracted  and  used  as  foods  like  cake  mixes  and  baby  food.

3

Replacing  Fertilizer  Chemicals

• Whey  Permeate  is  used  in  land  application  and  as  a  fertilizer  replacement  when

• Land  application  of  whey  permeate  is  regulated  by  the  State  Department  of  Environmental  Quality  (DEQ)  and  other  state  and  local  agencies.

Replaces  Fossil  fuels

• Acid  Whey  and  other  by-‐products  are  used  in  bio  digesters  to  produce  energy.

IS  Greek  Yogurt  (acid)  WHEY  TOXIC?

NO!  Acids  are  found  in  every  day  foods.  Acid  whey  is  equivalent  in  acidity  to  coffee,  buttermilk,  fruits  jams  &  tomatoes.  Cola  alone  is  roughly  10x  more  acidic  than  ACID  WHEY.
