How did I Find the Treasure? As most invenons, everything started with an accident. Living a Nutritional Miracle:

My name is Jorge Zapp-Glauser, half Co-lombian and half European. I Started to Reverse my Age

Being an inventor with an academic phys-ics and bio-medical background, the dread shock of the diabetes diagnostic (with a very bad genetic family history, weak liver and kidneys), paradoxically led me to dis-cover the secret for a much longer and healthier life scheme, and even actual rejuvenation.

Today, at 71, my biological age has been evaluated to be 56 with a standard test, but for what I see and feel it should be even less. You will judge… If my body and vitality would ever be presented in a TV show with my old man’s face and gray hair covered, (-‘try to cover it with your finger’), it would lead most people to believe that the guy with the bag over his head is just 30, maybe 40.

Was it possible to dig even deeper into the solution? If Metabolic Syndrome was almost unknown before modern times (W. Price), what could be done to trans-form modern tasty food into an equiva-lent of the real gatherer-hunters paleo-food, to come closer to the raw nutrition that made us humans? Just a paradigm touch! Where were those precious nutrients that made our ancestors healthy humans in very harsh climates, when any serious disease was a death sentence… now hid-den in our time with the exception of meat, fat and vegetables? Where were those energy sources with which our bod-ies had a genetic identity, now shattered by highly processed and genetically modi-fied foods that have flooded our eating habits? Those marvelous foodstuffs for which our extra long guts were originally made? Why was it almost impossible to buy (concentrated enough like in the wild), ultralow GI foodstuffs from the gro-cery store, maybe with the exception of nuts, quinoa and flax-seed?

How did I Find the Treasure?

As most inventions, everything started with an accident. A ‘medieval bread’ in my diabetic diet, produced with an im-ported German stone-milled whole-grain rye, allowed me, during those early days, to eat one heavy slice at breakfast, one at lunch and one at dinner as my only carb source along with a little milk (allowing me to skip those damaging rice, potatoes, sugars, pasta and even whole grain bread).

After I discovered this unique and deli-cious treatment for my Metabolic Syn-drome (I was a careless obese with acute hypertension and damaged organs), I eas-ily reduced my weight by 46lbs in six months and maintained it since then with-out effort; blood pressure was controlled, all infections disappeared, from athlete’s foot to influenza; no analgesics or antibi-otics in 7 years, not even a stomach or back ache. Why are these all of a sudden, considered therapeutic? How should those precious nutrients be planted, protected, pro-cessed and stored? Granolas, sweet pota-toes, oats, whole-meal pasta or wholegrain bread were only an insuffi-cient answer to my glucometer frighten-ing spikes if I wanted to regenerate my kidneys. With creativity and biochemical instruments, only six months after the fatidic diagnostic, I was eating the

‘serendipity bread of life’

with probably the lowest GI in the world for a whole grain baked bread with unpre-dictable wellness results. My glucometer allowed me to increase to two, three and even four slices per meal, centering my diabetic nutrition… paradoxically on bread! That forbidden but otherwise, cul-turally-essential foodstuff. The bread of life, well beyond diabetes!

Any sign of body’s inflammation disap-peared (CRP c-reactive-prot.=0.4) My Glycated Hemoglobin (HbA1c) re-duced to 5.3% better than most healthy people, while fasting glycemia remained constant between 75mg/dl and 95mg/dl My weight and big belly reduced contin-uously, two pounds a week, until I reached the weight I deserved without any effort, with a BMI of 19… forever! Food craving almost disappeared with a constant glucose supply on demand Naturally, it was somewhat difficult to forget those refined-carbs I loved for so long, like baguette or French-fries. In very short time, however, my body intu-itively asked with bio-anxiety for the delicious LoGIcarb bread of life, only replaced later at lunch with nice home-cooked lentils, chickpeas or quinoa in controlled serving sizes at noon. My skin became increasingly elastic (no loose skin after a 30% weight loss), my gums improved, but… my face exposed for 20 years to the savannah wind and sunlight, remained the same, though my actinic keratosis treated every 2 years, vanished. My gray hair has started dark-ening again, in the case of my beard, after 30 years. In a few months, my doc-tor decided to reduce Metformin and finally dropped it.

In less than a year, my arteries became clean, (though with some calcium resi-dues from a past arteriosclerosis that eventually would have killed me) My PSA (prostate) reduced to 1.5 ng/ml Antioxidants skyrocketed to 62,000 units (PHARMANEX); Triglycerides dropped to 101-130mg/dl as there was no excess blood-glucose at anytime to manufacture semi-soluble blood-fat. From that day on, my whole life started changing very fast in a serendipity se-quence. I just couldn’t believe what hap-pened later. God was expressing through science: My digestion totally regularized in a cou-ple of days after my guts understood the digestive change needed to harmonize its original 30 feet intelligent purpose. Disproportionate insulin response was controlled and insulin release became regulated by controlled blood-sugar, produced on demand by my new Total Health Digestion. What was happening? What to do next? The Serendipity Bread of Life!

