Green sauce was the favourite meal of Frankurt’s famous son, the 18th century poet Johann Wolfgang von Goethe. Frankfurt’s traditional recipe consists of 7 fresh herbs (borage, sorrel, cress, chervil, chives, parsley, and salad burnet), yoghurt and boiled eggs – usually served with boiled potatoes. locals enjoy this dish on ‘Green thursday’ before the easter holidays when tradition has it that people are supposed to eat green coloured food.
