INTRODUCTION TO WHITE MULBERRY –

The White Mulberry has been used in traditional Chinese medicine for at least

hundreds of years, and it's time the western world caught on to this amazing plant.

White Mulberry has many medicinal properties such as: curing blood disorders like

diabetes, leukemia, cancer, lowering high blood pressure, anemia etc., helping with

weight loss, cholesterol reduction, hardening of the arteries Moreover, it also soothes

sore throat, headache, cough, wheezing, sore eyes, asthma, and helping with

what exactly is this incredible plant which can do all this astounding healing?

WHAT IS THE WHITE MULBERRY?

Ok, so most of you would have

heard of the regular mulberry, which

has rich dark purple juicy fruits that

have a reputation for staining your

fingers and clothes! It is not commonly

available in shops and is most often

found on back-yard trees. I have fond

childhood memories of picking them

directly off the tree and eating until I

couldn't eat anymore. Well, the White

Mulberry is very similar except that the

fruits are white when ripe, and the

flavor is a little milder in comparison.

THE HISTORY OF THE WHITE MULBERRY

Chinese legend dating from at least the 4th Century says that Once upon a time in China, there was a young maiden whose father went to do some business but didn't come home again. The dutiful daughter was very worried, but luckily, she had a magic horse. This magic horse had the ability to understand human language, and also the ability to fly. She sent the magic horse to go out and find her father, and in return promised that she would give the horse her hand in marriage. The magic horse went out and looked for the father, and managed to find him and bring him home safely again. The daughter was very happy to have her father home, but the father was not pleased with this promise to marry the magic horse. The father then killed the horse, but then a miracle happened – the skin of the horse carried the daughter up into the sky. They flew until they came to a tree and the daughter turned into a silkworm and cried tears that turned into strands of silk - and so silk was first created.32

A more believable Chinese Legend was that around the year 2700 BC the Chinese Empress Si Ling-Chi was drinking a mulberry tea when a silkworm cocoon from the mulberry tree fell in it, and she discovered that she could wind a silk thread off it. Hence the beginning of China's monopoly of making silk (known as sericulture), and this shows that mulberry was being drunk as a tea in China thousands of years ago, even before they started their famous

trade in silk.1 In fact, the production of silk was so important to China that to tell the secrets of its production to anyone else was a crime punishable by death. From 200 BC the trade in silk increased and was moved along 'The Silk Road', a famous track which led from China all the

way to Rome through the various countries in between.2 So the entire history of silk can actually be attributed to the obviously well-known health giving properties of the mulberry tree thousands of years ago!

The strands of silk, which can be spun off the silkworm cocoons, are wound together into a thread, which is then woven into a fabric. Silk is highly valued as it has a luxurious texture, is almost waterproof, is highly fire resistant, not easily soiled, and as it is three times stronger than flax, it is durable when used as clothing.35

There is actually some evidence for the ancient history of silk, which is more convincing than an alleged 'Chinese legend', which is archeological finds in Northern China of a silkworm cocoon dated between 2600 and 2300 BC, and in Eastern China there have been found ribbons, threads and woven fragments dated around 3000 BC. Even older is the find of an ivory cup with a silkworm design carved on it, and spinning tools, silk thread and fabric fragments dating between 4000 and 5000 BC, found near the lower Yangtze

River in Eastern China.2 This shows that sericulture was very popular and also therefore, that mulberry was widely planted, and this would have specifically been White Mulberry as it is considered the best food for the silkworms. Mulberry bark is also fantastic for making paper, giving another reason for its popularity.1

White Mulberry was mentioned in medicinal terms many times throughout written history. Some of these references include the Chinese book Pharmacopoeia of the Heavenly Husbandman which was written around 200 BC, the Materia Medica written around the 1st Century AD, around 200 AD the Talmud, the Chinese Book of Songs the 7th to 11th Centuries, in the 1500s the Chinese book Compendium of Materia Medica, also in the 1500s the English book Theatrum Botanicum, and the North American legislature in the 1600s, and it is even mentioned a number of times in the Bible. Obviously, White Mulberry has been very important to humans for thousands of years, and widespread around the world.

The well-kept secret of making Chinese silk eventually escaped, and various countries have planted their own silk-making orchards over time.

There are some Chinese legends relating to how the secret of making silk escaped China, and they are just as dramatic and romantic as the legend of the discovery of silk. One story involves a princess who married abroad, and smuggled some silk-moth eggs in her hair jewelry. Another story involves monks who smuggled the eggs in their bamboo stave while going on a holy pilgrimage.2 however it happened, and all we know that somehow the secret escaped and the rest of world started making their own silk.

THE BOTANY OF THE WHITE MULBERRY

The scientific name of White Mulberry is Morus alba, and it is from northern China but it grows easily in most areas of the world. The genus name Morus is from the Latin Mora for 'delay', which refers to the late formation of buds in winter, or it alternately may be from the Celtic Mor which means black, referring to the fruit color. Alba derives from the Latin

