    My column today starts

    with an e-mail I re-

    ceived from a client;

    no doubt he just forwarded it to

    me from one of his buddies who

    got it from one of his friends or

    co-workers. Ive devoted the

    next two paragraphs to sharing itwith you.

    The Food Stamp Program,

    administered by the U.S. Depart-

    ment of Agriculture, is actually

    proud of the fact it is distributing the

    greatest amount of free meals and

    food stamps ever.

    Meanwhile, the National

    Park Service, administered by the

    U.S. Department of the Interior,

    instructs us: Please Do Not Feed

    the Animals. Their stated reasonfor the policy is because the ani-

    mals will grow dependent on hand-

    outs and will not learn to take care

    of themselves. This ends todays

    lesson.

    More people than ever in

    U.S. history are depending on the

    government to pay for their food,

    medical care and housing and I

    want to share with you a phone

    call I received last week in

    response to advertising a house I

    own in Morris County for rent.

    The caller was excited to hear

    that the price was rather reason-

    able for a three-bedroom rental at$1,800 per month. She told me

    she has four children and was

    being evicted from her current

    home because the county found

    out that she and her kids were liv-

    ing in a two-bedroom rental,

    which was determined to be

    against the law. Three bedrooms

    would be acceptable.

    Arent you excited? she

    asked. Before I could answer, she

    chimed in again stating that the

    county would pay all but $60 of

    her $1,800 monthly rent obliga-

    tion. I asked about her husband,

    to which she replied, I haventgot one, but the father of my four

    kids visits often.

    So what does he do? I

    inquired. Her response severely

    surprised me. He works in man-

    agement and makes around

    $70,000 annually before any

    bonuses are paid.

    Really, I replied in amaze-

    ment. So the town pays your

    rent. Anything else?

    Yes, she proudly stated.

    They pay for all of our food,

    medical and busing the kids to

    school.

    I was really getting angry at

    this point. Your husband makes$70,000 annually and youre on

    the county dole? She responded

    that it was so expensive to live in

    the area and she needed some

    help. So what gives her the right

    to live in an expensive area that

    she cant afford? Answer: noth-

    The American Tax-payer Relief Act of

    2012 was signed by

    the President on Jan. 2, 2013.The most visible tax

    change in the new tax law is

    the two percent increase inthe payroll tax. Everyone who

    draws a paycheck or has self-

    employment income will paymore in 2013. If you have

    $40,000 in wages in 2013, you

    will pay an additional $800 ofpayroll taxes over what you

    paid in 2012 on the same

    amount of wages.

    The new law keeps the

    income tax rates the same as

    they were in 2012 for most

    taxpayers and makes them

    permanent. The new 39.6 per-

    cent tax rate will apply to sin-

    gle taxpayers making over$400,000 and couples making

    over $450,000.

    The law puts limitations

    on the itemized deductions and

    personal exemptions for singles

    married couples making over

    The Riverdale Womans Club

    is hosting their second annual

    Scrapbook CROP Fundraiser

    A number of education

    tax incentives were extendedor made permanent in the new

    mum tax (AMT) has been

    permanently patched with a

    2012 exemption amount of

    $50,600 for unmarried taxpay-

    ers and $78,750 for marriedtaxpayers. The exemption

    amount will be adjusted annu-

    ally for inflation.

    On the business front,

    the 50 percent bonus depreci-

    ation and the $500,000 busi-

    ness expensing option are

    extended through 2013.

    There are also numerous busi-

    ness tax incentives extended

    through 2013.

    Hurricane Sandy,

    which blew throughthe northeastern

    United States in late October

    of 2012, left a path of destruc-

    tion in its wake thanks to a

    record-breaking low pressure

    system and a tidal surge that

    caused many coastal areas to

    be submerged in water. The

    storm crippled transportation

    systems, caused epic flooding,

    even in areas that never had

    water breach storm wallsbefore, knocked out power for

    millions of people and was

    responsible for scores of fatal-

    ities.

    Although many people

    heeded the evacuation warn-

    ings in areas expected to be

    hit the hardest, others took

    precautions by stocking up on

    food, water and battery-pow-

    ered items. But no one could

    fathom the scope of damageSandy would bring. In the

    wake of Sandys destruction,

    many people have resolved to

    go to greater lengths to pre-

    pare for future disasters.Those making plans for

    change in the new year may

    want to move disaster pre-

    paredness to the top of their

    to-do lists.

