2016 JSM Shiraz-Cabernet Sauvignon-Cabernet FrancNamed in honour of James Stanley Malpas. Born in Willunga in 1873, he and his family lived in what is now our Cellar Door cottage. James carved his initials in the stone lintel above the front door in 1891 when he was 18 years old. James was one of only a few Australian servicemen to survive Gallipoli and was awarded the Military Cross for “conspicuous gallantry in action and for displaying great resourcefulness and dash in getting his company out of an almost impossible position in the trenches.”

This wine is made up of 81% Shiraz, 13% Cabernet Sauvignon and 6% Cabernet Franc – the classic Australian red blend with some Cabernet Franc added to enhance structure and make it our own. A rich, full flavoured front and mid palate laden with blackberry, red cherry, plums and blackcurrant layered with hints of strawberry and vanilla cream, all interlaced with rich toasty oak and dark chocolate. The wine’s luscious fruit is framed by long textural Cabernet tannins integrated with balanced and elegant oak tannins. A great drinking wine of complexity and substance.

New Releases

2016 ShirazA fantastic food matching wine with fruit characters enhanced by sympathetic oak use. Juicy plums and black cherries lead into a strawberry and cream mid palate which is complemented by nutmeg and cinnamon. This rich palate, with bright fruit and some light toast, is finished by fine dusty and youthful tannins that provide a real tactile character.

2015 Jim’s Script Cabernet Sauvignon-Merlot- Cabernet Franc-Petit VerdotThis wine is named after Professor James Watts, the founder of Fox Creek Wines. Jim was an eminent surgeon and a huge lover of wine, particularly Cabernet Sauvignon. In 1984, Jim and his wife Helen purchased the land on Malpas Road that is now Fox Creek Vineyards. Together with their four children, they planted a wide range of grape varieties and so the Fox Creek story began.

A classic Bordeaux blend, Jim’s Script is a blend of 56% Cabernet Sauvignon, 30% Merlot, 8% Cabernet Franc and 6% Petit Verdot. This blend is a fine example of the synergy that can be achieved when blending individual varietals. The complementary effects of the fruit laden Merlot with the elegant and silky Cabernet tannins balance the wine, the Cabernet Franc gives it aromatic lift and focussing structure and the Petit Verdot contributes spice and blueberry fruit.

This wine showcases raspberries, black cherries and blackberries, together with coffee, mocha, hints of toast, brown spice and roast nut flavours. Fine, silky tannins provide the palate with focus, style and great length. Jim’s Script is medium bodied and superb with food.

Out of the Bush: A Photographic Exhibition of Fleurieu Flora and Fauna Lindy Downing

For almost thirty years Lindy has used art and photography to explore the relationship between native flora and fauna.

“Despite ethical imperatives to cease clearing and development along waterways, coastlines and in sensitive areas, destruction continues and, as a result, we are losing pristine lands and creature species, some that have no doubt not even been scientifically named let alone appreciated.

On a small piece of land on the outskirts of Goolwa, where I live, I have watched the decline of frog species, seen old families of lizards wiped out and witnessed snake populations decline. I have watched as natural corridors to the river have been decimated in the name of development and have seen first-hand the connectedness of nature breaking up. It is this great disconnection which is most painful because it really does signal the end of a harmonious landscape, the end of a natural order, the end of a time which will never come again. The song of the land which has resonated throughout time has become discordant. Shame on mankind!

I have chosen a selection of images from my portfolio, The Natural History of The Southern Fleurieu. Most of the photographs were taken in vestigal virgin scrubland.”

Come and relax at our cellar door with a wine while your chil-dren are guided through the world of pop-up card and book making with artist Rebecca Prince. They will learn different pop-up mechanisms and then apply them to make their own cards and books with whatever theme they prefer, adding drawings, washi tape and other embellishments to make them extra special.

Quaintrelle: A woman who emphasizes a life of passion expressed through personal style, leisurely pastimes, charm, and a cultivation of life’s pleasures.

Angela is a self-taught photographer and artist, who has used art to inspire her journey through life after many years in domestic violence.

Angela will have works in a variety of mediums, paintings in both watercolor and acrylic as well as some of her brilliant photography. Her new works depict women and feminism through floral images; each flower is individual, beautiful, it grows at its own rate and blooms when it is ready, all flowers are equal.

Butterflied Australian Sardines with Herb & Olive Stuffing

Recipe supplied by Sydney Seafood School. Serves 4 Entreés. Ingredients– 12 Australian sardines, butterflied– 1 cup plain flour– 1 cup extra virgin olive oil– 1 lemon, cut into 4 wedges– Herb & Olive Stuffing– 4 slices white bread– 2 green onions, finely sliced– 1 cup chopped flat-leaf parsley– 1 tablespoon chopped fresh oregano– 8 green olives, pitted & coarsely chopped– 1 lemon, zest finely grated– Salt flakes and freshly ground black pepper, to taste– 1 egg, lightly beaten

Method Herb & Olive Stuffing1. Coarsely tear bread into a food processor and pulse

until finely chopped.2. Add green onions, parsley, oregano, olives, salt and

pepper and pulse until well combined.3. Add just enough egg to bring the mixture together.

Prepare & Cook the Fish1. Place fish, skin side down, on a chopping board.2. Spoon stuffing on top of one half and gently press the

mixture to make it stick to the flesh.3. Fold other half over to make a ‘sandwich’. Press gently

to ensure filling sticks.4. Heat a frying pan over medium heat, add olive oil.5. Dust fish lightly with flour, add to pan and cook for

2 minutes each side.6. Serve with lemon wedges on the side.

Note: Fish can be stuffed, covered and refrigerated several hours before cooking. Alternative species: Anchovy, garfish, sandy sprat, school whiting.

Wine Match: Fox Creek VermentinoRefreshing aromas of citrus blossom, lime juice and grapefruit with hints of pear and lemon curd. This wine exhibits grapefruit, lychee, white nectarine and kaffir lime characters, and develops to show a luscious mango and apricot mid-palate before finishing with bright crisp acidity and great length. Vermentino’s citrus notes compliment the sardine flavours while the acidity cuts through oil to refresh the palate.
