IMPORTANCE OF VEGETABLES

'Vegetables' are important protective food and highly beneficial for the maintenance of health and prevention of disease. They contain valuable food ingredients which can be successfully utilized to build- up and repair the body. Vegetables are valuable in maintaining alkaline reserve in the body. They are valued mainly for their high vitamin and mineral contents. Vitamins A, Band C are contained in vegetables in fair amounts. Faulty cooking and prolonged careless storage can, however, destroy these valuable elements. There are different kinds of vegetables. They may be edible roots, stems, leaves, fruits and seeds. Each group contributes to diet in its own way. Roots are high in energy value and good sources of vitamin B group. Seeds are relatively high in carbohydrates and proteins. Leaves, stems and fruits are excellent sources of minerals, vitamins, water and roughage. It is not the green vegetables only that are useful. Farinaceous vegetables consisting of starchy roots such as potatoes, sweet potatoes, the tubers arid legumes are also valuable. They are excellent sources of carbohydrates and provide energy to the body. . To derive maximum benefits of their nutrients, vegetables should be consumed fresh as far as possible. Most vegetables are best consumed in their natural raw state in the form of salads. An important consideration in making salads is that the vegetables should be fresh, crisp and completely dry. If vegetables have to be cooked, it should be ensured that their nutritive value is preserved to the maximum extent possible. The following hints will be useful in achieving this: (i) The vegetables, after thorough wash, should be cut into as large pieces as for as possible. (ii) The cut pieces should be added to water which has been brought to boiling point and to which salt has been added. This is necessary to avoid loss of B-complex vitamins and vitamin C. (iii) Only bare minimum water necessary to cover vegetables should be used. Spinach and other tender greens need no water. (iv) Vegetables should not be exposed to atmospheric air. They should be covered tightly while cooking (v) They should be cooked for as short a time as possible. They should be cooked till they-are just soft to the touch for easy digestion. (vi) They should be served hot. To prevent loss of nutrients in vegetables, it would be advisable to steam or boil vegetables in their own juices on a slow fire and the water or cooking liquid should not be drained off. If the vegetables are boiled hard and for a long time in a large quantity of water, they would lose their nutritive and medicinal values.

No vegetable should be peeled unless it is so old that the peeling is tough and unpalatable. In most root vegetables the largest amount of minerals is directly under the skin and these are lost if vegetables are peeled. Soaking of vegetables should also be avoided if taste and nutritive value are to be preserved. Finally, vegetables should not be cooked in aluminium utensils. Aluminium is a soft metal and is acted upon by both food acids and alkalis. There is scientific evidence to show that tiny particles of aluminium from foods cooked in such utensils enter the stomach and that the powerful astringent properties of aluminium injure the sensitive lining of the stomach, leading to gastric irritation, digestive and intestinal ailments. An intake of about 280 grams of vegetables per person is considered essential for maintenance of good health. Of this, leafy vegetables should constitute 40 per cent, roots and tubers 30 per cent and the other vegetables like brinjals, ladies fingers the remaining 30 per cent. I. 1. The small village of Somnathpur contains an extraordinary temple, built around 1268 A.D. by the Hoyasalas of Karnataka – one of the most prolific temple-builders. Belur and Helebid are among their better-known works. While these suffered during the invasions of the 14th century, the Somnathpur temple stands more or less intact in near-original condition.2. This small temple captivates with the beauty and vitality of its detailed sculpture, covering almost every inch of the walls, pillars and even ceilings. It has three shikharas and stands on a star-shaped, raised platform with 24 edges. The outer walls have a profusion of detailed carvings: the entire surface run over by carved plaques of stone. There were vertical panels covered by exquisite figures of gods and goddesses with many incarnations being depicted. There were nymphs too, some carrying an ear of maize a symbol of plenty and prosperity. The elaborate ornamentation, very characteristic of Hoyasala sculptures, was a remarkable feature. On closer look- and it is worth it – the series of friezes on the outer walls revealed intricately carved caparisoned (covered decorative cloth) elephants, charging horsemen, stylized flowers, warriors, musicians, crocodiles, and swans.3. The temple was actually commissioned by Soma Dandanayaka or Somnath (he named the village after himself), the minister of the Hoyasala king, Narasimha, the Third. The temple was built to house three versions of Krishna.4. The inner center of the temple was the kalyana mandapa. Leading from here were three corridors each ending in a shrine, one for each kind of Krishna – Venugopala, Janardana and Prasanna Keshava, though only two remain in their original form. In the darkness of the sanctum sanctorum, I tried to discern the different images. The temple’s sculptural perfection is amazing and it includes the doors of the temple and the three elegantly carved towers.