    Record-breaking storms

    have increased in frequency

    and intensity in recent years.

    Hurricanes Katrina, Irene and

    Sandy are each glaring exam-

    ples of just how devastating

    such storms can be, and howimportant it is to be prepared

    for such disasters. The follow-

    ing are a few preparation sug-

    gestions from FEMA, the

    Federal Emergency Manage-

    ment Agency.

    Pack an emergency go bag.

    Individuals may be urged to

    evacuate their homes when

    certain storms are on the

    horizon. Doing so quickly and

    effectively means havingpacked items at the ready to

    grab at a moments notice.

    Pack several changes of

    clothes, some cash,

    medications, identification,snacks and water, a first-aid

    kit and a list of important

    phone numbers.

    Have an emergency pre-

    paredness kit. People who are

    not in the immediate danger

    zones and will be staying put

    can have a kit at home that

    includes the following items:

    one gallon of water for each

    person for three days

    nonperishable foods thatyour family has enjoyed

    before and will last at least

    three days

    baby wipes and garbage

    bags for personal sanitation

    plastic sheeting

    duct tape

    wrench or pliers

    whistle

    batteries and battery-oper

    ated flashlights and radios

    can opener cell phone with charger

    infant formula and diapers,

    strokes in a Taiwanese study.

    Among more than 100,000

    people, those who had their

    teeth scraped

    and cleaned by

    a dental profes-

    risk of heart

    attack and a 13percent lower

    never had a

    dental cleaning.

    Hospital in Tapei, Taiwan.

    Dr. Chen said profes-

    sional tooth scaling appearsto reduce inflammation-caus-

    ing bacterial growth that can

    lead to heart disease or

    stroke.

    ing! She and her boyfriend are

    scamming the system for their

    own personal advantage and

    getting away with it. The gov-

    ernment cannot force people

    to marry and therefore she is a

    stay-at-home, non-working

    mother with four illegitimate

    kids. She is, in my opinion, a

    criminal, who has legally

    cheated the system for years.

    Consequently, I did not enter-

    tain her tenancy!

    Is there a lesson to be

    learned from these two related

    stories? The first one is have a

    family without the sanctity of

    marriage. The government

    created and perpetuated its

    own problem of abusive

    behavior by rewarding this

    behavior, instead of cutting-

    off aid after the second, third

    or fourth child. Secondly, if the

    animals are trained never to

    hunt because food is always pro-

    vided, youre going to have a lot

    of fat, lazy animals waiting for

    more hand-outs! Worse yet, the

    rest of us continue to pay for

    this behavior in perpetuity!

    One simple solution would be

    to demand a level of work and

    activity for the public good

    and welfare in order to receive

    aid for all of those able to

    work. No work: no pay and no

    benefits. I should add here

    that the prospective tenant

    who called me works part time

    off the books at a local store so

    she produces not a single

    penny in revenue to off-set

    the thousands of county dol-

    lars she receives every month.

    She has nothing to do to

    increase her income except to

    make more children with her

    boyfriend for the monthly

    reward. Given the chance to

    do the same thing, how many

    couples would not marry, have

    the same amount of kids and

    collect income, housing and

    benefits for decades? My guess

    is, this has and will continue

    to be a growth industry, until

    the government puts an end

    to it or modifies it! And that

    is part of todays lesson too.

    What about pride, up-bring-

    ing, morals and ethics? And

    not to mention religion?

    Shouldnt these also be

    factors?

    Well, introduce depraved

    violent video games into our

    culture, remove God from the

    pledge of allegiance and from

    the classrooms of American

    schools, and the results are an

    increase in violence (some

    involving guns), a decrease in

    academic achievement and an

    acceptance of mediocre

    grades. In turn, this leads to a

    dependence society, drain-

    ing the fortune and futures of

    hard-working, overtaxed

    Americans, both young and

    old, who struggle each day to

    build a platform of financial

    independence and might

    wind-up saying, Why didnt I

    think to remain single, not

    find a job and live off the gov-

    ernment for the rest of my

    life?

    This is a viscous cycle to

    say the least. The government

    must put together a policy

    after a reasonable amount of

    unemployment time that

    states if youre physically able

    and you dont work, you wont

    use a variety of environ-

    ments and tools to pro-

    vide therapy to patients.

    Aquatic therapy is the use of a

    water environment and

    specifically designed activities

    to enhance and restore a per-

    sons functional abilities.