Albus which means white - hence the common name of White Mulberry.3 It is also known as Sang Ye (Chinese), Sang-Bai-Pi (Chinese referring to the medicinal root bark), Karayamaguwa (Japanese referring to the whole plant), Sohakuhi (Japanese referring to the medicinal bark), Tuda (Sanskrit)

and also Ramulus Mori, which means Branch of Mori.4 It is very popular mainly because it is the preferred variety of mulberry on which to feed silkworms - this is a massive industry in China and other countries from India to southern Europe. The White Mulberry tree has been grown specifically for this purpose for thousands of years. Livestock can also be fed the leaves, which is very handy in dry areas. Domestic sheep and goats in Greece and elk in Northern America have been reported as using it as

fodder.5

In fact, it grows so easily that in parts of Northern America they have started to call it a weed, and they have even created a version which does not actually produce fruit. The tree was introduced to North America back in the 1600s,

and bizarrely enough there was legislature in 1624 that every male resident of Virginia was required to plant at least four White Mulberry trees - this was an attempt to start a sericulture in America to rival China. It was not very

successful due in part to cold seasons and disease.5

The tree grows up to sixty feet tall, and can be a little difficult to identify as the leaf shape changes depending on the age of the tree. They can be coarsely serrate around the margins, or they can be deeply loped and serrate. New trees have leaves which are up to one foot long, but on older trees the leaves can be only 1 to 2 inches long. The tree may lose its leaves in winter depending on how cold the climate is. The leaves give out a milky juice when

snapped, which contains latex and also silk proteins (fibroin and sericin)3, which can help explain why it makes such good silk.

The trees have been recorded as living up to 200 years, as there was

one planted by George Washington in 1785.5 One interesting scientific fact about White Mulberry is that it holds the record for the fastest plant in the

world, because when it releases its pollen it moves at 350 miles per hour.6 The reason it is able to do this is because it has stored elastic energy. The wood of the tree is also quite useful, as it is very flexible and durable and has

been used to make tennis rackets, hockey sticks, furniture, and boats.7

There are numerous parts of this plant which have medicinally beneficial properties, and these include the fruits, the leaves, the roots, the branches, the sap and the young shoots. The different parts of the tree are medicinally helpful for different parts of your body. The fruit are harvested when ripe in May or June, and then dried by either baking

or sunshine.8 The fruits are delicious when ripe and can be eaten fresh, or can be dried, or can be used in stews or preserves, and can also be juiced. They can even be made into a wine. The dried fruits can also be ground up

to be used as a flour.9

The leaves are harvested and then dried and powdered for making into

tea.10 The leaf powder can also be used with wheat flour to make bread, and

also functions as a preservative in this form. The White Mulberry leaf tea has

a sweet earthy flavor, with pleasant grassy notes and a slight roasted flavor.11

The root bark is harvesting by digging up the roots in winter, and after cleaning the bark is scraped and then pounded in order to remove the orange outer bark - it is the white inner bark which is the most beneficial. The branches are harvested by removing thin sections in late spring or early summer, removing the leaves and drying, and then cutting into short

lengths.8

The latex from the sap is also used, and young shoots can be cooked as

a vegetable.5 There are also available supplements which appear to

concentrate the bioactives, and a compressed tablet form of the dried

leaves.12

TRADITIONAL MEDICINAL USES OF THE WHITE MULBERRY

Most famously of all, White Mulberry has been used in Traditional Chinese medicine for at least hundreds of years, and more likely, for thousands of years. The Chinese had a use for every part of this plant, and was generally used for hypertension and musculoskeletal disorders of the lower body. The Chinese Royal Physicians would prescribe it to treat coughs, diabetes and as a blood tonic, in fact there was barely any health problem that part of the mulberry plant would not heal.

Leaf: Ophthalmia, water retention, upset stomach. Bruised leaves: headache and influenza.

Fruits (Sang Shen) - Nourishes in and blood, moistens Intestines hypertension, insomnia, neurasthenia, anti-aging agent, diabetes, gray hair, purify blood, constipation.

Root Bark (Sang Bai Pi) - Drains lung heat, alleviates cough, calms wheezing, promotes urination, reduces edema, abdominal distension, anasarca, asthma, cough, coughing up blood, weakness, poor health, susceptibility to infections, general tonic, vitality, immune support.

Root: Wasting conditions, too frequent menstruation, spitting of blood, and weakness.

Twigs (Sang Zhi) - Dispels wind-dampness, unblocks channels and collaterals, benefits joints, prevention of the common cold, rheumatism, water retention, and lung problems.

Stem Bark: Epilepsy, dribbling saliva, diabetes.

Latex from Sap: Aphthous stomatitis, bug bites, and snake bites.

Tips of Young Leaves: a tea to control blood pressure. 4, 13, 14

In India, they have used the traditional medicine system known as Ayurveda for thousands of years, and mulberry plays an important part in that. There are many different remedies achievable with mulberry using Ayurvedic medicine, in which they call White Mulberry Tuda. The leaves are used to make a tea for throat infections, colds and to promote sweating. The root bark is regarded as a purgative and anthelmintic, and the juice of the root is used to treat high blood pressure. The latex from the sap is used for sores on the skin, and in skin creams. The fruits are good for fever, depression and sore throat problems such as mouth ulcer and enlarged

glands, especially when made into a juice, and when the juice is made into a cordial it is good for controlling excess yellow in the urine. Generally, the mulberry tree is regarded as helping reduce cholesterol, heart problems, preventing blood clots, aiding in weight loss, helping digestion, boosting the immune system, supporting eyesight, enhancing appetite, reducing anemia and relieving constipation