The intellectual, who is working in some abstruse problem, has everything ordinated and organized for the matter in hand. He is therefore forgiven. If late for the dinner party but people are often reproached for unpunctuality when there only fault is cutting things fine. It is hard for energetic, quick- minded to waste time, so they are often tempted to finish a job before setting out to keep appointment. If you are catching a train, it is always better to be comfortably earlier than even a fraction of a minute too late. Although being early may mean wasting a little time, this will be less than if you miss the train and have to wait an hour or so for the next one. And you avoid the frustration of arriving at the very moment when the train is drawing out of station and being unable to get on it. And even a harder situation is to be on the platform in good time for a train and still to see it go off without you. Such an experience befell a certain young girl the first time she was travelling alone.3. She entered the station 20 min. before the train was due , since her parents had impressed upon her that it would be unforgiveable to miss it and cause the friends with whom she was going to stay to make two journeys to meet her. She give her language to a porter and showed him ticket. To her horror he said that she was two hours too soon. She felt in her handbag for the piece of paper on which her father had written down all the details of journey and give to the porter. He agreed that a train did come in the station at the time on the paper and that it did stop but only to take on water, not passengers .The girl asked to see a timetable,feeling sure that her father could not have made such a mistake. The porter went to fetch one and arrived back with the station-master, who produced it with a flourish and pointed out a microscopic ‘o’ beside the time of the arrival of the train at his station. This little ‘o’ indicated that the train only stopped for water. Just at the moment he train came into the station. The girl, tears the streaming down her face, begged to be allowed to slip into the guard’s van. But the station master was adamant:

1. Read the passage given below carefully and answer the questions that follow: 12 Marks1. The reformer must know that what moves people is the authentic life, not mere writing. The

newspapers and journals that Lokmanya Tilak and Gandhiji ran, the books they wrote, sold little, but

had enormous effect. Their writing was known to reflect, or be just an extension of, their exemplary

lives. It was the authenticity of their lives which lent weight to their message, to their example. All

knew that their lives were an integral whole-they were not moral in public life and lax in private, nor

vice versa; they were not full of pious thought and sacred resolutions within the walls of a temple and

cheats outside.

2. A writer who is merely entertaining his readers, even one who is merely informing them, can do

what he wants with the rest of his life. But the writer who sets out to use his pen to reform public life

cannot afford such dualities.

(a) Fashion is a force-a powerful force of constantly altering patterns of change and growth. Its constant movement affects the fate of the designers and manufacturers, who distribute it and of course, the lives of the consumers, who follow what it dictates. All of its facets taken together add up to a multimillion dollar industry. Fashion today means mega bucks.

In point of fact, the male fashion industry has been growing at a dizzying rate. Yes, there was a time when menswear was not exactly worth talking about. It was staid and unimaginative. But that does not mean that men did not dress-up according to the latest trends of the day.

(f) There were changes in Western dressing that followed the dictates of the designers and the fashionable elite trends-setters. These gave the fashion world the drainpipes in the ’60s, the popular safaris in the ’70s, the denims in the ’80s and the ethnic wear that has caught on these days.

(g) Fashion today is more lifestyle oriented and quite practical. The modern male and female want to dress differently for office and leisure. Designers are becoming more daring, the women as well as the men folk have a wide choice. There are different designs for every moment of a busy social schedule-from work, lunch to afternoon tea, cocktails, dinner and gala banquets.

(h) Lastly, fashion is the force that causes women to raise and lower their skirt length, straighten or fizz their hair and change from sportswear to dressy clothes. Fashion is, also that force that influences men to grow or shave off their moustaches and beards, choose wide or narrow ties and lapels and change from casual jeans into three piece suits and tuxedo. FOOD AND STRESS

1 We are what we eat. The type of food we eat has both immediate and long-term effect on us, at all the three levels - the body, the mind and the spirit. Food which is tamasik (i.e. stale or leftover) in nature is bound to generate stress as it tends to upset the normal functioning of the human body. Fresheners should be avoided. Taking piping hot tea/milk or steaming hot food, whenever available, must be preferred. Excessive use of condiments also disturbs one's usually calm attitude. Further, it is a mistaken belief that smoking or drinking, even in moderation, relieves stress. Simple meals with one or two food items, rather than too many lavish dishes, are advisable. Thus, vegetarian diet is preferable. Although it is customary to serve fruits with food, it is not the right thing to do. This is because different kinds of digestive secretions are produced by the stomach for variant foods. Mixing up too many varieties of food items at one meal creates problems for the digestive system. In fact, anyone type of fruit, preferably taken in the morning is better.

