Pu-Erh Tea

Pu-erh is a fermented tea primarily from the Yunnan and

Sichuan provinces of China. It can be made either as a loose leaf

tea or compressed into cakes for aging. The cakes were

Chai

The world’s largest producer of teas in general is India. Chai is a

delicious mixture of tea or Rooibos, spices, and sugar, infused in

boiling whole milk. Cardamom, cinnamon, ginger, cloves, pep-

per, mace and nutmeg are the primary spices used. Chai is sold

everywhere in India, in the streets, on trains by chai-wallahs, or

roving tea sellers. The best teas that India produces are Dar-

jeelings and the finest Assams and are beyond the means of

local people and are exported.

Mate & Guyusa

Pronouced MAH-TAY. While not a tea, Mate is often known as

the “tea of the Jesuits” or “Brazilian Tea”. Mate is an infusion

that is drunk in South America especially in Argentina, Chili,

Paraguay, Uruguay and Southern Brazil. The plant used, the

“yerba mate” does not belong to the camellia (tea) family but to

the hollies as does Guyusa. Mate and Guyusa is very rich in

caffeine. Not recommended for before bedtime.

Rooibos

Regarded as the national drink of South Africa, this red “tea” is

made from the Rooibos plant—a bush growing about five feet

tall. Enjoyed by the people of South Africa for over three hun-

dred years, the Rooibos has been cultivated and marketed since

the 1930s. The harvest takes place in South Africa during the

first three months of the year which are the summer months in

South Africa. The red color comes from the oxidation that takes

place during the time the chopped and crushed stems are

heaped in mounds and sprayed with water. Rooibos is naturally

caffeine free.
