    Powdered MilkNonfat powdered milk, instant or regular, is an excellent storage item. Itcontains allthe nutrients, except fat, found in fresh milk. It is one of the richest sources ofabsorbable calcium. It is also high inprotein, potassium, riboflavin, and vitamins ~D, and B12, all essential to optimal health.Nonfat Dry MilkRegular and instant nonfat dry milk are made from skim milk that has been dried byspraying into hot air. Instant milk. is regular milk that has been further processed,causing it to clump together, resulting in a product that is easier to reconstitute withwater than is regular nonfat dry milk. They both have the same nutrient composition.Regular nonfat dry milk is more compact, therefore requires less storage space;however, it is harder to reconstitute. The most common type of dried milk found ingrocery stores is instant nonfat dry millePowdered Milk StorageThe following storage times and temperatures are based on nonfat dry milk (instant orregular) stored at different temperatures and inunopened packages, with eithernitrogen or carbon dioxide to replace the air in the package. Storage times are shorterfor products stored in paper or cardboard packages.

    Making Fluid Skim MilkDry milk can be mixed quickly with water to make fluid skim milk. Measure thepowdered milk into a bowl and add about half of the water needed. Stir, shake, beatwith a wire whip, or beat with a mixer on slow speed to disperse milk. Add enoughwater to make the amount of milk desired. Non-instant milk powder is easier todisperse ifthe water is slightly warm but not hotDrinking Powdered MilkThe best way to use powdered milk is to reconstitute it and drink it. To accustomyour family to dry milk, start by mixing a small amount of reconstituted milk withfresh, whole milk. Gradually increase the amount of reconstituted milk until you aremixing it half and half (or more).Hints for Drinking Powdered Milk: Mix the milk.the night before you use it. Try adding 1~ tsp. sugar or 1 tsp. vanilla to enhance the flavor

    Be sure the milk is well chilled.Cooking with Powdered MilkKeep a container of reconstituted milk inyour refrigerator. Whenever a recipe callsfor milk, use your powdered milk instead of fresh.Add extra nutritive value to your cooked foods by using powdered milk as follows: In any baked-good recipe calling for milk, add the dry milk to other dry

    ingredients. Sift to blend the milk; then add water for the milk in the recipe. Ground Meats-Use 'lito % cup dry milk to each pound of meat. M ix with meat,

    fluids, or crumbs. Cooked Cereals-Before cooking; add 14 to l i z cup of dry mille to each cup of

    cereal. Mashed Vegetables-Beat 6 to 8 T. of dry milk into each 2 cups of mashed cooked

    vegetables, such as potatoes, squash, sweet potatoes, or turnips. Add enoughcooking liquid or water to make them light and fluffy. Sauces, Gravies, Soups, Custards-Add 4 T. dry mille to each cup of milk or add ~cup instant nonfat dry milk: to each cup of water or broth.

    Milk Shakes or Drinks-Add 2 T. dry milk to each cup of fresh fluid milk.How Much Powdered Milk to StoreGuidelines recommend 64 quarts, or 16 pounds, per family member per year.Equivalent to approximately one glass of milk a day, that amount maintains minimumhealth standards. However, the needs of children and pregnant or nursing mothersrequire more than the minimum amount of stored milk.A recommendation is that families that store only the minimum 16 pounds of milkper person should increase storage of grains from the recommended 300 pounds perperson to 400 pounds per person, to compensate nutritionally for this change. Also,evaporated milk and hot cocoa mix can be stored as part of the milkrequirement,How to Determine if Milk is Past its Prime Shelf Life .Milk develops off-flavors as it ages. However, it still retains some nutritional value,and unless spoilage has occurred from moisture, insects, rodents, or contamination; itis s till safe to use.What to Do with Milk that is Too Old to DrinkThink of milk in terms of optimal shelf life rather than waiting until it is too old touse. Use older nonfat dry milk in cooking, as long as it has been protected fromspoilage. If powdered milk has spoiled, use it as fertilizer in the garden.

    Strawberry ShakeMakes 2 servings

    ~ cup sliced strawberries% cup orange juice

    Y4cup nonfat dry milk4 ice cubes

    Put strawberries:in blender and liquefy. Add remaining ingredients and blend untilmixture is smooth.

