schools, the Gloria Frances

Gloria began

dancing at age of three

at many venues, includ-

ing the famous “SteelPier” in Atlantic City.

Gloria was the recipient of

many scholarship awards, with

which she furthered her education

in New York City with such greats

as Luigi, Frank Hatchett and Bob

Audy. It was during this time she

As a family caregiver,

you may find your-

self facing a host of

new responsibilities, many of which are unfamiliar or

intimidating. You may be tak-

ing care of an aging parent or

a handicapped spouse. Or per-

haps you’re caring for a child

with a physical or mental ill-

ness. At times, you may feel

overwhelmed and alone. But

regardless of your particular

circumstances, you’re facing a

challenging new role. These

tips can help you get the sup-port you need while caring for

someone you love.

1.Accept your feelings.

Caregiving can trigger a host

of difficult emotions, includ-

ing anger, fear, resentment,

guilt, helplessness and grief.

It’s important to acknowl-

edge and accept what you’re

feeling, both good and bad.

Don’t beat yourself up overyour doubts and misgivings

— these feelings simply

mean you’re human.

2.Ask for help. Even if you’re

the primary family caregiver,

you can’t do everything on

your own. You’ll need help

from friends, siblings, and

other family members, as well

as health professionals. If you

don’t get the support you

need, you’ll quickly burn out,

which will compromise your

ability to provide care.

3.Make time for yourself.

While you’re caring for your

loved one, don’t forget about

your own needs. Take time to

relax daily and learn how to

regulate your stress when you

start to feel overwhelmed. It’salso important to stay social.

Make it a priority to visit reg-

ularly with friends and family.

Don’t let yourself become iso-

lated.

4.Care for your body.

Exercise regularly. Try to get

in at least 30 minutes of exer-

cise three times per week,

since exercise is one of the

best ways to relieve stress andboost your energy. It is also

imperative to go to all of your

regular doctors’ checkups and

remember to eat healthy and

get enough rest.

5.Talk with others. Even

when you understand whyyou’re feeling the way you do,

it can still be upsetting. In

order to deal with your feel-

ings, it’s important to talk

about them. Don’t keep your

emotions bottled up, but find

at least one person you trust to

confide in.

The main differences

are: Strength of

bleaching agent. For

starters, over-the-counter home

use products and dentist-super-

vised at-home products usually

contain a lower strength-

bleaching agent (from 10%

carbamide peroxide-which isequivalent to about 3 percent

hydrogen peroxide and up to

22% carbamide peroxide). In-

office, professionally applied

tooth whitening products con-

tain hydrogen peroxide in con-

centrations ranging from 15 to

43 percent.

Mouthpiece trays. With den-

tist-supervised at-home bleach-

ing products, your dentist willtake an impression of your

teeth and make a mouthpiece

tray that is customized to exact-

ly fit your teeth. This cus-

tomization allows for maximum

contact between the whitening

gel, which is applied to the

mouthpiece tray, and the teeth.

A custom-made tray also mini-

mizing the gel’s contact with

gum tissue. Over-the-counter

whitening products do containa mouthpiece tray, but the

“one-size-fits-all” approach

means that the fit will not be

exact. Ill-fitting trays can irri-

tate the gum and soft tissue by

allowing more bleaching gel to

seep onto these tissues. With

in-office procedures, the

bleaching agent is applied

directly to the teeth.

Additional protective meas-ures. In the office setting, your

dentist will apply either a gel to

the gum tissue or use a rubber

shield (which slides over the

teeth) prior to treatment to

protect your gums and oral cav-

ity from the effects of the

bleaching. Over-the-counter

products don’t provide these

extra protective measures.

Speed of the bleaching

process. Dentist-supervised at-

home bleaching and over-the-counter bleaching products

typically need to be applied

every day for 1 or 2 hours or

every overnight for up to 4

weeks. In-office bleaching pro-

vides the quickest and most

effective way to whiten teeth.

With in-office bleaching, the

whitening product is applied

directly to the teeth. These

products can be used in combi-

nation with heat, a speciallight, and/or a laser. The light

and/or heat accelerate the

whitening process. Results are

seen in only 1, 30- to 60-

minute treatment. To achieve

dramatic results, however, sev-

eral appointments are usually

needed. With laser-enhanced

bleaching, however, dramatic

results can be seen after the first

treatment.

