2015 Chandon ‘Rockpool Cuvée’ Whitlands Plateau Brut King Valley, VIC 19 This exclusive cuvée is made using the Méthode Traditionnelle, showing an array of white stone fruits and citrus peel.

The palate has a crisp mouthfeel, great fruit intensity and mineral complexity.

NV Gosset ‘Cuvée Rockpool’ Extra Brut Aÿ-Champagne, France 29 The oldest producer in Champagne offers a wine of true distinction exclusively for the Rockpool Dining Group;

a livelier, lighter departure from the house style, lemon curd and lightly toasted brioche dominate the palate.

NV Ruinart Rosé Brut Reims, France 33 Very attractive, bright and fragrant red fruits on the nose here. This has a wealth of fresh yeasty characters, fresh pastry and

bread dough, plus red fruits, pink grapefruit, and some floral notes too.

2011 De Iuliis ‘Aged Release’ Semillon Hunter Valley, NSW 16 Hunter Semillon is an underrated Australian gem. The light and fresh citrus fruit develops to richer notes of of honeyed

2017 Bream Creek Riesling Marion Bay, TAS 17 Fragrant and fruit driven with notes of ripe citrus fruits, lemon peel, crunchy white stone fruit and a gentle floral lift.

2017 Bass Phillip ‘Old Cellar’ Pinot Noir Gippsland, VIC 20 Blended from across four of Bass Phillip’s sites, this is bottled unfiltered and unfined. It shows delicacy of flavour and

complex palate of red fruits, spices, orange peel and dried herb notes, backed up by balanced acidity and fine tannin.

2017 Tapanappa 'Foggy Hill' Pinot Noir (served from Coravin) Fleurieu Peninsula, SA 30 Foggy Hill Vineyard gives the Pinot Noir an unique expression of this very cool maritime terroir. The aromas and

flavours are delicate yet intense with notes of ripe black cherry, strawberry, violets, spices and earth.

2016 Out of Step ‘Malakoff Vineyard’ Nebbiolo Pyrenees, VIC 18 Classic Nebbiolo firmness supporting a delicious flavour of cherries, dry flowers and herbs.

2017 Scarpetta ’Frico’ Sangiovese Tuscany, Italy 14

Typical red wine from Tuscany with 90% sangiovese and small amounts of the indigenous grapes Canaiolo, Ciliegiolo, and

2015 Lark Hill Shiraz Viognier Canberra District, NSW 24 Certified biodyminc Shiraz and Viognier are co-fermented resulting in a medium bodied, highly aromatic wine with notes of

violets, ripe red and black berries, white pepper and a hint of black olives.

2016 Cape Mentelle ‘Trinders’ Cabernet Merlot Margaret River, WA 17 A Bordeaux blend with an Aussie accent. The Cabernet Sauvignon gives structure and line while the Merlot and Shiraz

This vintage produced a powerful wine. The bouquet is intense with very ripe array of blackberry, blueberry, black olives,

liquorice. The palate is rich, full, with fine tannic structed but still fresh.

2016 St Hugo ‘Signature’ Shiraz Barossa, SA 25 That’s a classic Barossa Shiraz, with a mix of ripe dark fruits and warm spices mingling with toasted cedar and dark chocolate

aromas. The palate is full bodied with fine tannins and a juicy mouthfeel.

2013 Stonestreet ‘Estate’ Cabernet Sauvignon (served from Coravin) Alexander Valley, Sonoma, US 40 Full bodied, yet showing great balance of intense flavours, fine and persistent tannins and vibrant mid palate.

Matured for 18 months in 32% new French oak, it shows notes of ripe blackberry and cassis with tobacco, sage, vanilla,

spices, cocoa and anise.

SKIN CONTACT WHITE WINES

These wines were allowed some maceration time, made a little bit like a red wine.

The contact of the grape juice with the skins before or during fermentation promotes extraction of flavours

and phenolic compounds that give these wines an extra dimension of colour, body, flavour and texture.

They are great food wines, slightly grippy, aromatic and very flavoursome!

Speyside – The lush, fertile valley of the River Spey is undoubtedly the heart of single malt whisky distilling in Scotland. Its

classic flavours of honey, vanilla and fresh fruits (apples, pears) combine to create whiskies that are both sophisticated and

elegant. With age, and especially when matured in sherry casks, they evolve to deliver dried fruit and sweet spice flavours.

The Yamazaki / The Hakushu

Opened in 1923, Yamazaki was Japan’s first whisky distillery. This pioneering malt is intense and elegant, with aromas of dried

fruits and honey. It has a delicate, mellow taste with a lingering woody, dry finish.

The Hakushu Distillery was founded half a century after Yamazaki. Keizo Saji inherited his father’s vision in his quest for

innovation and constructed this second Suntory distillery in 1973.