It is believed to benefit hair growth, relieve fatigue, calm the mood, reduce insomnia, control thirst, purify the blood and remove phlegm. It is also used to aid with hepatitis and dizziness. Since India is quite a hot country, it is valued for the cooling effect it has on the body, and

helps with blood disorders.15

In nearby Pakistan, the juice of white mulberry berries is used for jaundice and hepatitis, and Native Americans also used the white mulberry, making infusions from the bark to use as a laxative, a treatment for

dysentery, and as a purgative.5 In Tibet they have been reported to use the

bark to fight bad infections, and to help with degenerative diseases such as cancer, arthritis and tuberculosis. The wood is powdered and applied externally for pain relief. They also use the root to help with encouraging bowel movement, and the leaf is considered useful for female problems. The

fruit is regarded as an all-round health tonic.13

Traditional uses of White Mulberry have been recorded in written history for thousands of years. The earliest written evidence of mulberries is probably from The Bible, with the quote "to the end they might provoke the elephants to fight, they shewed them the blood of grapes and mulberries" from 1 Maccabees 6:34. Mulberry trees and silk are also mentioned in the Bible numerous times, which shows that mulberry trees have been growing

in that region for hundreds of years before Christ.16

The people from the Holy Land of Israel used the bark of the tree to

treat coughs and colds, as an antitussive and an expectorant, and also to increase urination. The leaves were also used, in this instance to break a fever, and the fruit were considered medicinal. They were used for high blood

pressure, insomnia and nerve troubles.13

There is also documented mention around 200 BC of White Mulberry and its medicinal properties in the anonymously written Chinese book Pharmacopoeia of the Heavenly Husbandman. It was a catalog of 365 Chinese medicines, and under White Mulberry it calls it the "Divine Leaf"

and attributes to it healing and anti-aging powers.17

The Roman poet Horace from the 1st century BC praised the mulberry fruit as a secret to long life in his quote "A man will pass his summers in health, who will finish his luncheon with black mulberries." This is obviously

a sign that he believed mulberries to be good for one's body.18

Pedanius Dioscorides was a Greek physician from the 1st Century AD who wrote the book Materia Medica, which was another highly influential work that was used for hundreds of years. He believed that a tea made of the tree parts would drive worms out of the digestive tract, that the mulberries could decongest the stomach, that the juice was astringent and that it was effective as well against fluxes, creeping sores and tonsillitis. The Talmud, a Jewish religious text from 200-500 AD, also mentions mulberry being used

as a purgatory.19

John Parkinson was a botanist who wrote a lengthy book entitled Theatrum Botanicum which was published in 1640, in which he quotes Galen of Pergamon was a Roman physician and prolific writer from 200 AD whose research was highly influential on medical matters for hundreds of years. The ripe berries of mulberry was then believed to be good for opening the belly, and the unripe fruit to be good for binding the belly, and also reducing women's periods. The root was known for having a stronger purging quality, and the leaves for killing intestinal worms especially if they were taken before meat. The juice of the berries was used for sores in the throat and mouth and general inflammation, and also the juice of the leaves was reputed to be a remedy against spider or snake bite, especially when mixed with vinegar. It had some beauty uses too; the leaves and bark boiled in water were meant to be good for washing and lightening the hair. The root and leaves was also used to treat toothache, and the leaves were used to help stop bleeding in any place of the body. There is also a more obscure passage which involves cutting a branch of the tree during a full moon and involving the wrist of a woman, urine and hair removal - the mists of time make that

one a little hard to understand!20

Written evidence of mulberry trees occurs again around the 7th to 11th Century in The Book of Songs, which is a collection of Chinese poetry which was traditionally performed in song form. Mulberry trees feature in it quite

a few times, showing how important it was to the people of China, as it is

mentioned as a fruit, as a root and as a wood.21

Then in the 1500s there was a Chinese man called Li Shizhen, who was a doctor and a naturalist. He became annoyed at the mistakes found in the other medical literature at the time, and set out to write his own book. It took 27 years and he died before it was published, but it became one of the most important books in China. It is known as the Compendium of Materia Medica and in it he talks about mulberry as an important health-giving plant. He says that it makes people wise, makes the body ageless, promotes beauty, helps digestion, and helps with moodiness. He also recommended it for diabetes,

obesity, coughs and phlegm.18

Also in the 1500s, the English Botanist John Gerard wrote a book listing plants and their medicinal uses, in which he discusses mulberries. He says that a cordial made with the juice of the mulberry fruits was good for swollen throats and tonsils, and that the bark, leaves and gum were good for toothache and blocked digestion. Gerard also mentions a quote from Hegesander of Athens which says that when the mulberry trees did not fruit for a continuous period of 20 years, the people of the land became quite ill

with gout.13

This must have been more than a coincidence, and mulberry has been used in China for hundreds of years for gout, and in fact scientific studies have shown there is a direct link with the boiflavinoid called Morin

which is found in mulberry trees.22

Nutritional Content

The leaves of White Mulberry contain quite high nutritional value, as they are high in protein (15-30%), dietary fiber (28-44%), and contain Vitamin A, Vitamin B1, Vitamin B2, Vitamin C, calcium, iron, potassium, zinc, beta-carotenes, phosphorous, and magnesium.9 In fact they contain twenty-five times the calcium found in milk, and ten times more iron than spinach. Leaves also contain succinic, tartaric acids, xanthophyll, and isoquercitrin (quercetin 3-glucoside); and adenine, chorine, and trigonelline bases are present in young leaves.

Calcium in important for our bone health, for our teeth, for the prevention of colon cancer, and it also reduces obesity. Iron is used in our bodies to carry oxygen in our blood cells and so helps prevent anemia.1 Potassium helps the body regulate blood pressure, the heart, the kidneys, muscular strength, the metabolism, electrolyte functions, proper water balance and the nervous system. This means that potassium helps prevent stroke, anxiety and stress. Magnesium is important for muscles, nerves, bones, the heart, the immune system, blood pressure, blood sugar, energy metabolism and protein synthesis. The list goes on – all we need to know is that they are all good for our health.