Costs. Over-the-counter

bleaching systems are the least

expensive option, with costs

ranging from $20 to about

$150. Depending on where you

live and the extent of the pro-

cedure, dentist-supervised

home bleaching systems range

in cost from approximately

$150 to $300 per upper or

lower set of teeth, or $300 to

$600 for the whole mouth. In-office bleaching procedures

range in cost from $200 to $500

per arch, or $500 to $1,000 for

the whole mouth.

Supervised versus unsuper-

vised process. Dentist-super-

vised at-home bleaching and

in-office treatments offer addi-

tional benefits compared with

over-the-counter procedures.

First, your dentist can performan oral examination and con-

sider your complete medical

history, which can be helpful in

determining how your teeth

became discolored and if

bleaching is an appropriate

course of treatment based on

your type of stains and number,

type, and location of restora-

tions. Your dentist can then

better match the type of stain

with the best treatment, if appropriate, to lighten those

stains. With dentist-supervised

bleaching procedures, your

dentist will likely want to see

you a couple of times to ensure

you are following directions, to

make sure the customized tray

is fitting properly, to inspect

your gums for signs of irritation,

and to generally check on how

the teeth whitening process is

proceeding. With over-the-counter bleaching products,

you are on your own.

If you have made up your

mind to assume the risks associ-

ated with over-the-counter,

tray-based bleaching kits, here’s

some sound advice:

Try to select a kit that

allows some customization of

the mouthpiece. Some kits

come with a mouthpiece that

can be molded to some degree. These are better than others

that come with a standard

stock mouthpiece.

Try to gain the opinion

of others who may have

already tried the kit you are

considering.

If at any time you experi-

ence a prolonged change in the

color of your gums or an

increased tooth sensitivity to

hot or cold foods and bever-ages, stop wearing the mouth-

piece and see your dentist

immediately.

Many unlicensed,u n p r o f e s s i o n a l ,

unqualified people

within the financial services

profession, along with the

media, have rendered inaccu-

rate and negative opinions

about annuities. These opin-

ions are sometimes picked up

and espoused on TV, radio, in

newsprint and taken as gospel

by many unsuspecting mem-

bers of the public. For theseand other reasons, far too

many people have a misguided

opinion about these magnifi-

cent retirement vehicles

designed to produce, sustain

and guarantee an income for

the rest of a person’s life, and

his spouse’s life, if so elected. If

you are one of these people,

please invest a few minutes to

read this for some enlighten-

ment that may positivelyimpact your financial life.

 First, a few facts.

1.Only an annuity can guaran-

tee you an income for the rest

of your life. No other invest-

ment has this characteristic.

The guarantee is based on the

claims-paying ability of the

insurance company selected.

The insurance company is fur-

ther backed up by the state inwhich the company is domi-

ciled, as well as the state in

which the purchase was made,

if different. (State guarantees

have limitations and should be

investigated and understood

fully before investing. Any

competent agent or representa-

tive can obtain this informa-

tion for you.)

2.All annuities have a deathbenefit principal guarantee,

even those that allow for

investments directly into stock

and bond funds, which have

the potential for decline. These

death benefit guarantees have

optional language, if selected,

that offer guaranteed annual

increases in the death benefit

payout even if performance

causes a decline in value. The

best part is that there is nomedical qualification to secure

this feature.

3.Annuities offer living benefitriders that allow for a com-

pounded annual increase in a

“withdrawal or income base”

which, in turn, enhances the

guaranteed annual lifetime

income stream when the client

elects to receive it. This is

called a roll-up feature.

4.Variable annuities also offer

living benefit riders that will set

the withdrawal base to thehighest yearly, quarterly,

monthly or even daily value

that will determine the lifetime

income. So if the market causes

your annuity value to decline

just before you retire or want to

initiate withdrawals from yourcontract, the withdrawal calcu-

lation will be based on the best

anniversary your annuity ever

had! In other words, your

annual income will never be

affected by market declines and

is guaranteed for life!

5.Some Annuities offer en-

hanced payout benefits should

the annuitant enter a nursing

home, suffer cognitive impair-ment or be unable to perform

some of the activities of daily

living, like bathing, feeding,

dressing, continence or trans-

ferring from room to room.

Some even offer enhanced

death benefits in addition to

living benefits. Better optional

riders offer both!