    Creamsicle Drink Mix1part orange-flavored instant drink

    To use: stir 2 tablespoons of Creamsicle Drink Mix into 1 cup of cold water.Orange Julius

    Pre-soaked Wheat Blender Pancakes or CrepesYou don't have to have a wheat grinder to make these pancakes. Just soften thewheat and let the blender do the rest. This recipe has no oil or fat.1 cup wheat .1 cup milk

    Cover wheat with about 1cup of water and soak in the refrigerator overnight. Serve while hot. Makes 10-12 large pancakes. For crepes,try with a strawberry or fruit filling or chicken or seafood ina cream sauce.

    Low-Fat Cream Soup Mix(This recipe replaces 9 cans of condensed creamed soups)

    2 cups instant dry milk(or 1~cups non-instant)

    2 tablespoons onion flakes1 teaspoon basil1teaspoon thyme~ teaspoon pepper

    Combine all ingredients and mix. Store in airtight container until ready to use.To Substitute for 1can condensed soup: I h jCombine Y s cup dry mix (Y 4 cup, if made with non-instant dry milk) andl'cup coolwater or liquid from vegetables. Cook over medium heat, stirring until thickened.Add thickened mixture to casseroles as you would a can of soup.For variations: add vegetables, pasta, rice, or chopped cooked meat.

    Combine all ingredients in a large bowl, mixing until completely blended. Store inairtight container. Makes about 212 cups mix. To Serve: Place Y4cup soup mix in asoup bowl or mug. Add 1 cup boiling water and stir until smooth. Let soup sit 1 to 2minutes to thicken slightly.

    Broccoli SoupServes 8 cups

    3 cups broccoli, chopped~ cup celery, diced12 cup onion, chopped2 cups chicken broth% cup dry milk powder4 T. cornstarch

    12t. salt2 pinches pepper2 pinches thyme, ground4 cups water12to 1 cup cheese, cheddar or Swiss,grated

    Place veggies and broth in saucepan. Bring to a boil, reduce heat, cover, and cookuntil veggies are tender, about 8 minutes. Mix dry milk, cornstarch, salt, pepper, andthyme; mix into water; add to cooked vegetables. Cook, stirring constantly (or it willscorch), until soup is slightly thickened and mixture just begins to boil. Remove fromheat, add cheese, and stir until melted.

    Honey Dinner Rolls1 cup warm water (110-115)1 tablespoon active dry yeastl J 4 cup honey3 cups whole-wheat flour

    ~ cup nonfat dry milk1 egg2 tablespoons butter) melted1teaspoon salt

    Pour the water into a large bowl and sprinkle the yeast on top. Set aside to proof for5 to 10 minutes.Slowly add the honey and 1 cup of the flour. Beat well for 3 n:rinutes with an electricmixer (or beat vigorously by hand). Beat in the milk, egg, butter, and salt.Knead in enough of the remaining flour to form a soft, unsticky dough. Knead for 10minutes or until smooth and elastic. Form into a ball.Allow the dough to rise for 1hour or until doubled in size. Lightly oil a baking sheet.Punch down the dough and divide it into 10 pieces. Shape each piece into a roll andplace on the prepared baking sheet. Cover and let rise in a warm place for 45 to 60minutes or until about doubled in size.Preheat the oven to 375. Bake the rolls for 13-15 minutes or until lightly browned.Remove the rolls from the baking. sheet and coolon awire rack.

    Wheat MuffinsMakes 12 muffins (24 mini)

    Mix dry ingredients together in a medium-sized bowl. In large measuring cup,combine liquid ingredients. Pour over dry ingredients and stir just until moistened.Spoon into greased muffintins, and bake at 350 for 12 to 15 minutes.