    Some of the inherent

    properties of water make it a

    very beneficial environment

    for many patients. The buoy-

    ancy of the water provides

    assistance with movement. It

    also decreases the effect of

    gravity on the body, which

    enables patients to support

    themselves more easily and to

    bear weight on weak or

    painful extremities due to the

    decreased stress placed on

    muscles, joints and bones.

    Aquatic therapy is pro-

    vided in a heated pool, tem-

    peratures ranging from 9296

    degrees. The warm water

    relaxes muscles and allows for

    improved joint range of

    motion.

    Hydrostatic pressure is

    the pressure of the water on

    the body. This pressure of the

    water surrounding the body

    helps circulate blood from the

    legs to the heart, often reduc-

    ing swelling in the ankles and

    feet. Once swelling is reduced,

    joint tenderness may decrease

    and range of motion can

    increase.

    Water provides resist-

    ance to movement, allowing

    for improvement in balance

    and strength in all muscle

    directions. On land, resistance

    is felt in only one direction,

    which leads to an over devel-

    opment of some muscles and

    under utilization of others.

    Martin Luther King,

    Jr. played a pivotal

    role in race rela-

    tions in the United States for

    nearly a decade. He helped

    secure the end of legal segre-

    gation of African-American

    citizens, created the Civil

    Rights Act of 1964 and served

    as a source of inspiration for

    black individuals across the

    globe.

    Dr. King did not begin

    his life as a crusader or public

    figure. He had much more

    modest beginnings in rural

    Atlanta. Born Michael King,

    Jr., he was the middle child of

    Michael King, Sr. and Alberta

    Williams King. Michael King,

    Sr. served as pastor of

    Ebenezer Baptist Church

    upon the death of his father-

    in-law, who was the churchs

    prior pastor. At this point, the

    elder king decided to change

    his name to Martin Luther to

    honor the famed Protestant

    religious leader. His son soon

    decided to adopt the name as

    well.

    A religious family, the

    Kings tried to shield their

    children from the realities of

    racism that were alive and

    well in the country. They

    believed racism and segrega-

    tion to be an affront to Gods

    will, and Martin, Sr. discour-

    aged separation of class and

    taught these lessons to his

    children. Those lessons res-

    onated with Martin, Jr.

    Dr. King attended

    Booker T. Washington High

    School and was so advanced

    he was able to skip both the

    9th and 11th grades. He went

    on to college at the age of 15,

    graduating from Morehouse

    College in 1948 with a degree

    in sociology. In his junior year

    of college, King enrolled in a

    Bible class that sparked a

    renewed enthusiasm for the

    ministry. He later enrolled in

    the liberal Crozer Theologi-

    cal Seminary in Chester,

    Pennsylvania, where he

    received a Bachelors of

    Divinity. Later he attended

    Boston University and earned

    a Ph.D. at the age of 25. It was

    during his time in Boston that

    he met his future wife, Coretta

    Scott. While he was complet-

    ing his dissertation work, Dr.

    King became the pastor for

    the Dexter Avenue Baptist

    Church of Montgomery,

    Alabama.

    Martin Luther King, Jr.

    became directly involved in

    the civil rights movement

    after the head of the local

    NAACP chapter in Mont-

    gomery met with him on the

    night that Rosa Parks was

    arrested for failure to give up

    her bus seat to a white passen-

    ger. Dr. King helped institute

    the Montgomery Bus Boycott.

    During this time, African-

    Americans refused to ride

    the public bus system in

    Montgomery. The boycott

    lasted 382 days. During that

    time, Dr. Kings home was

    bombed due to his involve-

    ment in the boycott, and he

    was arrested for conspiracy.

    His work paid off on

    December 21, 1956, when the

    Supreme Court ruled that

    racial segregation on public

    transportation was illegal.

    Dr. King promoted non-

    violent protests against unfair-

    ness to the African-American

    community, urging civil dis-

    obedience and peaceful pro-

    tests, tenets that formed the

    basis for the Southern

    Christian Leadership Confer-

    ence, or SCLC, which he led.

    He participated in numerous

    nonviolent protests and was

    arrested several times. During

    one stint in jail, he penned his

    famous, Letter from a

    Birmingham Jail.