6.Traditional fixed and fixed

indexed annuities both pay alifetime minimum guaranteed

rate of interest that grows tax-

deferred until withdrawn.

Variable annuities are “mutual

fund-like” investments that

offer greater growth potential

than the other two annuity

types, but have the potential

for decline in value unlike the

other two. However, with a

death benefit guarantee as well

as a joint lifetime-income riderand tax deferral, variable annu-

ities are a far superior alterna-

tive to mutual funds.

If you desire no market

risk whatsoever and wish to

receive an annual report that isalways worth more than the

previous one, a traditional fixed

annuity (TFA) is for you. For

accepting a return that would

never be negative in a declin-

ing stock market, but a rate of

return that has the potential to

be significantly higher than a

TFA in periods of a rising stock

market, a fixed indexed annu-

ity (FIA) is for you. If you desire

the upside benefits of variousequity and bond funds without

the agony of a reduced income

if the markets falter, plus a guar-

antee of a never-ending income

stream for as long as you and

your spouse survive, a variable

annuity (VA) with a living

benefit rider is for you.

Which would I recom-

mend for your portfolio desig-

nated for producing lifetime

retirement income necessary tosurvive and prosper? My answer

accounts ran out of money, how expensive were they? Even

with no money left in your

account, the highest guaran-

teed income continues to be

deposited into your checkbook

each and every month.

Withdrawing money from

your portfolio during negative

market cycles creates a sinking

fund. The TFA and FIA do not

experience losses from negative

markets and the VA — whichmay decline — offers a lifetime

income guarantee that will

never reduce or cease until you

and your spouse cease. When

compared to any other stock

market-based alternative when

systematically withdrawing,

there always exists the possibil-

ity of running out of fundsexcept in a properly structured

VA, where that would be

impossible. Remember that

IRA’s due to the required mini-

mum distribution rules are

guaranteed sinking funds. Live

long enough and the govern-

ment ensures you that they will

be depleted. But with a living

benefit rider on your IRA

annuity, when the account is

depleted the income continuesanyway and at the highest level

it ever was! Where are those

negative pundits now?

conversation and to learn a

ments made herein, please call

tion appointment. Your portfo-

lio will thank you!

Astory unfolds nearly

every week at Boston

Louis Jewelers in

Pequannock.

“Being in the estate-buy-ing business for over 25 years,

you’d think we would have

seen everything a jeweler can

see,” said co-owner Bud Mazzo.

“But it’s not true! We are still

constantly surprised!”

It’s a common occurrence

for someone to come in with an

inherited jewelry box full to the

brim with who-knows-what.

They usually feel there is noth-

ing of value and were about tothrow it away, but they almost

always find something interest-

ing. While the majority is usu-

ally old plastic costume jewelry,

we often find coins from the

1800s, Art Deco and Art

 Nouveau pieces, and antique

pocket watches. There are

always gold and silver items,

and things that are gold-filled,

which is about the same price

as sterling silver. Some folks are looking to

know what they have, while

others want to sell items that

have no sentimental value to

help pay bills. Either way,

Boston Louis doesn’t charge for

the analysis, as the adventure is

always so much fun!Co-owner Ken Boston

recounts a funny story: A long-

time client of Boston Louis

whose grandmother had passed

on and was left two large stor-

age bins of “junk.” She had

been mortified to bring it in to

have analyzed because it was

the embarrassing evidence that

her grandmother had been one

of those folks who stayed up

late, ordering jewelry fromcable TV shows at an

unhealthy frequency.

The client said that if the

channel offered a ring for sale,

her grandmother would order it

in every color stone available,

and then she never even

opened the boxes when they

were delivered. Eventually the

channel banned this woman

from buying any more jewelry,

so the grandmother would thenbuy it through a friend. The

client’s family was horrified.

The analysis of the bins

took nearly four hours, but mid-

way through, Boston noticed

through looking at the old

invoices that many of the items

purchased were done beforegold and silver had skyrocket-

ed. As horrified as the client

was, much of her grandmother’s

jewelry was now worth about

30 percent more than she had

paid for it! If the grandmother

had put her money into “smart”

things like real estate or stocks,

she would have lost money. So

you never know!

Accidents repeatedly

happen on play-

grounds in school-

yards and parks. The U.S.