    Weiner Schnitzel1 lb. package egg noodlesl i z c. margarine. 'li c. flour.1t. saltIiitpepper% c. powdered milk

    2 c. water1 t. Worcestershire sauce1 4 c. ketchup2 to 3 c. grated cheddar cheese1 pkg. hot dogs, cut in 'li~'pieces

    Cook noodles and drain. Melt butter and add flour, salt, pepper, and powdered milk.Mix together welL Add water, Worcestershire sauce, and ketchup. Cook until thick.Add 11;2c. of the grated cheese and the hotdogs. Fold in the noodles and m ix w ell.Pour into 11 x 13" pan and sprinkle with remaining 'li c. of cheese. Bake at 3500 for30 minutes. (Makes a very large casserole - good for potlucks)

    Macaroni and CheeseBag the following:1-5 ounce jar Old English Cheese2 cups dry macaroni noodles

    Small can Parmesan cheese(optional for broiling on top)

    Seasoning Packet:4 T . flour1 ' 4 tsp. white pepper 1'; tsp. salt (optional)Additional ingredients:~ cup butter3/8 cup dry milk powder

    2 cups water

    Make perfect pasta by bringing a large pot of water to a boil. Add macaroni noodles.Stir and return to boiling. Boil water 3 minutes. Tum off heat or remove pot fromburner. Cover and let sit inwater 10 minutes. Drain.Reconstitute the powdered milk by mixing it with the water. Make a white sauce bymelting butter, stirring inflour, salt, and pepper; add the mille all at once. Cook,stirring constantly with a wire whip, until thick. Turn off heat; add cheese. Stir untilmelted. Pour cheese sauce over noodles and stir together. Pour into greased 9 x 9"pan. Top with Parmesan cheese, ifdesired. Broil until lightly browned and bubbly.

    Microwave Caramels1cup butter2~ cups light brown sugar1cup light com syrup

    1 can sweetened condensed milkl,4 teaspoon salt1teaspoon vanilla extract

    Butter a l3x9" baking dish. Set aside. Combine first 5 ingredients in3 quartmicrowave-safe bowl. Microwave (HIGH) 17 minutes, stirring every 5 minutes.Remove from microwave. Stir in vanilla. Pour into prepared baking dish. Cool.When set, cut into squares and wrap individually in waxed paper. Store inrefrigerator. Makes about 72 pieces.

    Whipped Topping1packet unflavored gelatin1tablespoon tap water: y ; cup boiling water1cup tap water1 cup dry powdered milk

    1 ; 3 cup sugar: y ; cup vegetable oil1 teaspoon vanilla2 to 3 teaspoons lemon juice

    Pour 1 cup of tap water into a deep bowl. Place in freezer. Soften gelatin in 1 T.water. Add boiling water to gelatin. Stir to dissolve gelatin completely. Cool.Measure oil, vanilla, and lemon juice into a small bowl. Set it aside. Measure sugarand set aside.Remove the water inthe freezer when ice crystals fOnTI. Add dry milk Beat mixtureat high speed until stiff peaks form. Continue beating; gradually add sugar.Gradually add cooled gelatin mixture; then add oil, vanilla, lemon juice mixture in asmall stream. The texture changes a bit, becoming bright white and creamier.Store in refrigerator for a few days and use asdesired.

    Dry Milk Ice Cream2 c. sweetened condensed milk3 c. powdered milk 2 tsp. vanilla6 c. waterM ix all ingredients together well. Pour in ice cream freezer can and freeze (perfreezer instructions). Makes 1gallon.Variety: Mashed fruits can be added for different flavors.

    Peanut Butter Chews1cup powdered sugar1cup peanut butter

    2 cups instant (1 cup non-instant) dry milk1cup com syrup or honey.

    Mix powdered sugar and powdered mille thoroughly. Add peanut butter and syrup todry mixture. Knead together with your hands. Press into a cake pan or roll intowa ln ut s iz e balls.Variations: Add nuts or Rice Krispies. Dip inchocolate.