    Dr. King established a

    relationship with fellow

    African-American civil rights

    activist Bayard Rustin, who

    shared similar interests, in-

    cluding the teachings of

    Gandhi. Rustin would serve as

    Kings mentor and also was

    the main organizer of the

    March on Washington that

    took place on August

    28, 1963. Approximately

    250,000 demonstrators were

    involved in the march, and it

    was the largest demonstration

    in the nations capital up to

    that time. In front of the

    Lincoln Memorial, Dr. King

    issued his famed I Have a

    Dream speech. He later met

    with President John F.

    Kennedy to appeal for greater

    rights for African-Americans

    and called for an end of segre-

    gation.

    As a result of his civil

    rights efforts, Dr. King was

    awarded the Nobel Peace

    Prize on December 10, 1964,

    at the age of 35. He was the

    youngest person ever to

    receive the honor. He donated

    all of the prize money to his

    racial equality effort.

    Through the late 1960s,

    Dr. King expanded his Civil

    Rights Movement to other

    cities. But he was often met

    with criticism, especially

    when he appealed to white

    middle-class citizens. Many

    militant black organizations

    considered Kings methods too

    weak and ineffective. His sup-

    port was faltering and Dr.

    King grew weary of marches,

    jail and protests. However, in

    April of 1968, a labor strike in

    Memphis drew Kings atten-

    tion, and he gave a speech

    Presidential Medal of Freedom

    in 1977. Many streets have

    been renamed in his honor,

    and Dr. King remains a source

    of inspiration decades after his

    Dog owners should take

    coughing very seri-

    ously. The issue could

    be tied to kennel cough, pneu-

    monia, canine flu or similar

    bronchial issue. No matter the

    core issue, multiple rounds of

    medications may have already

    been tried, only to find that

    the pet is still hampered by a

    coughing condition caused by

    some unknown organism, or

    pathogen. Perhaps, as is possi-

    ble with most organisms, the

    involved strains have devel-

    oped a resistance to common

    prescriptions.

    Causes of coughing

    Pneumonia, kennel

    cough, a foreign object,

    household products (anything

    that can be aerosolized) or

    genetic conditions such as tra-

    cheal hypoplasia can cause

    coughing issues. The most

    common infectious cause is

    kennel cough, also referred to

    as Bordetella (bordetellosis)

    or tracheobronchitis, and is

    among the more typical upper

    respiratory issues that may

    affect dogs.

    Kennel cough

    This common issue is

    highly contagious and is

    known to affect a high per-

    centage of dogs. The boarding

    home or the groomers are

    easy places to contract the ill-

    ness but exposure can be any-

    place dogs contact each

    other. Causative agents of,

    or contributors to, this com-

    mon upper respiratory issue

    may include: para influenza,

    Bordetella bronchiseptica

    and mycoplasma. Canine

    adenovirus, reovirus and

    even the canine herpes virus

    have been known to be con-

    tributors. Usually, more than

    one of these are contribu-

    tors. Initial symptoms

    include a hacking, dry

    cough, with a retching-like

    action. Often, the sound

    exhibited may resemble that

    of honking or what a dog

    with a hairball may sound

    like. Occasionally, the cough

    is accompanied by a nasal dis-

    charge that is quite watery,

    rather than heavy. Advanced

    cases may lead to lethargy,

    along with fever and lack of

    appetite; occasionally, pneu-

    monia can result.

    Pneumonia issues

    Pneumonia has various

    forms, but as an inflammatory

    illness of the lungs, it can be

    life threatening, as it strongly

    affects the ability of the body

    to absorb oxygen from air

    taken in. With an infection

    resulting in pneumonia, the

    sacs in the lungs, responsible

    for collecting the oxygen

    needed by the body, become

    filled with fluid, thereby

    inhibiting the ability to col-

    lect enough oxygen to support

    the body. Symptoms of pneu-

    monia consist of coughing,

    elevated fever, difficulty

    breathing and chest pain. If

    these signs are noted then an

    emergency veterinarian visit

    is recommended.

    Dog flu

    Canine influenza (dog

    flu), is a highly contagious res-

    piratory infection caused by a

    virus. Canine influenza is a

    relatively new condition. The

    first documented case in the

    U.S. was in January

    2004 at a Grey-

    hound racetrack in

    Florida. There have

    since been outbreaks

    throughout the coun-

    try. The canine

    influenza virus is

    closely related to

    the virus that caus-

    es equine influenza. It is

    thought that the equine

    influenza virus mutated to

    produce the canine influen-

    za virus.