Consumer Product Safety

Commission says that each

year more than 200,000 chil-

dren in the United States visit

hospital emergency rooms

with injuries suffered on the

playground. Many of those

injuries occur when a child

falls from playground equip-

ment onto the ground.

Supervision is key to prevent-

ing injuries on the play-

ground. Following these

guidelines also can keep chil-

dren safe.

Children are develop-

mentally different and should

play on equipment that is

rated for their particular age

group.

Hard surfaces around

playground equipment should

be thoroughly cushioned with

a material that will reduce

impact injuries. Mulch, pea

gravel, sand, and synthetic

rubber shavings are all accept-able materials.

The equipment should

be free of sharp points or dan-

gerous edges.

All fastening hooks and

chains, including “S” hooks,

should be secure and in good

condition.

The playground should

have adequate drainage.

Swings and other mobile

items should be located far

enough away from buildings

and other obstructions.

The playground should

be kept clean of any debris,

including cans and broken

bottles.

Make sure there are no

tripping hazards, like exposed

concrete footings, rocks and

tree stumps.

Adults should always be

present to oversee activitieson the playground.

Y

ou plot the fastest route

to your client’s office

with an on-board navi-

gation system. You use a

hands-free cell phone to leave

last-minute instructions for

your staff on the way to the

meeting. Your computer, pres-

entation materials and an

extra shirt are in the back seat.

In short, your vehicle is your

office on wheels.

It’s also a tax deduction.

Here’s what you need to

know to reap the benefits.

Overview: You can deduct

auto expenses when you own

or lease a vehicle and use it for

business. Deliveries to cus-

tomers, traveling to business

meetings, and trips to the

office supply store qualify as

business use. Commuting gen-

erally doesn’t, even if you dis-

cuss work on your phone while

stuck in traffic.

The rules: You have two alter-

natives for calculating the

deduction: actual costs or the

standard mileage rate. If you

choose standard mileage in the

first year you use a vehicle you

own for business, you can usu-

ally switch to actual costs in

later years. Choosing standard

mileage for a leased vehicle

locks you in to that method for

the term of the lease.

What’s deductible? Under the

actual cost method, deductible

costs include depreciation,

maintenance, gasoline, taxes,

insurance, parking fees, and

interest expense.

The standard mileage

rate for business use during

2013 is 56.5 cents per mile. In

addition, you can deduct the

business portion of parking

fees, tolls, certain taxes and, if

you’re self-employed, interest

on your vehicle loan.

How to benefit: Maintain a

log of business and personal

mileage and keep receipts.

Having both lets you pick the

method that generates the

largest tax deduction.

Call us if you would like

additional information on

taxes and business driving.

Dr. Ramtin Kassir has

obtained a registered

trademark for his sig-

nature K-Lift, a non-surgical

neck-lift procedure that only

requires local anesthesia and

can be done in less than one

hour. Dr. Kassir’s K-Lift pro-

cedure has high patient

demand due to its successful

and virtually undetectable

results.

“This procedure is ideal

for patients who are not will-

ing to have a surgical proce-

dure such as a facelift and

where laser alternatives will

not provide the desired

result,” said Dr. Kassir.

According to Dr.

Kassir’s paper, “Percutaneous

Suture Suspension Neck

Lift,” multiple options are

available for patients who

seek to have neck rejuvena-

tion to improve neck con-

tour. However, most proce-

dures involve submental

incisions with the associated

risk of scar formation and

extensive subcutaneous flap

elevation.”

“A typical patient for

this procedure is a woman in

her mid-30s to early 50s who

is not ready for surgery but

wants a smooth and con-

toured neck line,” said Dr.

Kassir. “It’s a very popular

procedure among celebrities,

social elites and Fortune 500

CEOs.”

With the popularity of

minimally invasive proce-

dures, the K-lift is the ideal

alternative for patients seek-

ing a fresher look without the

long downtime of a facelift

surgery.

Dr. Kassir is triple

board-certified by the

American Board of Facial

Plastic and Reconstructive

Surgery, the American Board

of Otolaryngology and the

American Board of Sleep

Medicine, and is a fellow of

the American College of

Surgeons. Dr. Kassir has been

in private practice since 1997

and has extensive experience

in the fields of facial plastic

and cosmetic surgery, endo-

scopic surgery and laser sur-

gery. His work has been fea-

Some people prefer cats,

while others’ loyalty lies

with dogs. Dogs and cats

have different personalities,

which is what draws people to

them for one reason or anoth-

er. Though different, cats and

dogs alike need to visit the vet-

erinarian for routine checkups.

