MARINA UPDATE:

Last week I posted on the web site with hopes of putting boats in the slips by the weekend of June 14th. That doesn’t appear to be a good date, but I still have my fingers crossed that it may work out. I happen to think that the following weekend may be a better date. Mid Atlantic Marine is being held up by the wiring of the electric for the lights and camera systems. It is a very tedious job. When Curtis Electric finishes work with the electrical boost stations, Mid Atlantic will be moving full steam ahead placing the finger piers and pilings in. Once they start, I will be asking for volunteers to place all the Eye Bolts in the pilings and piers, along with running the lines between the slips. If there is an artist or a perfectionist out there, I would like to have someone paint the numbers on all the slips. Please contact the office if you are interested. The Boat Ramp will be open on weekends until all the work is completed.

OVERFLOW PARKING:

Please park your vehicles to the rear of the overflow parking area near the tree line. This makes it easier for the people with boats and trailers to be able to park in the front of the parking area.

THANK YOU FOR YOUR COOPERATION

PRESIDENTS CORNER

Summer is on the horizon and everyone is glad to be done with the winter and iffy spring. We are looking forward to the Annual Meeting this month and hope all members will take the opportunity to vote for Board Members. The Memorial Day Picnic was a big success. We had a beautiful day and a huge turnout. We dedicated the Clubhouse to Pat Young for over twenty years of service being the chairperson of the Clubhouse Committee. There is a beautiful arrangement on the wall of some of her paintings and a dedication plaque with a rose to honor Pat. We were also glad that her daughters could attend and of course we played New York New York in her honor. We would like to give a big THANK YOU to John and Jane Garner Lot 264 for their donation of an ice cream cooler. It will make our ice cream socials so much nicer and allow Linda to sell ice cream novelties at the pool. The new picnic tables were a hit, no more splinters and red paint on clothing. We are still considering a Pavilion over the concrete platform at the clubhouse. The lawn service seems to be doing a good job and there have been many compliments on their work. If you have an area that gets missed please notify the office so that they can contact the lawn service to take care of it for you. It will take them a while to become familiar with all the nooks and crannies in the park but they aim to please. It is nice to have it all cut in one day rather than five days. We are looking forward to a good summer full of activities for all homeowners and their families. I am looking forward to seeing all of you at the Annual Meeting. If you have concerns you can let me know through the website, the box in the office foyer or my personal post box #41.

Cherry Cola Baby Back Ribs

Sauce ingredients:

(4) Cans of Cherry Cola (2) Cups of Cherry Preserves (2/3) Cup Dijon Mustard (1) TBSP Hot Sauce (2) TBSP Horseradish (2) TBSP Apple Cider Vinegar (3) TBSP Soy Sauce

RIBS: (6) Whole Racks Baby Back Ribs (1) Cup of White Wine Crushed Garlic Cloves Sprinkle ribs with salt and pepper. Place crushed garlic and white wine over Ribs. Wrap each Rib rack separately and tightly in foil enclosing completely. Cook at 325 degrees for approx. 2 hours, until ribs are almost falling off the bone.

SAUCE: While the Ribs are cooking, place all cans of Cherry Cola in a large pan and boil on medium high for about 45 minutes to reduce the liquid. Then add the rest of the ingredients and simmer on medium to low heat for another 35 minutes. Take off the stove and allow cooling while the ribs finish cooking.

Set aside on cup of the sauce. Take out the ribs and cut into portions and toss well with the remaining sauce. Put on the grill about 5 minutes until ribs are brown and glazed. Serve with remaining cup of sauce for dipping.

I have made these many times. Enjoy ! from Judy