    Vanilla Pudding Mixl Y 2 c. sugar2 Y 2 c. nonfatdry milk l~ c. flour1tsp. saltStir the ingredients together until well mixed. Store ina tightly covered container ina cool place. Makes enough for 24 servings.Chocolate Pudding Mix: add % c. cocoa and ~ c. more sugar before stirring.Caramel Pudding Mix: Substitute 1Y 2 c. packed brown sugar for white sugar.To make pudding from mix:1 . t c. pudding m ix2 Y 2 c . wa rm water% tsp. vanilla

    Combine mix with water intop of double boiler. Place over boiling water and cookuntil thickened, stirring constantly. Cover and cook 5 minutes longer. Add the butteror margarine. Remove from heat and beat half of the hot mixtureinto the egg. Blendslowly into the remaining hot mixture. Cover and place in double boiler over hotwater for 1 minute. Stir invanilla and chill. Serves 6.

    Yogurt RecipesPlain YogurtMakes 2 quarts

    1% cup regular nonfat dry milk (3 cups instant)4 cups water, very warm (not over 1200). Y s cup plain yogurt, with active cultures, no additives

Pour into containers, cover, and incubate in a warm area for 6-8 hours. Donot disturb during incubation. Incubate no higher than 1200 (1100 is ideal).Refrigerate after yogurt has formed. Save V 3 cup plain yogurt for starting next batch.Add fruit, jams, juice concentrate, chocolate mille mix, etc. for flavor, before eating.

    Vanilla YogurtMakes about 5quarts

    3% qt. (15 cups) warm water(between 86-1200)

    1cup plain yogurt1 T . vanilla

    4 cups regular dry milk powder3 T. unsweetened gelatin (4 packets)Icup melted honey

    Soften gelatin in 14cup cold water; then warm the gelatin on the stove until thegelatin melts.Measure powdered milk into a large bowl. Stir 1 to 2 quarts of wann water into thepowdered milk and use a wire whip to dissolve. Add the rest of the water, honey,vanilla, and the plain yogurt. Add Y2cup milk mixture ingredients to the warm,melted gelatin. Stir. Pour back into milk mixture when it has cooled sufficiently.

    (Temperatures above 1200 will kill the enzymes in the yogurt.)Blend the mixtures together. Strain mixture into 5 warm quart jars. Incubate inaplace where it can stay warm and will not be disturbed. After 4-6 hours, yogurtshould be set. Ifthe liquid is still liquid, wait 1-2 more hours. When slightly WanTI,refrigerate. (It will continue to set up in the refrigerator.)

    Almond Crunch Granola10 cups rolled oats4 cups sliced almonds1V t . cups pure maple syrup

    1~ cups safflower oil1~1. salt4 to 5 t. vanilla

    Optional ingredients:A ny other nuts (2 cups)Raisins (2 cups)

    Dried cherries (2 cups)Unsweetened coconut (2 cups)

    Mix all ingredients together. Spread thinly on cookie sheets. Bake 15 minutes at325-350 or until lightly browned. Cool 10 minutes in pan, then transfer to airtightbowl. Keep tightly covered. This recipe makes a large amount.

    112 cup frozen strawberries1frozen or fresh banana1cup strawberry or vanilla yogurt

    Pour al1liquid ingredients into a blender; then add remaining ingredients. Blend untilsmooth.Optional additions;Wheat germ, protein powder, ice cubes

    1 tsp. salt2 cups lemon or vanilla yogurt2 T. sugar1 T. melted butter1cup wheat flour1tsp. baking powder

    Mix eggs into yogurt, fruit drink mix, orange peel, sugar, cinnamon, and butter.Combine dry ingredients and fold gradually into egg mixture. Makes 12 waffles.

    Yogurt DilI-Veggie Dip1cup plain yogurt1cup mayonnaise1T. parsley

    1 T. dried onion1 T. dill weed1tsp. Beau Monde seasoning salt

    Stir the ingredients together with a wire whisk. Let set for 30 minutes. Serve withraw vegetables.

    Cheese RecipesMock Mozzarella C heese

    4 c. warm water1% c. white vinegar

    % c. vegetable oil3 c. dry milk powder

    Blend all ingredients; pour into hot, Pam-sprayed saucepan and heat to 1150 to formcurds. Rinse inwarm water, drain, and salt to taste. Place in cheesecloth bag andhang to drain or squeeze out excess liquid. Cool and grate or crumble. Use as youwould commercial mozzarella.