The fruit are high in Vitamin C, and contain 5% protein and 87%

carbohydrates5, but are low in calories. They contain Vitamin A, Vitamin E,

Vitamin K, Vitamin B, iron, niacin, riboflavin, folic acid, potassium,

manganese, and magnesium.24

Amino acids found in White Mulberry include phenylalanine, leucine,

valine, tyrosine, proline, alanine, glutamic acid, glycine, serine, arginine,

aspartic acid, cystine, threonine, sarcosine, gamma-amino-butyric acid,

pipecolic acid, and 5-hydroxy pipecolic acid.25 Amino acids are organic compounds which perform innumerable important functions within our bodies. very promising results about the various health-giving effects of White Mulberry. Studies in Japan have shown that White Mulberry can reduce the low-density lipoprotein (LDL or "bad cholesterol") in our bodies and in turn this reduces plaque in our arteries. This is because mulberry leaves contain isoquercitrin and astragalin, the former of which contains the well-known antioxidant flavinoid quecetin.4

Diabetes is a serious and complicated health condition that leads to a number of different problems around the body, including cataracts and atherosclerosis (plaque in the arteries). It is a disturbingly growing trend around the world, and health authorities don't seem to be able to do much to prevent it. Perhaps they need to have a closer look at White Mulberry. It can help with many different sides of diabetes such as blood sugar, blood pressure, cholesterol and weight loss. There have been studies which prove the long-reputed link with White Mulberry and diabetes, and these show that White Mulberry leaves contain compounds such as the nitrogen-containing sugar 1-deoxynojirimycin which inhibits certain intestinal enzymes, such as the metabolism of disaccharides, and hence preventing the amounts of monosaccharides entering the blood stream. They also found that mulberry extract reduced the blood sugar spike

after eating a high carbohydrate meal.18

This means that when you eat starches such as bread, pasta or potatoes, less of it will be converted to sugar in your blood after the meal.

This special chemical compound 1-deoxynojirimycin cannot be found anywhere else apart from the mulberry leaf, which makes mulberries special indeed. This compound also has the effect of protecting your heart from the problems of diabetes, in the same way that diabetes drugs do.

A study in India which used powdered mulberry leaves found that people with Type 2 diabetes had significantly reduced blood fasting levels, as compared to a control group which were on the standard anti-diabetic drug glibenclamide which also lowered triglycerides. Meanwhile the White Mulberry was also lowering their triglycerides AND bad cholesterol while increasing their high-density lipoprotein (HDL or "good cholesterol"). The researchers also noticed that the White Mulberry also reduced lipid peroxidation in the erythrocyte membranes, while the glibenclamide did not.

This is important because it means less damage from free radicals. White Mulberry has yet another way in which in helps patients with diabetes, and that is with the fagomine compound. This induces insulin secretion, and so helps the body regulate itself.38

One fantastic use for White Mulberry is actually including it in your foods, so that it helps your body at the same time as minimizing the negative health effects of potentially unhealthy meals. Several studies showed that mulberry leaf helped normalize blood pressure, reduce cholesterol and reduce blood sugar because it contains GABA (Gamma Aminobutyric Acid), phytosterol, and DNJ (Dioxiogirimycin). These are all factors which are not only important for managing diabetes, but also highly important for reducing the chance of heart disease. DNJ also has the benefit of boosting circulation.26

White Mulberry has anti-inflammatory properties, which appear to help fight against the build-up of plaque in arteries. A study found that there have been improvements in cardiovascular health which at least in part would be helped by the anti-inflammatory properties of White Mulberry, which led to notable reductions in artherosclerotic plaque build-up. Mice fed with White Mulberry leaf powder as part of their diet show a great reduction in artherosclerotic lesions, which was partly attributed to the Quercetin, and in fact, the result was more effective when using the whole leaf instead of a Quercetin extract, indicating bioactives were at work. Another study found that the anti-inflammatory properties have been found within the bioactives from White Mulberry.4

Studies discovered that memory formation and cognition was increased in a level similar to Piracetam, and this may be connected to the similar structure of the pyrrole alkaloids found in White Mulberry. Another study used a methanolic extract of Morus Alba and found that it reduced amphetamine-induced fights in mice. Another study used ethyl acetate fraction of Morus Alba with chronic stress testing and found that it reduced stress in subjects, even more effectively that Diazepam, and also normalized biomarkers of stress and reduced memory losses. Diazepam is more well-known by the brand name Valium, which is a synthetic drug which is used to treat anxiety. In comparison, with the use of White Mulberry even the non-stressed subjects showed signs of reduced anxiety.4

High Blood Pressure

The bark of White Mulberry has hypotensive properties, which means that it lowers high blood pressure. A study on rabbits showed that White

Mulberry root bark reduced blood pressure, due to the bioactives kuwanon G and H, and these results have also been replicated in other studies.4

Blood Clotting

White Mulberry has been found to be able to inhibit blood clotting. One study which used Morusinol (prenylated favonoid), which is a non-caloric bioactive only found in White Mulberry, found that it was able to inhibit clotting even more effectively than Aspirin.

Two studies have both noted that an ethanolic leaf extract of White Mulberry showed a reduced food intake, which shows potential as a weight loss supplement. Another study found that the leaves of White Mulberry contain 1-deoxynojirimycin which reduces the absorption of carbohydrates in the digestive system - another helpful way in which White Mulberry can help with weight loss. This same effect was noted in another study which linked the beneficial effects with diabetes. Another study found that the roots of White Mulberry helped with diabetes by reducing blood glucose, and a number of studies using the White Mulberry leaves also found the same result. One study showed that it was somewhat able to inhibit fatty acid absorption.4

Digestive Health

White Mulberry is a cathartic, which means that it helps with moving the bowels. This actually different to a laxative, which is more about softening whereas a cathartic causes quickening of movement. At the same time, the fruit juice is also a laxative, so it helps in two ways at the same time. Meanwhile the fruit juice also treats diarrhea, so amazingly enough it is able to treat opposite conditions with the same part of the plant. A study has shown that a mulberry extract has reduced cell death induced by oxygen/glucose deprivation, and that this may be because of the high Cyanidin-3-Glucoside content. Another study has shown that mulberry reduces oxidative stress due to its antioxidant properties creating an enhancement of oxidative metabolism.4

