The pork must be untrimmed and on the bone,otherwise the dish is too dry.
The day before, mix all the rub ingredientstogether and rub into the pork and let marinadein the fridge.
Heat the oven to 200C and place the jointand spices in. Discard any juice that has comeout.
When the pork browns (45 minutes to anhour) turn the oven down to 120C.
Add the orange juice to the dish and coverloosely with foil. Cook slowly for five hours,braising regularly.
Make the salsa by mixing all the ingredientstogether. Warm the tortillas.
Use a fork to rip all the pork off the bone, itshould be stringy but succulent.
Fill the warm tortillas with the pork, salsaand cheese. Serve with rice or spicy patatasbravas.

They beat DunbarUnited 2-0 in the British
Isles Cup Final atToryglen, with CameronMcKay scoring both goals.
Just a few weeks beforethat they had beaten thesame team 4-3 on penaltiesin the Under-15 ScottishShield at Tynecastle aftera 2-2 draw.
The Cameronian Cupwas clinched with a 2-1win at Celtic Park overSt Thomas Aquinas, withConnor Brannigan hittinga double.
Head teacher JackiePurdie said: I amdelighted for them.
Every year they havebeen fairly close, but towin so much this year hasbeen wonderful for themand for the coaches whoput in a lot of time.

He said: Its great anda lift for our school we never expectedto win three trophies inone season.
The boys have a lot ofself-belief and knew theycould win.
They are all friends andthat helps a lot too.
Meanwhile, for the firsttime in 42 years, theGlasgow PrimaryAssociation team won theScottish Cup for primaryschools in a fierce day ofcompetition in Edinburgh,playing against 14 otherteams.
On the same day, theGlasgow Under-18 teamalso took the top spotin their national
competition, beatingLanarkshire on penalties.
Some of the winningteam were invited toa reception at theCity Chambers andwere greeted by theLord Provost.