    Parmesan Cheese1 cup boiling water2 or 3 T. reconstituted lemon juice

    1 cup powdered mille

    Blend all ingredients and cook over medium-high heat until milk boils. The curdswill be very small and milk will be frothy. Pour into a cloth lined strainer, rinse, andpress out excess water. Put curds into a bowl and stir with a fork to break up. Spreadon a cookie sheet and dry for about 10 minutes in a 1500 oven.     Place a paper towel in the bottom of a colander. Put homemade yogurt on the papertowel. Cover with another paper towel. Set colander inside a larger bowl to catchliquid. Place the whole thing in the refrigerator overnight. The result is cream cheese(fat free!). Store, covered in refrigerator, up to 3 weeks.For sour cream, drain for less time, or add buttermilk or mayonnaise tomoisten.Refrigerate for up to 2 weeks.

    Easy Homemade Cheese Ball8 ounces cream cheese8 ounces extra sharp

    cheddar or Colby cheese,grated

    1 T. minced onion

    dried beef, finely chopped2 to 3 T. milk, ifneededChopped nuts, optional

    Combine cheeses, onions, and beef in a mixing bowl and mix well. Addmilk, if desired, to make cheese ball more easily spreadable.Roll mixture into a ball; roll in chopped nuts. Wrap in plastic wrap andstore in refrigerator until needed. Serve with crackers or pretzels.

    Mock Ricotta CheeseMakes 2 cups2 c. boiling water1 c. plain yogurt 1 Y 2 c. dry milk powder

    (-iM~)Blend water and dry milk powder and bring mixture back to a boil in a Pam-sprayedsaucepan. Stir in yogurt and bring to a boil again. The milk will curdle.Pour curds into a strainer and rinse with warm then cold water. Drain, salt, andrefrigerate.For a more solid cheese, press overnight between two plates. Slice the pressed curdsvery thin; then cut into small squares and :fry to a light golden brown color and add tosalads, sandwich fillings, stir:fry, curry dishes, soups and casseroles.

    3 cups dry milk

    Spray a heavy saucepan with a lecithin spray. Heat to form a coating, then add 2cups of the hot water and bring to a boil. Blend dry milk powder with remainingwater and add to boiling water.Slowly add ~ cup vinegar; then add remaining vinegar, if necessary to separate curdsfrom whey. Pour curds into a strainer and rinse well with very warm water to removevinegar flavor. Add salt to taste and press, ifdesired.Cut cheese into thin strips, bite-size pieces, or other shapes. Refrigerate, stored inplastic wrap or in a covered container, for up to one week or freeze for 2 to 3 months.

    Blend together nonfat dry mil, water, eggs, cottage cheese, salt, pepper, and chives.Inmedium-size skillet melt butter; when hot, add egg mixture and cook over low heatuntil set. Serve immediately. Yield: 3-4 servings.

    Cheese-Stuffed Jumbo Shells4 quarts water, boiling1t. salt12 oz. jumbo pasta shells, uncooked4 c. ricotta cheese, fat-free1 cup cottage cheese, low-fat2 cups mozzarella cheese, shredded% cup Parmesan cheese, grated

    6 egg whites1 T . parsley, chopped3 / 4 t. oregano~ t. salt~ t. pepper6 to 8 cups (2 - 32 oz. jars) spaghetti

    sauce

    Add jumbo shells, 3 or 4 at a time, to boiling, salted water. Boil uncovered for 10minutes, stirring occasionally. Avoid overcooking. Drain. Cool in a single layer onwax paper or aluminum foil to keep jumbo shells from sticking together.While shells are cooling, mix together ricotta cheese, cottage cheese, 11"4c.mozzarella cheese, 'l 2 c. Parmesan cheese, egg whites, parsley, oregano, salt, andpepper. Fill each shell with about 2 to 3 tablespoons of cheese mixture.Spread thin layer of spaghetti sauce on bottom of 13 x 9" baking dish. Place shells,open side down, in a single layer in the pan; cover with remaining sauce. Sprinklewith remaining mozzarella and Parmesan cheese. Cover with aluminum foil.Bake at 3500 for about 35 minutes or until hot and bubbly. Fills about 36 shells.Freezes well.