Asthma

The bark has properties which are anti-asthmatic and also helps

suppress unwanted coughs.25 One study has found that the root of White Mulberry has helped with asthma by reducing airway hyper responsiveness and airway inflammation, amongst other benefits which help with asthma. It was comparable to the use of the asthma drug Cyclosporin A.4

Cancer

Another study found that mulberry leaves prevented liver cancer and

Studies have been done with White Mulberry on various different types of cancer, including breast, bowel, melanoma and leukemia. White Mulberry also contains the antioxidant resveratrol which is a strong anti-inflammatory and an anti-mutagen. This means that it helps to stop healthy cells mutating into cancer, and it can also help prevent heart

also evidence that resveratrol decreases the reproduction of the influenza virus.33

Eye Health

Growing tree outdoors

You can get all these health benefits right on your backyard! The large leaves of mulberry trees lend an abundant shade from the hot summer sun, as well as providing delicious sweet fruits for eating fresh or dry them.

Mulberry trees are growing very fast and can live more than 100 years. White mulberry trees were originally imported from China, and brought to North America in hopes of creating a thriving silk trade as mulberry leaves are the main diet of the silk worm. Between the 1600s and the mid-1800s, the silk industry grew and collapsed, but mulberry trees adapted to its new habitat.

The tree grows 30 to 50 feet tall and thrives in U.S. Department of Agriculture plant hardiness zones 4 to 8.41The common way to acquire a mulberry tree is by purchasing a young tree from a nursery. Most are grown in containers. The young tree should be planted in an open, sunny position, though it will leaf out and set fruit best in full sun, taking particular care not to damage the roots. The tree isn't picky about the type of soil, growing well in everything from rich to poor soils, and in sandy, clay or even rocky soils. Soil acidity can range from acidic to alkaline42. White mulberry is somewhat drought-tolerant but prefers evenly moist, well-drained soil. It can also tolerate brief periods of wet soil. Its high salt tolerance makes white mulberry a good choice for coastal areas.

When buying a mulberry tree for fruit, choose a cultivar that is very hardy, self-fruitful and has good, seedless fruits. If the catalog or nursery does not specify, be sure to ask, since many fruitless and weeping cultivars are available. If a mulberry tree grows in your area, it can be propagated by hardwood or softwood cuttings and grafting43.

Planting and Tending

Once you have the perfect location, dig a bushel-sized hole and place the tree in the hole. Spread the roots if possible. Return the topsoil to the bottom of the hole, covering the lower roots. Then mix 4 to 8 quarts of compost with the remaining soil that you dug from the hole, and return that to the planting hole. Be sure to tamp the soil lightly as you add it, to get rid of air pockets around the roots. Adding water when the hole is half filled with soil and again when the hole is full will help settle the soil and remove air pockets. When the hole is full, form a rimmed “bowl” of soil around the tree and water thoroughly. The bowl helps hold the water around the tree. Water the tree once a week throughout the first year, unless it receives an inch of rain per week. Mulch at least 2 feet out around the tree trunk to reduce grass competition. Mulberries are fast growing and need little fertilizer.

Prune trees to establish a healthy branching structure, free of narrow crotches or too many branches close together. Once the structure is established, little pruning is needed. Branches can be kept short to prevent wind or weather damage. Mulberries tend to bleed when cut, so avoid heavy pruning. Remove dead wood or inward-growing branches that rub against neighboring branches in late autumn to early spring.

Fruits Harvesting

In East Coast, mulberries ripen in early summer, usually over a two- to four-week period44. In some regions, Mulberries are harvested in early autumn. A mature tree can produce up to 10 bushels of fruit – enough for you and for the birds that will flock to the tree. Hand pick the fruit or spread a sheet under the tree and shake the tree so that the ripe fruit will fall.

Fruit are delicious eaten fresh. As they ripen over many weeks, you can eat them every day for breakfast or dessert. Mulberries are also made into pies, tarts, jellies, syrups, marmalade, juice and wine. They can be dried and used as a snack, or in puddings or oatmeal cookies and muffins. Mulberry wood barrels are used to age balsamic vinegar.

Pests and diseases

Mulberries are generally free of pests and diseases, although cankers and dieback can occur. In some areas "popcorn disease"45 is an occasional problem, in which fruits swell to resemble popped corn. The disease carries on from one season to the next, so collecting and burning infected fruits help control it. The ripe fruit is very attractive to birds, but there is usually enough fruit left over for harvesting. Watch for scale, mites and mealybugs. Messy fruit may be a concern.

Growing tree outdoors

You can also grow a White Mulberry tree indoors. Mulberry trees will grow in any spacious and airy sunroom or conservatory. The resilience of a mulberry tree makes it especially good to grow indoors. The mulberry is a well-adapted tree that grows well indoors with minimal care. To plant your mulberry tree you’ll need 10- to 15-gallon container, 10-10-10 NPK fertilizer Perlite46.

First, find a light sunny area of your home, where the tree will receive six to eight hours of sunlight. When you find it, prepare a

10- to 15-gallon container for your plant. It’s better to use a ceramic container and not a plastic one, as plastic does not provide a sufficient air flow to the roots of the plant. Set at the bottom of container a layer of stones. This will ensure a proper water draining.

Second, fill the container with an airy perlite potting soil. Use

enough soil so that the hole where you plant the sapling is of equal

depth and twice as wide as the mulberry tree's root ball. Ensure there is

enough soil around the sides of the interior of the pot so the tree experiences

increased water absorption.