    Two clinical syndromes

    have been seen in dogs

    infected with the canine

    influenza virus a mild

    form of the disease and a

    more severe form that is

    accompanied by pneumo-

    nia.

    Dogs suffering from the

    mild form of canine influenza

    develop a soft, moist cough

    but some dogs have a dry

    cough similar to the kennel

    cough caused by the

    Bordetella bronchiseptica/

    para influenza virus complex.

    Therefore, it is not uncom-

    mon for true dog flu cases to

    be misdiagnosed as kennel

    cough. Dogs with the mild

    form of influenza may also

    have a thick nasal discharge,

    which may be caused by a sec-

    ondary bacterial infection.

    Dogs with the more

    severe form of canine influen-

    za will develop a high fever

    and show clinical symptoms

    of pneumonia, such as

    rapid, labored breathing.

    Pneumonia may be caused by

    a secondary bacterial infec-

    tion.

    Because this is a newly

    emerging disease, almost all

    dogs, are susceptible to infec-

    tion and have no immunity.

    a patients ability to partici-

    pate in land based physical

    therapy comfortably. In water,

    the pull of gravity on the body

    is not as strong as on land;

    therefore, motion and func-

    tional activity can be more

    comfortable in the pool.

    Water supports the body,

    reduces joint stress and pro-

    vides resistance, as well as

    assistance to movement.

    Although aquatic thera-

    py does not work for people

    with some medical conditions,

    it is very beneficial for most

    patients with various diseases

    and conditions. This form of

    therapy helps to improve

    blood circulation, muscle

    strength, balance and en-

    durance. It is also helpful in

    reducing blood pressure and

    joint pains in people who suf-

    fer from arthritis. If you feel

    a recent Women Fight

    Back Self-Protection 101

    seminar presented by

    Portas Karate Academy.

    The free community

    program was booked to

    capacity and attended by

    women of all ages from high

    school teens through senior

    citizens. Women participated

    in situational awareness

    training along with learning

    various self-protection tech-

    niques that covered a wide

    range of assault situations.

    During the program, addi-

    tional attention and special

    training were given to those

    in attendance, including law

    enforcement officials, securi-

    ty personnel from local

    churches and school teach-

    Remodeling a basement

    is a popular home

    improvement project.

    A finished basement makes

    the space more functional and,

    when done correctly, can add a

    considerable amount of living

    space to a home.

    Finishing a basement

    pays dividends in additional

    space in a home that doesnt

    require the same level of

    investment as putting an addi-

    tion on the house. Also, the

    groundwork for a finished

    room is already there, as most

    basements are already set up

    with a poured concrete floor

    and some walls, usually cinder

    blocks. Some electrical com-

    ponents, plumbing and the

    creature comforts of drywall

    and a more inviting floor

    might be all thats necessary to

    finish a basement. The process

    can be labor-intensive, and

    many people prefer to leave it

    to a professional contractor.

    Whatever finishing method is

    chosen, homeowners should

    follow the proper procedures

    when doing the work.

    DO start with a detailed plan.

    Measure out the basement

    and mark any items that

    cannot be moved, such as a

    furnace, water heater or

    pipes. Create a design

    board that showcases the

    materials you plan to use

    on the project. Think

    about ways you plan to

    arrange furniture and con-

    sider all of the possible uses

    for the room. Will it be a

    home theater? Will some-

    one be sleeping down

    there? Each scenario will

    require certain amenities

    and safety requirements.

    DONT plan to finish the

    entire basement. Doing so

    will leave you without a stor-

    age or utility area where you

    house holiday decorations,

    tools, luggage and similar

    items.

    DO get the scoop on building

    codes. Knowing what the

    municipality allows in base-

    ment remodeling will help you

    to customize a plan that is

    functional, safe and legal. No

    one wants to be slapped with

    fines for failing to follow the

    rules. Plus, failure to meet

    building codes could mean the

    work that has been done must

    be torn out and redone. It pays

    to follow the chain of com-

    mand and secure permits while

    having all work inspected.

    DONT overlook adequate

    lighting in your refinishing

    plan. A basement is likely one

    area of the house that has lim-

    ited natural light pouring in.

    With traditionally small win-

    dows, or no windows at all, a

    basement needs ample lighting

    in its design scheme. This may

    include a combination of over-

    head and task lighting. Ample

    lighting will help the room feel

    like part of the house and not

    just a forgotten storage area.