My New Nutrition:

In just one year, my life had changed its direction 180o, just by eating this ultra low Glycemic Index bread, as my only concentrated carb. During the first three years, I centered my nutrition on three to four slices of logicarb bread per meal, abandoning all other refined carbs and hidden sugar-forms, (to reduce insulin and sugar spikes which destroy our organ-ic harmony) and with a new goal of never going over 120mg/dl one hour after any meal (and 105mg/dl two hours later), thanks to the healthy masking in my meals, of delicious sour cream, eggs or cheese, hummus, pâté, pesto, etc. on the bread, and delicious sauces and sofritos on my vegetables and meats, logically, without any impact on triglycerides and cholesterol, as there was no excess blood-sugar to build up surplus blood-fat and having opened a mechanism to burn fat,

thanks to my very low insulin levels. My (your?) body had to sacrifice its stored fat (obesity) to produce this essential ele-ment of our metabolism and cell struc-ture, surprisingly without any hunger. Today I eat plenty of fat, mostly saturat-ed, after my metabolism ate away all its excess fat (naturally, also saturated). In a short time, I was normal again in the lab-tests, but… not cured! From then on, with even more intensity, I concentrated on an automatic and continuous exercise, mus-cle and resistance building (even while seated), and upgrading my kidneys and liver, damaged by two accidents. Today all these functions have been fully recu-perated, while I am optimistically (and well informed) aiming to reach 100 years with a good capacity to jog and innovate among many other vibrant variables. I decided on always eating fruits whole with their flavonoids -no juices whatsoev-er- (fruit only between meals eaten at 11am, at 5pm or at 10pm), not to add to the meal’s sugar spike or distort complex-carbs digestion).

I also started to replace at lunch, my LoGIcarb bread with quinoa or pulses prepared by design and frozen (never those overcooked in a can), and natural-ly, enriched and masked (on glycemic impact) with sofritos, acid salads, con-trolled amounts of protein and fat from eggs, cheese, cream, lard, olive and flax oil, seafood, chicken and sometimes even some red meat (no more than 15-25 dry-grams/day) as this bread, and my pulses are very rich in vegetable

protein. No rice, no potatoes no grain-products of any kind, no sugar and especially no hidden fructose. (constant gut’s glucose production on demand, allows using stevia and sorbi-tol without carb-craving). Barley-beer and dry wine in controlled amounts. Though this is part of the next chapter of this story, I am obtaining good re-search results (tested by a few diabetics that allow to monitor glycemia, minute by minute) in the development of a new notion of rice, potatoes and pasta with the same properties of our bread, cre-ating therefore a new conception of wholesome super-healthy cooking with those new constant energy products that will come along in the future.

Previous health problems:

In my youth I never was a super healthy guy, like I am now at 71. I grew up with home-schooling in a tropical farm dur-ing the forties and fifties, when the only vaccine was smallpox; this allowed me to experiment with all viruses, strange

parasites, bacteria and contact with ani-mals. Probably good for my immune sys-tem but dangerous for my early life. At 30 (1972) my high blood pressure and heart condition began being treated with beta-blockers and my prostate was found to be abnormally large, (expecting future prob-lems). A couple of hernia surgeries, a tox-ic chemical hepatitis (w. necrosis) caused by a research accident, a strange blood-pressure sensitivity to four-legged protein and another strange heart-plexus sensi-tivity to a fungus common to badly stored grains nuts and dry-fruit that produced me cardiac tachycardia, completes my rough health picture.

Having worked for five years in ‘normal pressure hydrocephalous’ with the fa-mous Dr. Hakim, I had a pretty good knowledge on the mechanics and physiol-ogy of human brain and later, also good capillary chromatograph familiarity with

aflatoxins of the Aspergillus fungi (Flavus in Brazil-nut and Niger in coffee).After a few tachycardia events, I associated my unique condition to an aflatoxin (no other cases on record from cardiologists or the Internet, maybe an attractive research subject). I treated my tachycardia epi-sodes with antihistamines. Two years ago, with my immune-system fully devel-oped by Total Health Digestion I had a second research accident with a badly contaminated cereal in a granola experi-ment, I went well beyond tachycardia into an auricular arritmia and when I reached the hospital’s emergency I was fibrillating and with my left arm para-lyzed. A New Nutritional Scheme (valid dur-ing 99.9% of our evolution):

This is just the nutritional scheme that I developed with the support from lab-tests, physicians and nutritionists, to com-plement the synergic effects of my own Ultralow Glycemic Index nutrition, resem-bling more such of a Paleolithic-gatherer than that of a hunter, due to my special blood-pressure partial sensitivity to four-legged animal-protein.

doctors, came to see me. My neurological exam was perfect! Further exams showed totally clean arteries, but… with a frontal right lobe infarct the size of a walnut in my brain. My instant and total recuperation after a one cubic inch destruction of my essential brain was attributed to neuro-plasticity. My Eating Regimen The terrifying beauty of this Food Pyra-mid is that in my food distribution some 60% of my calories are carbs (today in primitive re-polymerized carbs of LoGI-carb, plus specially prepared pulses and quinoa in controlled amounts), 30% in different forms of fat including saturat-ed, not only in the upper part of the pyramid, but also with many vegetable and pulse sofritos, and just 10% in pro-tein (of which 5% is vegetable in bread and grains).

The whole America (and I mean it all, including South America) is just eating a similar early-death formula. Only some 20 to 40% of our population has a built-in capacity to survive this non-human refined diet, we could euphemistically call “civilized”. These, are thin-bodied people like my wife that can eat any-thing without affecting their health. She moved to my nutrition four years ago, increased her weight by three pounds (exactly in the right places, keeping her BMI=19), survived cancer and got rid of all infections and autoimmune reactions for many years to come.

Eating super-wholesome bread is just a natural healthy recommendation unless you have a gluten or fiber resistance. If this happens, our research effort will pro-vide you a solution in a few years (we are working hard on these subjects). In any case, you should consult your doctor be-fore embarking in the life’s adventure of changing ALL your carbs for those natural molecules that made our ancestors: hu-man.