Still, it seems dogs head to the

vet more frequently than cats.

Organizations like the

American Association of

Feline Practitioners and others

have uncovered the disparity

in care among dogs and cats.

Cats are less likely to receive

veterinary healthcare than

dogs, as research shows that

cats make up about one-quar-

ter of patients at small animal

veterinary clinics.

Cats have long been sec-

ond to dogs as the most popu-

lar pet. But cats may be edging

out dogs as the preferred pet,

particularly because they seem

to need less attention and

maintenance. But these same

qualities that make them

attractive pets could be putting

their health at risk. Cats that

tend to fend for themselves act

aloof and may not give their

owners any indication that

they are sick. As a result, pet

owners can become compla-

cent about cat care, simply

because they don’t spend as

much time with cats as they

may with a dog.

Dr. Katy Allen, a veteri-

narian and owner of

Canterbury Tails Veterinary

Services, has said dogs are an

“in-your-face” kind of pet.

People tend to interact more

with their dogs by taking them

for walks and playing with

them. So it’s more noticeable

when something is not right

with a dog. Cats, however, are

more stoic. When they don’t

feel well, cats will run away

and hide.

Changing vaccine sched-

ules for many animals may also

affect how often cats visit the

vet. Immunizations have

changed so that some shots can

be offered every two or three

years instead of annually.

Therefore, pet owners may not

see the need to visit the vet

unless the animal is due for a

shot. This can put a cat at risk

because it is usually during rou-

tine exams when vets uncover

something that the pet owner

may not have noticed on his or

her own.

The American Animal

Hospital Association urges cat

owners to remember that every

year that passes for a cat is

equivalent to several years for a

person, making it imperative

for cats to receive wellness

examinations, including labo-

ratory testing, once a year.

Healthy senior cats should be

examined once every six

months, as illnesses and

changes in an older cat’s health

can progress quickly.

What can you

expect at a cat’s

wellness exam? A

veterinarian will go

over a number of

things at an annual

wellness visit. Here

is a list of some

things to expect: dis-

cussion of the animal’s medical

history, testing of the cat’s

stool, examination of the cat’s

nose and nasal passages for

signs of infection, examination

of the gums, teeth and tongue,

examination of the ears to

check for mites or any dis-

charge, examination of the

eyes, examination of the body

for parasites or skin disease,

examination to determine if

there are any abnormal

growths or tenderness, exami-

nation of heart and lung

sounds, and a collection of

blood to test for heartworms,

feline leukemia and feline

immunodeficiency virus.

If any abnormalities are

suspected, more intensive test-

ing may be prescribed.

Cats are prized for their

ability to be self-sufficient and

not need the same level of

attention as most dogs.

However, these traits should

not preclude them from receiv-

ing routine medical wellness

exams.

Brought to you by Dr. Matthew

Krupnick, the owner of the Pe-

quannock Animal Hospital. He

grew up in Kinnelon and is hap-

py to be home — with his wife,

three cats and two dogs — to

ate care for your pets in the com-

munity. The Pequannock Ani-

Wayne resident

 John Porta was

recently nomi-

nated to the U.S.A. Martial

Arts 2013 “Hall of Heroes” as

one of the nation’s leading

martial arts master teachers.

Porta has been active in

martial arts since 1954 and

established his martial arts

academy in 1966. Considered

a national pioneer in martial

arts, he has been active local-

ly, nationally and interna-

tionally propagating the art

of authentic Okinawan

karate and kobudo. He also

designed and taught pro-

grams from the university

level to local community

programs for adults, children

and law enforcement offi-

cials.

“My passion is to be able

to affect lives in a positive

way and to help encourage

both adults and children to

develop their full potential

in life,” said Porta.

Porta is the founder and

chief instructor of Porta’s

Karate & Kobudo Academy,

with locations in Pompton

Lakes and Wayne. He also

holds the position of chap-

lain for the Christian Black

Belt Association and is the

senior U.S. representative

for the Okinawan Shobukan

Karate-Do Association and

the Matayoshi Kobudo Fed-

eration in Okinawa, Japan.

I

hear from people that they

are great networkers

because they attended

three events last week. Sorry,

but networking has nothing to

do with how many events you

attend. The only definition of

networking is how many sales

leads you gave out to other

people that they closed in sales

and then received payment.

