welcome to the winery hotel

WELCOME TO THE WINERY HOTEL
When The Winery Hotel opened it was the first urban winery hotel of its kind. The idea was to
create a venue where our guests could enjoy all aspects of the extraordinary world that is wine
and maybe even learn something new along the way.
Here, our guests can enjoy a glass of wine, either in the warmth of our Brooklyn inspired wine
bar or relaxing by the pool on our scenic rooftop. We also offer the opportunity of a unique
experience of food and wine pairing in our restaurant The Winery Kitchen, as well as a more
rustic atmosphere in our traditional Italian trattoria: Terreno Deli.
Beyond our 184 rooms and spacious conference areas, the hotel offers daily wine tastings led
by one of our wine cicerones, as well as guided tours in our state of the art winery, offering a
rare glimpse into the secret world of winemaking.
In our wine list you can find some of the best wines from around the world, both by the glass
and the bottle. If you’re having a hard time deciding what to drink, please feel free to ask one
of our sommeliers for advice.
And as usual with good wines, some bottles might already be finished. Please ask us for advice
on similar wines if your chosen one might be sold.
Enjoy!
WINES FROM THE WINERY HOTEL
Winery Red
The Winery Red is our signature wine made from handpicked grapes harvested in Tuscany,
transported to The Winery Hotel in a refrigerated truck. When the grapes arrive at The Winery
Hotel our winemaking is just as meticulous as in any quality winery in the world. Winery Red
is made from the Sangiovese grape with a small percentage of Cabernet Sauvignon. Aged for a
relatively short 6 months on barrique, this medium bodied, fruit driven wine is made to be
enjoyable with food but also just as it is.
2018 Sangiovese, Cabernet Sauvignon 380
Black Bottle Rosé
Each year The Winery Hotel produces a limited amount of rosé wine made from Sangiovese.
Aged only on steel tank this wine is fresh and light, perfect for a warm summer afternoon by
the pool on our rooftop.
2019 Sangiovese 380
WELCOME TO TERRENO
The Terreno estate lies in the heart of the Chianti Classico wine district, by the village of
Greve in Chianti, just 25 km south of Florence. In 1988 the Ruhne family from Sweden
acquired the estate and have since then committed themselves to improving the quality of the
Terreno wines. Terreno, set amongst the rolling hills of Tuscany, covers an area of 150
hectares of vineyards, olive groves, oak and chestnut forest. Archaeological research on the
site has unveiled evidence that viticulture and olive farming were practiced since the time of
the early roman emperors.
A guarantee of quality
Terreno wines are of DOCG status and comply with the strict Chianti Classico regulations.
Furthermore, the estate is affliated with the Chianti Classico Wine Consortium.
The vineyards and cellar
Terreno has enjoyed organic status since 2010, the estate and all wines are certified organic.
The wines are also vegan friendly. The grape variety predominantly cultivated is the
traditional Sangiovese but other grapes such as Colorino, Merlot and Cabernet Sauvignon are
also grown. The vineyards cover twenty three hectares spread over two southwest facing
hillsides at an average elevation of 330 metres. The soil is predominantly galestro.
Today, Terreno boasts an entirely redesigned cellar, improving and facilitating the
winemaking process. Fermentation takes place in temperature- controlled stainless steel
tanks and maturation in large barrels, tonneaux or french oak barriques. A total of around
100 000 bottles are produced each year.
Terreno offers a range of wine tasting tours for an unforgettable Chianti Classico experience.
Our estate shop is open all year round and during season we also offer both lunch and dinner
at our farm-to-table estate restaurant. Please contact us in advance during off season.
Terreno also offers holiday houses for rent. Terreno is a perfect base for exploring Tuscany
and the Chianti region. Please visit www.terreno.se for more information.

quality and only from Sangiovese grapes. The wine is aged in large oak barrel for 32 months.
This is a complex, well rounded wine with notes of cherry, oak, local herbs and silky smooth
tannins. The ASofia pairs well with truffle risotto or mature cheeses. It will show its full potential
after a moderate period of ageing.

Momento Massimo Supertuscan IGT
The Momento Massimo is a careful blend of Merlot, Cabernet Sauvignon and Petit Verdot and is
only produced in particularly good years. This serious, full bodied wine is aged for two years on
barrique and an additional two years in bottle at Terreno before leaving our cellars. It reveals
notes of blackcurrant and roasted oak yet retains its freshness. A wine that is a perfect match for
the famous bistecca fiorentina. The wine is best after an appropriate time of ageing but can stay in
a cellar for at least 20 years.
2015 Cabernet Sauvignon, Merlot, Petit Verdot 1380 Bianco Professore Supertuscan IGT
Our Bianco Professore is a modern white Supertuscan. It is a balanced blend of Petit Manseng
and Rousanne fermented and aged in Rousseau barrel. The wine attains its characteristic colour
from being left for 24 hours on the grape skins before pressing. The wine boasts a bouquet of
yellow fruit, wild roses, oak and freshness.

Terreno’s Vinsanto - The Sacred Wine – is a sweet wine made from semi dried Trebbiano and
Malvasia grapes. It is fermented and aged on small chestnut barrels for at least five years. The
bouquet reveals raisin, figs, walnut, roasted almond and a hint of chestnut. A perfect match for
the local almond biscotti but it also goes well with cheeses.

meal as a digestif. Terreno Grappa is aged in stainless steel and distilled at the famous Nannoni
Grapperia.

MAGNUM WHITE WINE
DOMAINE FRANÇOIS RAVENEAU – Chablis, France
One of the world’s greatest white wine regions. The wines are always dry, fresh and elegant
in style and they consist of Chardonnay from chalky soils. Even though they have so much
in common, the Chablis region also offers a lot of diversity. Perhaps this is why we never
grow tired of Chablis?

2011 Chablis 1er Cru Butteaux Chardonnay 3 750
PIERRE GONON – Saint-Joseph, Rhône, France

10% of the regions production consists of white wines.

SYBILLE KUNTZ – Mosel-Saar-Ruwer, Germany
If there is one wine style that is hard to dislike, it’s the Mosel Riesling. Wines that without
difficulty can be paired with food or just enjoyed as it is. Simply beautiful wines.
2012 Riesling Spätlese Riesling 1 990
MAGNUM RED WINE
DOMAINE DE LEYRE – Morgon, Beaujolais, France
The (in)famous part of Burgundy. Loved by some and berated by others for their famous
wine Beaujolais Noveau. During the last two decades, something has happened to Beaujolais
and today we can find both the easy to drink Noveau-style of Gamay, as well as age-worthy
beautiful examples with more structure.
2015 Morgon Réserve Gamay 1 160
GUISEPPE CORTESE – Piedmont, Italy
Most famous for the wines from Barolo and Barbaresco, but Piedmont has a lot more to offer.
The rich white wines from Erbaluce di Caluso, interesting reds from the ancient grape
Grignolino and of course the delicious sweet bubbles from Moscato d’Asti.
2016 Langhe Nebbiolo Nebbiolo 1 400