2 On an average, we eat almost three to four times the quantity of food than we actually need. A lot of body's energy is used up for digesting the excess food. It is said that after a particular level of food intake, the 'food actually eats one up'.

3 It is always good to eat a little less than your 'full-stomach' capacity. Besides, never eat food unless you are really hungry. Having dinner at 8 or 9 pm after a heavy snack at 5 or 6 pm in the evening is asking for trouble. In fact, skipping an odd meal is always good if the stomach is upset. There are varying views on the benefits of fasting, but we will not discuss them here. However, giving a break to one's stomach, at least once a week, by having only fruit or milk, etc. may be worth trying. While a little bit of water taken with meals is all right, drinking 30 to 60 ml much water with food is not advisable. Water, taken an hour or so before or after meals, is good for digestion.

4 One's diet must be balanced with all the required nutrients for a healthy living. Also remember, excess of everything is bad. Related to the problem of stress, excessive intake of salt is definitely out. Too much of sugar, fried food and chillies are not good either. Overindulgence and excessive craving for a particular taste / type of food generates rajasik (aggressive) or at worst, tamasik (dull) tendencies. An even more important aspect of the relationship between food and stress lies not so much in what or how much we eat but how the food is taken. For example, food eaten in great hurry or in a state of anger or any other negative state of mind is bound to induce stress. How the food is served is also very important. Not only the presentation, cutlery, crockery, etc. play a role, the love and affection with which the food is served is also significant.

5Finding faults with food while it is being eaten is the worst habit. It is better not to eat the food you do not like, rather than finding fault with it. It is good to have regular food habits. Workaholics who' do not find time to eat food at proper mealtimes invite stomach ulcers. One must try to enjoy one's food, and therefore,

eating at the so-called lunch / dinner meetings is highly inadvisable. Every morsel of food should be enjoyed with a totally peaceful state of mind. Food and discussions should not be mixed. There are accepted ways to 'charge' the food we eat. Prayer is perhaps 'the best method for energizing the food and it will do some definite additional good at no extra cost.

The freedom to impart information can come under attack in a variety of ways and particularly impinge on the freedom of the press. Pressure on journalists poses a very significant threat. Informal censorship refers to a variety of activities by public officials – ranging from telephone calls and treats to physical attacks – designed to prevent or punish the publication of critical material. The right of journalists to protect their sources is also important in ensuring the free flow of information on matters of public interests. International and regional human rights mechanisms have asserted that journalists should never be required to reveal their sources except under certain conditions. The media should be free to report on conflicts and public scrutiny in such situations is essential to controlling humanitarian and human rights abuses. Exclusion of the media is very severe restriction on freedom of expression and concerns. Elections are other times when the freedom of the press to provide balanced and impartial information becomes critical and more vulnerable to repression by political actors.

Structural restrictions on the press call onto question whether the media are free from political control at an institutional level. Restrictions can take the form of press laws which allow for government interference in the media, or which impose unwarranted restrictions on published content. All bodies with regulatory authority over the media, print or broadcast, should be fully independent of government. Processing of License applications should be open and transparent, with decisions about competing applications being made on the basis of pre-established criteria in the interest of the public’s right to know. In addition the powers of broadcast regulatory bodies should be limited to matters relating to licensing and complaints.

Media monopolies are another way in which the right to receive information from a variety of sources is restricted. Access to information held by public authorities is another aspect of the freedom of information debate. Next, it must be nurtured with enough water and sunlight, and only then will it grow, bear fruit and finally ripen and be ready to eat.

3. Gandhi understood this organic process and used this universal law of nature to his benefit. Gandhi grew in small ways, in his day-to-day affairs. He did not wake up one day and find himself to be the “Mahatma”. In fact, there was nothing much in his early life that showed signs of greatness. But from his mid-twenties onwards, he deliberately and consistently attempted to change himself, reform himself and grow in some small way every day. Day by day, hour by hour, he risked failure, experimented and learnt from mistakes. In small and large situations alike, he took up rather than avoid responsibility.