Once it’s done, put the sapling into the hole and refill it with soil.

Do not pack the soil down on the sapling too harshly. Water the soil to

collapse any air pockets.

How to water your mulberry tree? It’s recommended to water it

once a week using about 5 gallons of water. Feed the plant once in

the early spring and a second time in late summer with 1 lb. of 10-10-10 NPK

HOW TO DRY WHITE MULBERRY LEAVES

If you already have a mulberry tree on your backyard or indoors, you

can dry its leaves by yourself! There a few steps that makes this process very

easy.

Step 1. Select the leaves you are going to pick. They must be fresh, bright

green and healthy looking (free from decease). Make sure that there is no

impurities on the leaves.

Step 2. Pick the leaves. Wash the freshly picked leaves under running water.

The leaves are now ready to be sun dried. Leave the leaves on a clean cloth

for two or three days, depending on the sun. During cold weather, it may take

longer time to have them really dried.

Step 3. On the second or third day the leaves are

ready. To make sure your leaves are ready crush a

leaf with your hand. They must be easily crushed

into powder.

Step 4. Crush the leaves lightly and loosely. Do not

crush them into powder (until you suppose to make

White Mulberry Matcha).

Step 5. Store your crushed leaves in the dry place,

preferably in the dark ceramic or glass, or wooden jar.

The dried leaves you can use for making white mulberry tea, or for cooking

(crushing them into fine powder).

HOW TO DRY WHITE MULBERRIES

Natural dried mulberries are a delicious and nutritious snack. For a

fruit, they have unusually high levels of iron and protein, and are a good

source of many nutrients47.

These crunchy berries have no additives and pack a natural, sweet

taste. You can enjoy mulberries by themselves as a snack or add them to

other dishes. Try mixing them in smoothies, cereal, oatmeal, and yogurt or

baking them in muffins, pies, and chocolate cake. Mulberries can also be

used to make puddings and wines.

It’s very easy to dry white mulberries by yourself if you are a happy

owner of a mulberry tree. There are a few steps of the process.

Pick the fresh white mulberries from the tree. Pick only those

which are not overripe. But at the same time do not pick not

ready mulberries.

Prepare mulberries by washing them in cool water. Then drain

and place them onto a drying tray with a plastic screen. Put the

piece of cloth inside the tray.

Arrange the mulberries on the drying tray with spaces between,

so that the berries do not bulk on each other. That allows even drying of the

berries. The actual drying time depends on the type of fruit and outdoor

conditions. Take the fruit indoors if it is raining and at night to prevent

moisture from collecting on the fruit.

Place mulberries in an airtight container once they are dried.

Plastic containers with lids or glass jars work best. Store the

mulberries in a dry, cool and dark place. If the containers are kept in a cool,

dark place, the fruit will last for at least 6 months. Check the fruit regularly

for mold during the first few weeks of storage and discard any doubtful

pieces.

During the cold times when there are not much sunshine, the white

mulberries can be dried through oven drying.

Oven Drying

Wash the white mulberries and gently strain them on a paper

towel and wait for them to completely dry.

Drying water-heavy fruit, such as mulberries, requires days of

low-grade baking, which can cause sticking. Keep your

mulberries from sticking to the pan by using coated, nonstick pans. Also,

don’t sacrifice your mulberries to save time. Trying to lower the number of

drying batches by filling a 3-inch deep casserole dish with mulberries will

prevent even heat distribution and cause the berries to stick together. Drying

your mulberries in single-layer batches ensures equal and optimal heat

distribution inside the oven.

A baking time of 24 to 36 hours at 140 degrees Fahrenheit will

slowly dehydrate your mulberries without burning them. Use a

spatula to turn and shuffle the mulberries around the pan approximately

every hour to ensure each mulberry dries evenly. Test the dryness of your

mulberries by gently shaking the pan side to side. Well-dried mulberries will

make a rattling sound against the pan.

Even with the careful attention to arranging and baking, all

batches of dried berries contain some uneven moisture.

Redistributing the moisture before you store your dried

mulberries reduces the risk of mold and spoiling. Half fill a glass jar with

dried mulberries, close the lid and store at room temperature away from

sunlight or moisture for 10 days. During this time, the drier mulberries will

absorb excess moisture from the less dry mulberries.

Shake each jar for 10 seconds once a day to rotate the moistest

mulberries throughout the jar and prevent them from sticking

to each other. Store the mulberries in a dry, cool and dark placeб in an

airtight container with lid.

Hand-made White Mulberry Soap

Making your own soap at home is easy, frugal, creative and fulfilling.

There's something really marvelous about taking a bar of your own

homemade soap into the bath or shower with you. You are welcome to choose

your own ingredients and customize the soap to fit your needs. Here are

some recipes for your soap with White Mulberry.

There are several

different methods to

making your own soap,

such as Cold process

method, semi-boiled

method, full-boiled

method, melt and pour

method. The most

widely used method by

home-based soap

makers is a cold

method.

Cold process soap is made from oils, lye and water. When these

ingredients are combined at the right temperature, they harden into soap in

a process called saponification48.

1. First step is to gather all ingredients you’ll need for your soap:

24 ounces of coconut oil,

38 ounces of vegetable shortening,

24 ounces of olive oil,

12 ounces sodium hydroxide, or lye (also called caustic soda),

32 ounces spring or distilled water,

4 ounces of your favorite essential oil, such as peppermint, lemon, rose

or lavender,

2 ounces of finely grounded white mulberries or oil extract from white

mulberries (Mulberry oil extract process is described in next Chapter)

2. Next step is set up your soap-making workspace. You can find a clear

space in the kitchen, since you'll need to heat the ingredients over the stove.

