ZANOLLI ROTOR WIND OVEN
ROTOR WIND is a convection oven with revolving rack designed for a rapid insertion and removal, operating with gas, diesel or electricity, suitable for baking big quantities of bread and pastry. It can be supplied with a traditional electromechanical control panel or in theversion with computerized electronic panel (optional).
GAS - DIESEL VERSIONS: The heat exchanger is constructed in special stainless steel and enables a very high output with a significant energy saving. Besides the traditional version with front burner, the ROTOR WIND is also manufactured with rear burner (suitable for long and narrow rooms).
ELECTRIC VERSION: The air flow is crossing a group of armor-plated heating elements laid out in order to ensure an optimal performance of the oven.

WATER CHILLER - IRTECH, ITALY
MONSOON: instant water chillers exploit a system with solid storage that eliminates any possibility of contaminating the cooled water with Freon and oil leaking from a damaged refrigerating circuit. The use of the standard water supply pressure avoids the expensive installation and maintenance of the autoclave. The cooled water inside the stainless steel pipeline never comes in contact with open air, thus eliminating the problem of bacteria proliferation. A thermometer allows a constant control of the working temperature. A further safety system prevents water from freezing inside the pipeline. The tank contains water to store cold and thermal exchange.

RIO S : Simple Water dosing station. It allows the collection of water by setting the desired quantity in an extremely simple way. A standard feature of this device is the visual display of the water discharge temperature.
RIO M : Water dosing and mixing station the RIO M derives from Water dosing station RIO S with the addition of an external thermostatic mixing for the semiautomatic mixing of water.
RIO MA : Dosing and mixing station capable to dose water and carry out the automatic mixing of the inflowing water. There are no motorized mixing valves, the mixing is controlled by means of an impulse system and the special hydrostatic dampers. The station is equipped with a needle probe to allow the visualization on the display of the temperature of the flour or mixture. The By-pass for the pre-discharge of the water that is not at the set temperature works automatically and can be excluded through the keyboard. The water system for the summer / winter switch is embedded in the station.
