Black Tea
Also known as Red Tea in China or Qi Hong
The most popular class of tea outside of Asia is the second most
popular tea in the world. Known as black tea, the Chinese origi-
nally referred to this as red tea. The color of tea was based on
the liquor of the tea, not the leaf. Black tea is not fermented, it
is oxidized. Complete oxidation creates this truly remarkable

Green Tea
The manufacture of green tea has long been the prerogative of
China. The tradition of ancestral techniques - which varied from
region to region, or even from village to village - still persists to
this day. The traditional methods produce a quality of tea which
is remarkable for the delicacy of its aroma, the fine presentation
of the leaf and the flavor of the liquor. Green teas do not
undergo oxidation. While the methods of manufacture may vary
greatly in detail according to the region or country where the
teas are made, the three manufacturing stages aimed at
preventing the leaves from oxidizing remain the same: firing,
rolling, drying.

Pu-Erh Tea
Pu-erh is a fermented tea primarily from the Yunnan and
Sichuan provinces of China. It can be made either as a loose leaf
tea or compressed into cakes for aging. The cakes were
originally made to reduce the bulk for transporting for export.
Pu-erh teas are known for their healthy properties including
lowering cholesterol and preventing so-called bad cholesterol
from forming in the arteries. Chinese people drink Pu-erh after
a heavy meal to aid with digestion and the metabolism of fats.
Chinese women drink Pu-erh to stimulate weight loss. You can
re-steep Pu-erh multiple times with no loss of flavor.

Oolong Tea
Also known as Blue Tea, Ching Cha or Wulong
The oxidation process is interrupted part way through - unlike
green teas which are not oxidized at all, and black teas, which
are fully oxidized. In Chinese, Wu Long means literally "black
dragon" and refers to the very dark color frequently taken on by
the leaves during drying.

White Tea
White tea in its original, pure form consists of only the tender,
unopened budsets of particular varieties of China bush tea
plants that are cultivated especially for this class of tea in Fujian
Province on the eastern coast of China. In the best of years, the
production of white tea is small. The manufacture of white tea
is an ancient process that predates all other tea manufacture.

Their 1894 building is one of the oldest operating business struc-
ture in the city. FEZZIWIG’S is a gourmet food and wine store
that also teaches culinary classes, wine schools and tea schools.
The staff hosts Wine Pairing Dinners about once-a-month. They

Chai
The world’s largest producer of teas in general is India. Chai is a
delicious mixture of tea or Rooibos, spices, and sugar, infused in
boiling whole milk. Cardamom, cinnamon, ginger, cloves, pep-
per, mace and nutmeg are the primary spices used. Chai is sold
everywhere in India, in the streets, on trains by chai-wallahs, or
roving tea sellers. The best teas that India produces are Dar-
jeelings and the finest Assams and are beyond the means of
local people and are exported.

Mate & Guyusa
Pronouced MAH-TAY. While not a tea, Mate is often known as
the “tea of the Jesuits” or “Brazilian Tea”. Mate is an infusion
that is drunk in South America especially in Argentina, Chili,
Paraguay, Uruguay and Southern Brazil. The plant used, the
“yerba mate” does not belong to the camellia (tea) family but to
the hollies as does Guyusa. Mate and Guyusa is very rich in
caffeine. Not recommended for before bedtime.

Rooibos
Regarded as the national drink of South Africa, this red “tea” is
made from the Rooibos plant—a bush growing about five feet
tall. Enjoyed by the people of South Africa for over three hun-
dred years, the Rooibos has been cultivated and marketed since
the 1930s. The harvest takes place in South Africa during the
first three months of the year which are the summer months in
South Africa. The red color comes from the oxidation that takes
place during the time the chopped and crushed stems are
heaped in mounds and sprayed with water. Rooibos is naturally
caffeine free.
