Cranberry Salsa + Goat Cheese
● 12 ounces fresh cranberries, one raw bag/package
● ¼ - ½ cup of sugar (start out slow and add more if needed)
● 1 jalapeno, finely diced● 1/2 cup cilantro, chopped● 4 green onions, white and green portions,
finely diced● Juice from 1 lime or 1 lemon● pinch of salt● Whipped Cream Cheese or Goat Cheese● Serve with a buttery cracker, ritz, etc.
I chop everything my hand, sometimes if you use a food processor it breaks the cranberries down too far and it turns mushy. This is a crunchier crisp salsa. Sometimes I don’t use sugar at all, and I substitute agave until the tart from the cranberry mellows out.
