Nordic Coffee CultureIn the Nordic region we love filter coffee and we take it black. We have mugs exclaiming “World’s best dad!” and we keep a special set of porcelain cups in the cupboard for those special occasions. Everyone brings a thermos of coffee with them when going for walks in the stunning Nordic countryside. The first thing we do when we stumble out of bed in the morning is to turn the coffee brewer on – it is also the last thing we turn off when our guests have gone home. Our coffee allows us to think clearly, and if we ever need to sit down for a serious chat we will have a few sips of coffee to compose ourselves and form our words before we start talking. Wilfa has been a proud part of this culture for decades. Black filter coffee runs in our veins and we have participated in millions of Nordic coffee moments, something that makes us very proud. This has led us to question why filter coffee no longer has the status it deserves. People have been charmed by the continental coffee culture that came to the country – with its espresso machines, flavoured syrups and milk contain-ers on the side. The coffee brewer, the original source of real, pure coffee no longer takes centre stage. People take it for granted, it simply fulfills a function and while we’ve never stopped drinking filter coffee and most people still get

their daily coffee fix from a coffee brewer, we have forgotten about the beautiful taste, quality and nuances that filter coffee can provide. We’ve become lazy and measure by eyesight and most of us can’t remember the last time we cleaned out our coffee brewers.

That time has passed.Filter coffee has always retained a high status among coffee experts and enthusiasts and here at Wilfa we intend to prove once and for all that THIS is the real way to make, and enjoy, good coffee. We are going to celebrate and promote the Nordic coffee culture and show the world just how proud we are of it.We’ve joined forces with Tim Wendelboe and together we have developed SVART, a quirky and exclusive range of coffee brewers that is perfect for our way of drinking coffee and that respects the Nordic coffee culture.The first brewer was the SVART Manuell, a pour over coffee brewer that made it clear to us that people were thirsty for high quality coffee, both in the Nordic region and abroad. This time, we’re proud to present the SVART Presisjon, More similar to a traditional coffee brewer, but at the same time new; capable of making fantastic coffee.

Wilfa SVART PresisjonGood coffee is not outside the reach of any-one. It is the result of good ingredients and precision. We equipped the SVART Presisjon with a removable water tank to ensure fresh, clean water. You need to select the coffee and brewing ratio on your own, but when

it comes to technology and precision, few devices are a match for this coffee brewer. Precise temperature and water delivery combined with a short brewing time will make sure the coffee you brew at home will be better than ever.

Together as a team Designit, Tim Wendelboe and Wilfa has worked hard on defining what makes

a coffee brewer great and then setting out to pursue that goal. Wilfa SvartPresisjon is the

second in the series, and the first automatic brewer.

Choose coffee according to your own preference, but remember it should be freshly roasted and freshly ground.

Rather than let your coffee sit on the heater for too long, make several, smaller batches. The SVART Presisjon makes great coffee, be it one or ten cups at a time.

Fresh, clean tapwater is extremely important. If your ingredients are top notch, the end result will be the same.

The best water temperature is between 92°C-96°C. If it is too high the coffee will become bitter; too low and less flavour will be extracted.

Excellent coffee is made with precisionBecoming a good barista is first and fore-most a craft, but it is not without a bit of artistry – just ask Tim! Baristas all over the world practice for years to compete in the various coffee competitions, and the skill levels both nationally and internationally are immense. Making coffee at home, however, is not as hard as it looks. With the SVART Presisjon, you only need to focus on two key

areas: ingredients and the ratio of coffee to water. SVART Presisjon will take care of the rest. With this coffee brewer you will be able to compete with the best of them, from the comfort of your own kitchen. Find your favourite coffee and ratio and spread the word about black coffee!

Raw material: Coffee beans come from the coffee berry that grows on coffee trees and, just like apples and wine grapes,

there is great variety when it comes to taste and quality. The best coffee is sold unground and in sealed bags.

Important information such as roasting date and which plantation the coffee comes from should be available on the

bag. The best coffee is usually sold in places where the seller has intimate product knowledge.

We thought of everything, so you won’t have to.Even though the SVART Presisjon is as easy to use as any other coffee brewer on the market, a tremendous amount of work and research went into creating it. Not only design wise, but particularly with regard to technology. The secret behind a good ex-traction lies with the water and its tempera-ture.Unique to the SVART series of coffee brew-ers is the flow control, a wheel at the bottom of the filter holder that adjusts the rate of flow, ensuring a great result whether you make one or twelve cups of coffee. We have

given thought to your kitchen counter as well, not only by designing it as a beautiful expression of Nordic design, but also by equipping the filter holder with an overflow drain. This prevents a mess should you have forgotten to open the flow control or if the coffee should clog the filter for some reason. In addition, the SVART Presisjon features a drip stop and a sensor to indicate lime buildup. Simply put, it has everything you need to make a great cup of coffee with the minimum amount of fuss.