You'll be working with lye, a dangerous chemical, so make sure children and

pets are not underfoot while you work.

You will need some additional equipment for your soap-making process:

rubber gloves, to protect you from the lye,

a large stainless steel or enamel kettle (do not use aluminum, and do

not use a pot lined with non-stick surface),

plastic or wooden spoons,

stick blender,

mold (you can use a carton box with

parchment paper).

Do not forget to read up on how to work with lye

safely! Before you start the soap-making process,

read the safety warnings that came on your box of

lye.

Lye should never touch your skin, as it will

burn you. Work in rubber gloves only.

3. Take lye and pour the lye into the water. Place the container of water

under your stove's running exhaust fan, or make sure the windows are open

and the room is well-ventilated. Add the lye to the water slowly, stirring

gently with a spoon until the lye is completely dissolved.

NB! It is very important to add the lye to the water and not the other way

around; if you add the water to the lye, the reaction between the two

substances is too quick, and may be dangerous. It’ better to wear safety

goggles to protect your eyes from chemical reaction.

Set the mixture aside. Allow it to cool and let the fumes dissipate.

4. Combine the oils. Set a large stainless steel pot on the stove on low-

medium heat. Weigh the oils one by one. Add the coconut oil and vegetable

shortening and stir frequently until melted. Add the olive oil and stir until all

are completely melted and combined, then remove the pot from heat.

You want the oils to be at about 100 degrees Fahrenheit when you add the

lye-water.

Make sure all of your soap making additives, color, and fragrance are

ready to go, and readily at hand. Make sure you've got all of the spoons,

measuring cups, spatulas and whisks you're going to need nearby.

5. Slowly add the lye-water mixture to the soap pot. The oils will

immediately start to turn cloudy. Using a wooden or heat-resisting spoon

blend the lye-water into the oils. This is the beginning of the saponification

process.

6. Set the lye pitcher aside (in a safe place), and begin

blending. Once the lye is added to the oils, the soap

making chemical reaction begins, and you'll need to move

steadily.

7. While stirring the lye-water-oil mixture with the stick blender, turn on

the blender in short bursts. To start with, blend for 3-5 seconds and then stir

some more. Once you start using the stick blender, you will immediately see

the soap mixture begin to come together. Keep blending in short bursts until

the oils and lye-water are completely mixed together. If you were to hand-

stir the pot of soap, like soap makers used to do, it might take an hour or

more

8. Once the soap mixture is completely blended, but before it begins to get

too thick, slowly add your fragrance or essential oils to the mixture (in our

case its pureed white mulberries or white mulberries extract). You can also

add a colorant to your soap to make it bright and creative.

9. Pour the soap into your mold. If you are using a shoebox or wooden

mold, make sure it is lined with parchment paper. Use an old plastic spatula

to scrape out the last bits of soap from the pot to the mold. Make sure that

the soap evenly spreads out. Put the lid on your mold and cover with several

towels. Leave the soap in a warm, safe place to set up and begin curing for 24

hours.

10. Keeping your gloves and safety goggles on, wash all of your utensils

and soap pots with hot, soapy water. Note: The oily raw soap residue that's

left in the pan is still a bit caustic, and can cause irritation and burns.

11. After your soap has set for about 24 hours, it should be hard enough to

unmold and slice. Pop or

slide the soap out of the mold.

Slice it into whatever size

bars you like, and set it aside

to cure. While the

saponification process will

have stopped in several days

and the soap will technically

be safe to use, it really needs

to cure for approximately

four weeks until it's ready to

use.

Important! If the soap did not set at all, or has white or clear pockets in

it, this means it is caustic and cannot be used. This is caused by under-

stirring during the soap-making process.

This is the basic cold method49. You can use white mulberries to make

your glycerin soap that will give your soap transparency.

Home-made Shampoo with White Mulberry

Many people are trying to avoid chemicals in commercial shampoos.

Originally shampoo was solid as soap with additional moisturizers so that

you didn’t rub off too much the natural oils

from your hair and scalp50. Nowadays

shampoos tend to be acidic because if the

pH gets too high (alkaline) the sulfur

bridges in the hair keratin can break,

damaging your hair.

Making your own chemicals-free

shampoo might be a natural way to wash

your hair gently. Extract of white mulberries will benefit your hair growth

and health. For this recipe you will need a mulberry-infused oils. Mulberry

oil extract process is described in next Chapter. When your white mulberry

oil is ready, you can proceed to shampoo making.

Shampoo Ingredients:

1/4 cup coconut milk,

1/3 cup Liquid Castille Soap,

1/2 of a teaspoon (or several capsules) of Vitamin E oil (optional),

20 drops of Essential Oils of a choice (for instance, peppermint,

lavender, rosemary and orange or combinations of those),

15-20 drops of White Mulberry oil.

Preparation:

1. Mix all ingredients in an old shampoo bottle or pump soap dispensers.

2. Shake well to combine all ingredients.

3. Store in bottle up to a month.

4. Shake before use.

5. Use about a teaspoon every time you shampoo.

DIFFERENT FORMS

White Mulberry is a real tree of thousand wonders. All its benefits

can be consumed not only on forms of whole loose leaf tea, dried or fresh

berries, but you can make use of it in different forms, such as oil extract,

decoction or powdered leaves, capsules etc.

White Mulberry Extract

As described in previous chapter, the white mulberry extract can be

used in many ways, including cosmetics, tinctures, and even ointments. The

mulberry tincture can be added into your homemade creams. Soap,

shampoos, and it’s easy to prepare. To make a mulberry tincture you will

need:

Fresh or dried mulberry leaves,

Jar with lid,

Vodka (pure vodka without any additives),

Tincture bottles.

