We are proud to source, where possible, quality Scottish ingredients for our menu items, staying as ‘local’ as possible! Our location in the Great Glen gives us a significant advantage with The Black Isle to the north with its high quality arable farming; Glen Affric to the west with large tracts of moorland supporting various types of game particularly deer; and the coastal region to the south and west which is famous worldwide for shellfish. We are lucky to have The Applecross Inn as our sister hotel and that relationship gives us a great opportunity in sourcing fresh shellfish. 1 Haggis & Black Pudding from Grant’s of Speyside, the recipes spans 5 generations and were first created by Jessie Grant in Dornoch in the late 19th Century

2 Mussels from Shetland, delivered daily into Inverness

3 Haddock landed and smoked in Peterhead

4 Rib-eye from Munro’s of Beauly on The Black Isle sourced from Dingwall market, guaranteed to be reared within a 30 mile radius

5 Our Lamb again from Munro’s of Beauly on The Black Isle is reared and sourced within a 30 mile radius

6 Beef for our ale stew and Highland beef burgers are again sourced from Munro’s of Beauly

7 Arran Dairies was set up in 1930 on the Isle of Arran by a dairy farming family in order for them to sell their milk. Business has developed over the years and they started making ice cream in 1999
