When cooking beans, you’ll want to simmer them gently. A vigorous boil will make the beans fall apart, so if you’re using them in another recipe where the beans will be cooked for a second time, you’ll want to cook them until they’re just tender.

If beans tend to give you a digestive dilemma, try some of these helpful hints to prevent any problems:• Discard soaking water prior to cooking. Some nutrition is lost,

but you’ll get rid of up to 80% of oligosaccharides that can cause gas.• Cook beans thoroughly, which will make digestion easier.• Give you body time to adjust. If you’re new to beans, introduce

them slowly. The more often you eat beans, the more your body will adapt.• Choose beans that are easy to digest such as adzuki, anasazi,

black-eyed peas, lentils, and mung beans.• Cook beans with a bay leaf, cumin, epazote, or kombu.