    DO take into consideration

    moisture issues in the base-

    ment. Many basements are

    plagued by moisture issues

    ranging from water seepage to

    condensation forming on

    walls. These situations may

    vary depending on the weath-

    er throughout the year.

    Certain materials may need to

    be used to mitigate water issues

    before finishing can take

    place. The installation of

    water-barrier systems, drain-

    age, sump pumps, or encapsu-

    lation products could drive up

    the cost of a basement renova-

    tion. It is essential to have a

    professional assess the base-

    ment water issues prior to

    starting and finishing work.

    DONT simply cover up

    potential hazards, such as mold

    or mildew. Have them treated

    instead. Otherwise, you could

    have a breeding ground

    behind drywall that could lead

    to unsafe conditions in the

    home.

    DO have a radon test. Radon

    is a hidden killer that can

    cause lung cancer. Because it

    occurs naturally in the soil and

    water surrounding a home and

    is impossible to detect without

    a specialized test, many people

    are unaware of the presence of

    radon until it is too late.

    Radon may be more concen-

    trated in the basement, where

    the foundation is touching the

    soil. Therefore, rule out radon

    before considering renovation

    of a basement area.

    DONT limit furniture choic-

    es to one type. You may need

    to be flexible in your furniture

    choices, even selecting modu-

    lar pieces, like sectionals,

    because entryways to base-

    ments may have small door-

    ways or obstructions that make

    adding furniture more chal-

    lenging.

    DO keep the possibility of

    flooding in the back of your

    head. Homes that are near

    waterways or at low elevation

    may be at risk of flooding.

    Basements are especially sus-

    ceptible to flood damage.

    Therefore, think about the

    practicality of finishing a base-

    events. For those heading to

    the big game this year or sim-

    ply hosting their own Super

    Bowl party, the following

    recipe for Thomas

    Marinated Gamecocks withPolenta from Debbie

    Mooses Fan Fare (Harvard

    Common Press) is perfectly

    suited for tailgate parties or

    get-togethers at home.

    Thomas Marinated Game-

    cocks with Polenta

    Serves 414 cup honey14 cup soy sauce

    2 tablespoons chopped garlic

    2 tablespoons chopped freshginger

    1 tablespoon freshly ground

    black pepper

    1 cup water

    2 Cornish game hens with

    Polenta (at right)

    1.Combine the honey, soy

    sauce, garlic, ginger, pepper,

    and water in a smallsaucepan. Cook over medi-

    um-low heat, stirring con-

    stantly, until completely

    blended. Allow to cool to

    room temperature.

    2.Use sharp kitchen shears to

    cut the game hens in half

    down the center of the back

    and breast, and place in a

    large zipper-top plastic bag.

    Pour in the marinade, seal

    the bag and refrigerateovernight.

    3.When ready to cook, pre-

    pare a medium-low fire in a

    charcoal grill or preheat a gas

    grill.

    4.Remove the hens from the

    marinade (discard the mari-

    nade) and grill until the

    juices run clear when the

    meat is pierced with a sharp

    knife, about 5 minutes per

    side. Serve over the polenta.Polenta

    2 teaspoons butter or olive

    oil

    1 teaspoon red pepper flakes

    1 tablespoon minced garlic

    1 cup finely ground cornmeal

    112 cups chicken broth

    112 cups water12 cup half-and-half14 cup grated Parmesan

    cheese, or to taste

    1 cup frozen green peas,

    thawed

    2 tablespoons julienned fresh

    basil

    Salt and freshly ground black

    pepper to taste

    1.Heat the butter in a large

    pot over medium-high heat.Add the red pepper flakes

    and garlic. Reduce the heat

    and cook until the garlic

    becomes opaque, about 30

    seconds. Add the cornmeal,

    then whisk in the chicken

    broth and water. Add salt

    and pepper.

    Bring the mixture to a

    low boil, then reduce the heatto low and simmer, whisking

    occasionally, until the mixture

    thickens, about 20 minutes.

    2.Whisk in the half-and-half.

    If the mixture is too thick,

    add a bit more chicken broth

    or water. Whisk in the

    Parmesan, peas and basil.

    Taste and add more salt and

    pepper, if desired. Servewarm.

    Note: Those heading to the

    game can prepare the mari-

    nade and marinate the chick-

    en the day before. However,

    make the rest of the dish at

    the tailgate.