4. People have always marvelled at the effortless way in which Gandhi could accomplish the most difficult tasks. He displayed great deal of self-mastery and discipline that was amazing. These things did not come easily to him. Years of practice and disciplined training went into making his successes possible. Those who never have to change house become indiscriminate collectors of what can only be described as clutter .They leave unwanted objects in drawers, cupboards and attics for years in the belief that they may one day need just those very things.

As people grow old, they also accumulate belongings for to others reasons-lack of physical and mental energy, both of which are essential in turning out and throwing away, and sentiment. Things for long time are full of associations with the past, perhaps with the relatives who are dead, and so they gradually acquire a value beyond their true worth.

Something are collected deliberately in the home in an attempt to avoid waste .Among these I would list string and brown paper, kept by thrifty people when a parcel have been opened, to save buying these two requisites. Collecting small items can easily become a mania.

I know someone who always cuts from newspapers sketches of model clothes that she would like to buy, if she had the money. As she is not rich, the chances that she will ever be able afford such purchases are remote. But she is never sufficiently strong-minded to be able to stop the practice. It is a harmless habit, but it litters up her desk an extent that every time she opens it, loose bits of papers fall out in every direction.

Collecting as a serious hobby is quite different and has many advantages. It provides relaxation for leisure hours, as just looking one’s treasure is always a joy. One does not have to go out for amusement, since the collection is housed at home. Whatever it consist of stamps, records, first edition of books, china glass, antique furniture, pictures, model cars, stuffed birds, toy animals-there is always something to do in connection with it, from finding the right place for the latest edition to verifying facts in reference books .This hobby educates one not only chosen subject but also in general matters which have some bearing on it .There are also other benefits.

One wants to meet like-minded collectors, to get advice, compare notes, to exchange articles, to show off the latest find. So one’s circle of friends grows. Soon the hobby leads to travel, perhaps to a meeting in another town, possibly a trip abroad in search of a rare specimen, for collectors are not confined to any one country.

Over the years one may well become an authority on one’s hobby and will very probably be asked to give in formal talks to little gatherings and then if successful, to large audiences. In this way, self –confidence gained by occupying spare times so constructively, makes a person contented, with no time for boredom.

1. Our sleep habits have changed over the last century or so and we do not get as much sleep as we ought to.

2. In the 18th and 19th centuries, people went to bed early, soon after it was dark. Their sleep habits were fixed by the alternation of day and night, light and darkness.

3. Today, the situation has changed. People, specially in industrialized countries, get less than 8 hours of sleep per day. According to biologists and specialists, in sleep disorders, a large number of people are not sleeping enough and thus, sleep deficit affects their health and their performance.

4. How did this change in our sleep habits come about? One cause was the introduction of the light bulb. People work till late in the evening or even till midnight.

5. Millions of people today travel by air across time zones, and suffer jet lag in the process. Radio and television must bear their share of responsibility for depriving people of sleep. Many people get addicted to television and consider themselves compensated for the loss of sleep by being able to watch interesting programmes of entertainment, or live telecasts of sports or political events from foreign countries.

6. Experiments, where people have stayed awake for days at a time, show that they soon become tired, confused, irritable, and eventually ill, with headaches and increased risk of infections and accidents. Many people who suffer from sleeplessness (insomnia) are worried or anxious or depressed.

7. Research has shown that the performance of people suffers if they are deprived of sleep. They cannot concentrate, they cannot absorb what they are reading, they cannot make calculations, they make mistakes. Sleep-deprived people cannot be alert, and this can lead to accidents in factories when such people lose their concentration while monitoring machines.

8. What, then, is to be done to set things right? Obviously, people should learn to sleep more. One way is to take a siesta in the afternoon, as people often do in tropical countries. Extra sleep during weekends can help, but where there has been severe deprivation, it may take a long time to make up for lost sleep. The most sensible thing to do would be to go back to our old time habits and sleep an hour longer every night.

The British matron, today, is a thing of the past.

As a result of the number of beauty parlours that have sprung up in every street corner of the metropolises, and the exercises, the health motors and the skin foods that they offer, you can hardly run into an old woman these days. One could say old ladies are fast becoming an extinct species. White hair, wrinkles, bent backs and hollow cheeks are features of bygone era. Cosmetic surgery has slowly eradicated these unwanted phenomena. If children of posterity want to look at an old woman, they might have to run to an art gallery and find a medieval painting.
