What is Chia Gel?

It’s a unique substance produced by chia seeds when you mix them with water, or other beverages. Chia gel is the soluble fiber on the outside of the seed shell absorbing the water & holding it to the seed. Chia seeds have no flavor, and chia gel also tastes like nothing, if you make it with filtered water.

You can see the gel between the seeds in this photo. It is what is holding the seeds apart from each other.

But what are chia seeds?

What Are Chia Seeds?Chia seeds are tiny nutritious seeds that have no flavor. This means you can add them to almost any food or drink, without altering the taste for a boost of added nutrition. Chia is unique among seeds for its ability to

produce gel. But that’s not all chia seeds can do! Just look at what’s inside, and how it helps you stay (or get) healthier!

More calcium by weight than milk Trace mineral boron (to help you absorb the calcium) More magnesium than broccoli Healthy omega-3 oils (like what’s in fish—but never any fishy flavor!) Complete protein (rare in plants, it’s complete, like the protein in meat) Soluble fiber – feeds the good probiotic bacteria to help you digest food Insoluble fiber – helps food move easily through the digestive system for

regularity Vitamin B Anti-oxidants (To fight free-radical damage & keep the omega 3 oil fresh for

extended periods) like anthocyanin, the dark colored pigment

How Do You Make Chia Gel?

Chia gel is super simple to make with the

Chia gel recipe:The ratio for making chia gel is 9 to 1. That’s 9 parts water to 1 part chia seeds. This ratio works on any amount of chia, so you can always make just as much as you’d like. 1 tablespoon chia seeds9 tablespoons filtered water

Simply put the chia seeds & filtered water into a re-seal-able container, close the lid and shake to prevent clumping. Set this aside on the counter for about 15 minutes, and when you return, the seeds will have turned the water into a thick, clear gel that’s ready for you to use!Chia gel will keep for about 1 week, in a covered container in the refrigerator.

This heart shaped container has a re-close-able lid to keep the gel fresh & moist and also makes it easy to shake to mix it up.

How Does Chia Gel Work? This diagram is a simplified & enlarged view of a chia seed cut-away. The soluble fiber is normally invisible, laying flat against the seed shell. When you wet it, the fibers stand upright, trapping water and holding it to the surface of the seed. This makes the body work to remove the water, hydrating the digestive system as it goes.

The seed is so nutritious & the fiber so vigorous because of the chia plant’s harsh native environment. The seeds must be able to cling to rough, rocky soil to germinate. Then, they grow quickly with the powerful nutrients inside.

What Can You Use Chia Gel For?

Chia gel has so many uses in the kitchen. It’s doubly great, because not only can you use it to cut the fat in baked goods, or help blend flavors, but anywhere you use chia gel, you get the nutritional and fiber benefits of the chia seed itself. Using gel for its practical purposes (like replacing an egg) is great, but when you know the “side-benefits” you’ll be even happier!

Baking:The most surprising use for chia gel is in baking. You can use it to replace up to half of the butter, oil, or shortening in baked goods. The food will bake the same, taste the same, and look the same, but it will be half the fat. It’s an easy way to make your favorite bake-at-home treats reduced fat , without reducing the flavor! It’s as easy to use as scoop & stir, anyone can bake with chia gel.

Just look what you can do!

All of the items in this photo have half the fat of their normal counterpart

You can also use chia gel to replace an egg, in some baked recipes. (Generally 2 tablespoons of gel = 1 egg) However, you have to choose which to replace when you use gel, the fat OR the egg, you can’t generally replace both in 1 recipe with gel successfully.

Dressings:Chia gel is a great addition to salad dressings. It works as a flavor extender for creamy dressing. When you want the taste of a lot of dressing, but don’t want to use that much, mix chia gel in before you add it to the salad. It’s also great in oil/vinegar dressings. (Chia won’t gel in oil, nor anything too acidic like vinegar or lemon juice) When shaken up in dressing, it helps to mingle the flavors (especially if you let it stand about 20 minutes before using) Chia also contains healthy omega-3 oils, which help you absorb the fat-soluble-only nutrients in leafy greens. It can also be a thickener in your fruit-based dressing.

Colorful, healthy & appealing salads have preservative-free dressings that mix up in minutes at home, as well as bright & refreshing fruit options!

Burgers:Because chia seeds absorb liquids, they also gather up flavorings like spices or sauces. When you add dry chia to your burger mixture, with your seasonings of choice, the chia will try to gel. However, there isn’t enough moisture in meat to form actual beads of gel, so instead, it traps the moisture within your burger patties. This action results in a patty that clings together better, and is always juicy. Even with the “notoriously dry” turkey burger!

Mingle your flavors, make your patties juicer & easier to handle, and enjoy lower-fat turkey burgers that are still loaded with flavor.

Thickening:You can use the gelling action of chia seeds to thicken some soups, stews or sauces. The seeds absorb the liquid in the food, turning it into gel and thickening your sauce. They also add fiber, and help mingle the flavors.

Smooth spicy bean dip, refreshing lime soup, hearty chili, warm vegetable soup and more all benefit from the addition of chia gel.

Adding Chia to Wet Foods:When you want the food you’re eating to be the consistency you’re used to (such as yogurt, cereal with milk, soup, oatmeal, or jelly) you’ll want to use chia gel instead of dry chia, since the gel has already absorbed all the water. In this case, it’s as easy as scoop, stir and eat.

You can add it to your watermelon slush, party dips, overnight oats, chocolate protein smoothies, lemon mousse, fruited yogurt, & morning oatmeal…and so much more! You won’t notice the seeds, but suddenly low or no fiber foods (like yogurt) have the fiber you need!

Chia Gel in DrinksYou can turn a 0 fiber drink into a nutritional boost for your day when you add chia gel. Putting chia gel into a sugar-free or naturally sweet tasting drink (such as sweetening with stevia or xylitol) like fruit flavored tea, green tea, lemon/lime water and more can help you skip a snack. Chia gel makes you feel full, because the fiber & water combination takes up space in the digestive system. Your body has to work to remove the liquid from the fiber, making it treat a drink more like a food. If you want to cut appetite or feel full longer, a drink with some chia gel mixed in is a great idea.

*Avoid artificial sweeteners like aspartame & sucralose, they can make some people hungrier.Chia gel may also reduce the fizz in bubbly drinks. You can use chia gel in hot drinks too

Why is Chia Gel So Good For You?Prebiotic Fiber:Chia gel is formed with soluble fiber, which is a “pre-biotic”. You’ve heard of “probiotics”, those are the beneficial bacteria in fermented foods like yogurt. You may not be able to digest soluble fiber, but probiotic bacteria can, and it keeps them healthy. Healthy probiotic bacteria support the immune system, and better digestion. They kill harmful bacteria for you, and they break down foods on their own, so you can digest them better.

Fiber helps you feel full:You can’t digest fiber, or break it down for nutrients. It takes up space in the digestive system, without adding to daily calories. It acts as a sweeper, keeping food moving easily through the intestines. Soluble fiber keeps the food hydrated, and easy to process. Chia gel may be soluble fiber, but the seed shell itself is insoluble fiber. Both of these work together to keep you feeling full longer. You can actually skip snacks by adding chia gel to an unsweetened beverage like fruited ice tea.

Fiber at any time:What’s the best kind of fiber? The kind you’ll eat! Many modern food choices don’t have enough fiber in them. “Fiber-rich” foods can be overly gritty or tough. Chia gel & chia seeds are as easy as sprinkle & eat, or scoop & eat. Because you can add gel to almost anything, it’s never a chore to use, and since there’s no flavor, you can’t get tired of it.