1. Place white mulberry leaves in a sealable glass jar (do not use metal or

plastic jar, as it may cause over oxidation or incorporation of plastic into

your tincture).

2. Cover all mulberry leaves with

vodka. Use about three times more vodka

than leaves if you are using fresh leaves.

Use about five times more vodka than

leaves if you are using dried leaves, to

account for absorption.

3. Allow the leaves to soak in the vodka

for about 4-5 weeks, giving the jar an

occasional shake to redistribute the leaves. The alcohol in the vodka will

pull out the valuable properties from the leaves.

4. Let the extract flow through cheesecloth to remove the leaves.

5. Put you white mulberry leaf extract into tincture

jars.

Now you tincture is ready!

Oil Essence White Mulberry

These oils you can incorporate into your home-made shampoo or soap,

or even in creams, as it was described in previous chapter. To make an oil

essence, you will need:

White Mulberry Leaves (preferably fresh, but you can also use dried

leaves as well),

Olive or coconut oil,

Glass jar.

1. Put white mulberry leaves into a glass jar. Distribute them evenly.

2. Pour olive or coconut oil into jar, so it cover the leaves at least 1 inch.

3. Steep mulberry leaves in olive oil or coconut oil for several days.

4. When your white mulberry oil is ready, let the extract flow through

cheesecloth to remove the leaves.

White Mulberry Capsules

Many physicians recommend to drink tea regularly, for achievement of

all tea benefits. White mulberry leaf tea is recommended by Dr. Oz in his

show a cup with every meal23. But it's not always convenient to brew a cup

tea, especially when at work or on the go. White mulberry leaves can be

consumed in form of capsules as well.

White Mulberry Matcha

The word matcha (抹茶) in Japanese is made up of the character for

a matcha bowl (called a Chawan),

a bamboo whisk (called a Chasen),

hot water about 175° F (80°C)

White Mulberry Matcha

Step 1: Pre-warm your matcha bowl by pouring about ½ cup of near

boiling water in the bowl. Swish the water around the bowl and discard the

water. Carefully dry the bowl.

Step 2: Scoop about 1 tsp of White

Mulberry Matcha powder into your bowl.

Matcha tends to clump up in the pouch so

traditionally one should sift the matcha.

Step 3: Pour about 2 Tbs. of hot (175° F)

water on the matcha powder in your bowl. Whisk

slowly at this point to create a thin paste. Make sure you gather up all the

powder so there are not loose clumps in the bowl.

Step 4: Add another ½ cup of hot water to the bowl.

Step 5: This is the trickiest part of brewing a traditional matcha.

Whisk the contents of your bowl in a rapid “w” motion. Do not let the tips of

the bamboo whisk touch the bottom of the bowl. The whisk should be

suspended slightly above the bottom of the bowl. Your goal here is to create

nicely uniform froth. The bubbles should be small, uniform in size and evenly

distributed.

Step 6: Groom your froth by lifting the whisk almost out of the liquid

and move it very gently through the surface of the froth to break up any large

bubbles.

How to brew a “lazy” matcha with White Mulberry Tea

Step 1: Scoop about 1 rounded tsp of white mulberry matcha into your

cup.

Step 2: Moisten the powder with about 2 tbs. of hot water and blend

it with a spoon until you have a thin paste.

Step 3: Add 6 – 8 ounces of either hot water or hot milk.

Step 4: Add sugar as desired.

Step 5: Stir briskly or froth using a frother or whisk.

COOKING WITH WHITE MULBERRY

If you have a Mulberry tree in your yard that every year produces huge

numbers of mulberries, you can make a lot of tasty things with your wonder

berry. Or you can buy ready-made dried mulberries to incorporate them into

your favorite diches. White mulberry is a sweet berry ideal for jams, cakes,

puddings etc.

White Mulberry Jam

1. Pick up the mulberries. Wash them in plain cold water. Remove all

stems and leaves.

2. Mush fruits up a little, so the natural pectin is released and your jam

could naturally thicken.

3. In a large pot, add mulberry, lemon juice, and pectin, whisking

together. Bring the mixture up to a rolling boil.

4. Depending upon which kind of jam you make, choose a sugar

quantity. Normally, for white mulberry jam you will need about 4

cups of sugar. Add all of the sugar at once, stirring until it is

dissolved. Return to a rolling boil and cook 1 minute.

5. Skim off any excessive foam from your jam.

6. Sterilize and heat jars and lids.

7. Put jam in the jar, put the lids and rings on, and process in a water

bath for 10 minutes. Cool. Enjoy!

Muffins with Dried Mulberries

Dried mulberries have a delightful flavor, tasting keenly similar to goji

berries with a hint of figs. They have a slight crunch but an overall softness

once you get chewing on a handful of them. Needless to say, they’re great

straight out of the bulk bin as a midday snack, but they’re also useful in your

recipes back at home. You can try add white mulberries into muffins:

Ingredients:

2 cups flour

1 tsp cinnamon

Juice of 1 lemon and zest

1/2 cup sugar

1 egg

100g butter, melted

1 cup milk

1 cup dried white mulberries

1. Pre-heat oven to 180°C. Line a 12 cup muffin tin with muffin patty

pans and set aside.

2. Sift flour and cinnamon in a bowl.

3. Combine lemon zest, juice, sugar, egg and melted butter together.

4. Pour wet ingredients into dry and gently fold to combine.

5. Spoon into patty pans and bake for 25-30 minutes.

Your muffins are ready! Enjoy!

THE MAGIC OF WHITE MULBERRY