WaterCoffee lovers are fortunate to live in the Nor-dic region. This is because fresh, clean water is an important part of great coffee, and up here we might just have the cleanest tap water in the world. Because of just this, it’s a shame that so many of us use the empty coffee pot, still covered in old coffee and oils, to refill the water tank when we brew coffee. This drastically impacts the flavour of the coffee, and will in time clog the cof-fee brewer internally. By having a removable water tank, the SVART Presisjon eliminates this problem. This is not to say that it elimi-

nates the need to clean the coffee pot and brewer altogether; clean equipment is key to a good cup of coffee. Rinsing the coffee filter before you brew will also contribute to a cleaner cup of coffee.

There are different opinions on what consti-tutes the perfect brewing temperature, but Tim’s opinion is that a range of 92 - 96°C is necessary to fully extract the flavours of the coffee. Most coffee brewers have too low a brewing temperature, leading to a more sour, under extracted brew. Most brew-ers reach the ideal range eventually, but by then, too much under heated water has gone through the coffee, and the damage is already done. Conversely, the water should not be too hot, as this will extract too many of the bitter compounds in the coffee. The graph on the top of the page shows that the SVART Presisjon has the most precise tem-

perature, achieving 93°C immediately, while other leading coffee brewers take as long as 60 seconds or longer, or in some cases never reach the correct temperature range.This level of precision is made possible by our precise pump system that distributes precisely heated water to the coffee faster. In addition, the filter holder is double-walled, to better insulate the coffee and water while they steep.Tip: Be sure to let the coffee cool somewhat before you drink it. The flavours will stand out much more once it is no longer piping hot.

Guesstimation is the root of all evilMost of us guesstimate how much coffee and how much water we use when brewing coffee. Some might use a measuring spoon, but as a metric, it too, is close to useless. Our opinion is that using a scale is the best way to accurately measure how much coffee to use. While some might prefer their cof-fee stronger or lighter than the majority of

us, Tim feels that 62-66 grams of coffee per liter of water is ideal. We recommend using a precise kitchen scale to measure coffee. There are markings on the water tank of the SVART Presisjon indicating the appropriate amount of coffee for a given amout of water. After all, you shouldn’t have to use a calcula-tor to make good coffee!

Use freshly ground coffee. The oils in the coffee oxidise much faster when the coffee is ground than when they are

still protected from oxygen inside the coffee bean. Oxidation leads to the coffee becoming increasingly

bitter. The reason coffee smells so good during brewing is because the aromas are

escaping with the steam!

Always use fresh coffee beans. Use by dates should always be visible on the bag. Use 61-65g

of coffee for a liter of water.

The raw ingredientThough it is our opinion that a few core vari-ables need to be in order to brew a great cup of coffee, we don’t mean to imply that coffee is a static and unchanging phenom-enon. Individual taste will always be subjec-tive. Strong coffee, light coffee, dark roast, light roast, and so on – this should all be

according to your individual preference. However, one thing remains a constant: re-gardless of what type of coffee you prefer, it has to be brewed properly. And with the SVART Presisjon, that has become simpler than ever.

Wilfa’s Malt coffee grinder is perfect for filter coffee and can easily be adjusted for brewing

different quantities. It is also the only coffee grinder to be approved by the European Coffee

Brewing Centre.

slightly coarser than the medium setting and grind away!

As quickly as possible – but no faster. While the SVART Presisjon is among the fastest coffee brewers on the market with regard to reaching target temperatures and water delivery, the time it takes for the water to percolate through the coffee grounds is and should not be rushed. With the SVART series’ flow control, you can adjust the flow rate and thereby tune the extraction rate to your preference. In other words, the SVART

Presisjon brews coffee as quickly as it can without negatively impacting the final brew. Which is as it should be.

Brewing great coffee isn’t done in an instant, but is

time well spent – for 1.25 liters it takes approximately 5 minutes.

Detachable water tankFresh, clean water is one of the most important ingredients of great coffee. For that reason, the Wilfa SVART Presisjon has a detachable, easily cleaned water tank.

Precise Heating SystemThe Wilfa SVART Presisjon automatic coffee brewer delivers water with the optimal extraction temperatures throughout the entire cycle. 92°C-96°C is considered by the European Coffee Center and leading industry professionals to be the optimal brewing temperature.