Results are the only thing that

matters. Everything else is just

you being a sales person.

By generating a sales lead

— that someone else closed in

business and was paid — you

created a need for someone to

find you business. And the

greater the ratio of given ver-

sus received, the greater the

pressure on the other person

because you are going to find

someone else to give leads to

in the same industry if they

don’t step up their game.

Someone handing you a

business card without them

warming up the person to you

calling their contact is a waste

of your time. Yes, something

may happen, but the chances

are so small that you can spend

your time doing something

better. You would be better off

contacting your current cus-

tomers to see how they are

doing. If you have been per-

forming great, it would be a

good time to ask for a referral.

And if not, it is a chance to fix

a problem.

I work with a used car

salesman. At networking

events he would talk about

getting you in another car. He

was not successful. I convinced

him to mention cars for five

seconds, then talk about open-

ing his variety of connections

and how much business he has

brought to others. Now at the

end of meetings, everyone

wants to talk to him. When

was the last time you saw

everyone at a networking

meeting run to talk to a used

car salesman?

If you would like more

information on how to net-

work successfully, and on great

upcoming networking events,

please visit 24-7 Networking

Sales at www.join24-7.com or

Renovations that take

inventory of energy use

and strive toward effi-

ciency have grown increasingly

popular over the years.

Homeowners fed up with high

utility bills want to conserve

costs, and there are a number of

ways to revamp a home to be

more energy efficient.

The first step in a home

energy makeover is to find out

where your home is losing

money. Certain municipal and

environmental agencies offer

home assessments, during

which they will do a complete

walk-through of your home and

highlight areas that can be

improved. Private companies

also perform energy audits on a

home. They may be able to

point out appliances, windows

or landscaping issues that could

be compromising the efficiency

of a home. These people may

have a more intimate knowl-

edge of insulation ratings and

window efficiency ratings than

the average homeowner.

In addition to having an

energy audit on your home tosave money on utility bills, a

professional audit may make

you eligible for tax incentives

and rebates. That can mean

even more savings and may

even increase the value of your

home.

Until a thorough energy

assessment can be made, there

are some easy and relatively

inexpensive fixes any home-

owner can undertake to helpimprove energy efficiency.

Clean air filters. Trapped

dust and debris in a filter makes

furnaces and air conditioners

work harder. Once filters are

free from dust, air can blow

more smoothly through the sys-

tem.

Plug leaks. Air leaks couldbe sucking energy out of your

home and money out of your

wallet. Once you find any

leaks, you can use weather

stripping and caulking to seal

up breaches and save energy

and money.

Invest in insulation.

Install high-efficiency insula-

tion in attics and between walls

to prevent energy loss and keep

more warm or cool air in thehome. A well-insulated house

requires less heating and cool-

ing to keep the temperature

indoors stable, and that trans-

lates to less money spent on

utilities.

Swap out light bulbs.

Switching bulbs from incandes-

cent to more efficient LED orCFL bulbs can save money in

the long run.

By making a few simple

changes, homeowner can

increase their energy savings

around the house. Investing in

an energy audit and makeover

can pinpoint key areas that

need improvement.

Chicken is a versatile

choice when cookingfor family and friends

or even when preparing a meal

for one or two people. Chicken

can be cooked and seasoned in

a variety of ways, and one

chicken entree may taste com-

pletely different from another.

For many chicken lovers,

no method of cooking chick-en is more tasty than frying.

But frying isn’t very healthy,

and the desire to mimic the

taste of fried chicken without

actually frying it is what led

chef Kevin Gillespie to come

up with the following recipe

for “Cast-Iron Skillet Chicken

with Farro and BrusselsSprouts.” Included in his

cookbook, “Fire in My Belly”

(Andrews McMeel), this

recipe provides the same

crispy flavor of fried chicken,

but it does so in a much

healthier way.

Cast-Iron Skillet Chick-en

with Farro and BrusselsSprouts

Serves 4

1 cup, semi-pearled farro,

preferably Anson Mills

3 cups water

1 pound Brussels sprouts

(about 32 golf ball-size

sprouts)

2 chickens, about 4 pounds

each

2 tablespoons grapeseed oil

3 cloves garlic, shaved on amandoline

2 cups warm chicken stock

2 tablespoons olive oil1 ⁄ 4 cup lemon juice1 ⁄ 4 cup tahini sauce

Salt and ground black pepper

to taste

1.Preheat oven to 500o F.

2.Soak the farro in the water

for 30 minutes. Drain off the

water and rinse the grains with

cold water. Put the farro in a 2-quart saucepan and add enough

fresh cold water to cover. Bring

to a boil, then cut the heat

down to low, cover, and simmer

until tender yet still chewy,

about 20 minutes. Drain off any

excess liquid and spread the

farro on a baking sheet to cool.

You should end up with about 2

cups of cooked farro.

3.Meanwhile, peel off the outer

green leaves of the Brussels

sprouts until you have 4 cups.

Reserve the inner heads for

another use.

4.Cut up the chickens intoleg-thigh and breast-wing por-

tions with the skin still

attached. For each leg-thigh

portion, bend the leg away

from the body, cut down to

the joint, then bend the joint

to break it. Cut between the

ball and socket, then down

around the carcass to remove

the entire leg-thigh portion.

For each breast-wing portion,

cut down along one side of the

breastbone, then run the knife

along the contour of the rib

cage and around the wishbone

to begin removing the breastfrom the body. When you get

to the joint connecting the

wing to the body, grab both

wing and breast together and

cut through the wing joint to

remove breast and wing in

one piece. Score the meat

around the next wing jointclosest to the breast, cutting

down to bone and scraping

with the knife so the bone is

fairly clean. Bend the joint to

break it and remove the wing.

The resulting boneless breast

with the first wing bone

attached and exposed is called

an airline breast. It looks nicer

than the boneless breast by

itself, and the wing bone helps

keep the meat moist duringcooking.

5.Cut off any excess flaps of

skin and pat the chicken very

dry with a paper towel.

Generously season the chicken

on all sides with salt and pep-

per. Heat two large cast-iron

skillets over medium heat. Add

enough grapeseed oil to coat

the bottom of each pan. Put

the chicken legs in one pan,

skin side down, and put thebreasts in the other pan, also

skin side down. Crank the heat

up to medium-high and cook

until the skin is nicely

browned, about 4 minutes. Noneed to peek; just let the chick-

en cook undisturbed. When

the skin is browned, it will

release easily from the pan and

the meat will start to pull away

from the bone. Turn the leg-

thigh portions and cook for 1

more minute skin side up, but

let the breasts cook skin side

down the entire time.

6.Place both skillets in the

oven and roast for 5 minutes.Carefully pull out the pan with

the legs, turn the legs skin side

down once again, and return to

the oven for 3 more minutes.

The breasts will still be skin

side down, remember; they do

not get turned at all. After a

total of 8 minutes, carefully pull

both skillets from the oven,

transfer the chicken to a large

plate, and tent with foil to keep

warm.7.Using mitts carefully pour

out and discard the accumu-

lated fat from the pans. Heat

one pan over high heat until

smoking hot. Add the cooledfarro to the pan, spreading to

evenly cover the bottom (save

any leftover farro for another

use; it makes a great salad).

Again with the mitts, grab the

handle and shake and toss the

farro so it heats through even-

ly. After about 3 minutes, the

farro will begin to caramelize

and puff. Add the Brussels

sprout leaves and stir nonstop

for 1 minute. Add the garlicand warm chicken stock, then

shake and toss the mixture for

2 more minutes, until almost

all of the liquid is gone. The

farro will absorb the stock and

release its starch to thicken

the remaining liquid, creating

a creamy mixture.

8.Stir in the olive oil, lemon

juice, a pinch of salt, and any

accumulated chicken juices

from the plate. Taste andadjust the seasonings as need-

ed; with all that lemon juice

in the farro, the dish screams

for salt to balance it out.

9.To serve, drizzle a circle of tahini sauce in the center of

the plate, and top with a

scoop of farro and a chicken

breast and leg.

As the Wayne Rotary Club brought “Christmas in July” to the Preakness Health Care Center inWayne, Santa (who looked a lot like Wayne Rotarian Joe Graziano) went from resident to resident, passing out gifts and providing encouragement. Wayne Rotary annually brings Christmas in July

because this is a time when families are on vacation and make fewer visits to their loved ones innursing homes. Nearly a thousand gifts were distributed to residents.

Music, dancing, decorations and carols added to the holiday spirit.
